30 vanilla creme-filled chocolate sandwich cookies
1 pkg. (2-layer size) white cake mix with colored sprinkles
1 cup JET-PUFFED Marshmallow Creme
1-1/2 cups thawed COOL WHIP Whipped Topping

Steps:

  • Heat oven to 350ºF.
  • Place 1 cookie in each of 30 paper-lined muffin cups. Prepare cake batter as directed on package; spoon 1 heaping Tbsp. over each cookie. (All batter will not be used.)
  • Bake 14 min. or until toothpick inserted in centers comes out clean. Cool in pans 5 min.; remove to wire racks. Cool completely.
  • Microwave marshmallow creme in medium microwaveable bowl on HIGH 15 sec. Gradually fold in whipped topping until blended.
  • Remove liners from cupcakes; cut cupcakes horizontally in half. Fill with whipped topping mixture. Serve upside-down. Keep filled cupcakes refrigerated.

Soft, cakey cookies stuffed with homemade Oreo cream filling. I'll take these homemade Oreo Whoopie pies over crunchy Oreo cookies any day!

1 cup granulated sugar
1/4 teaspoon salt
1/2 cup salted butter ((softened))
1 teaspoon vanilla
1 large egg
2 cups all-purpose flour
1 teaspoon baking soda
1/2 cup unsweetened cocoa powder
1/2 cup warm water
1/2 cup buttermilk
1/2 cup salted butter ((softened))
1/2 cup shortening
1 1/2 teaspoons vanilla
4 cups powdered sugar
6-7 tablespoons heavy cream ((or milk))
15 Oreo cookies

Steps:

  • In a stand mixer, cream together the sugar, salt, butter, vanilla and egg.
  • In a separate bowl, sift together the flour, baking soda and cocoa. Add this to the first mixture alternately with the water and buttermilk.
  • Drop the batter by teaspoonfuls onto a greased non-stick cookie sheet. For easiest removal, line the cookie sheet with parchment paper. Bake the cookies at 400 degrees Fahrenheit for 7-8 minutes. Watch them closely. If your cookie cakes are smaller than ours, they will bake faster. Set the cakes aside to cool on the pan until you can move them easily to a wire rack to cool completely.
  • In a stand mixer, whip the softened butter and shortening on medium speed for 2-3 minutes. Add the vanilla and powdered sugar. Mix on low speed until the powdered sugar is all incorporated.
  • Add in the heavy cream, one tablespoon at a time, and beat the frosting on medium speed until the frosting has reached the consistency that you like. (I used 6-7 tablespoons of cream).
  • Add the Oreo cookies to the frosting, 3 at a time, and beat on medium-low speed until they are all broken up and blended in.
  • Choose two whoopie pies that are about the same size. Spread the Oreo frosting between the two cakes. This should make about 10-15 whoopie pies, depending on the size you make the cakes.
  • Store at room temperature in an airtight container.

1 cup butter
4 eggs
1/2 cup vegetable oil
1 tablespoon vanilla extract
6 cups all-purpose flour
2 cups unsweetened cocoa powder

1 1/2 tablespoons baking soda
1 teaspoon salt
3 cups milk
Filling, recipe follows

Steps:

  • Preheat oven to 350 degrees F, or preheat a convection oven to 315 degrees F.
  • In a large bowl of an electric mixer, beat the sugar, butter, and eggs together until well combined. Add the oil and vanilla and beat again.
  • In a separate bowl, combine all of the dry ingredients. Add half of the dry mixture to the egg mixture and beat or stir to blend. Add 1 1/2 cups milk and beat again. Add the remaining dry mixture and beat until incorporated. Add the remaining 1 1/2 cups milk and beat until blended.
  • With a large spoon, scoop out 32 circles of batter onto a baking sheet. Bake for 10 to 12 minutes. Let cool.
  • Spread filling onto 16 circles and place remaining circles on top, to make 16 Whoopie Pies.
  • 1 1/2 cups shortening
  • 3 cups confectioners' sugar
  • 1 1/3 cups marshmallow topping
  • Dash salt
  • 1 teaspoon vanilla extract
  • 1/3 to 1/2 cup milk
  • In the bowl of an electric mixer, combine all ingredients except the milk and beat well. Add just enough milk to achieve a creamy consistency. Spread filling across cooled cookie circles.

1 cup unsweetened cocoa powder
1 teaspoon salt
1 teaspoon baking powder
½ teaspoon baking soda
1 cup butter at room temperature
2 cups white sugar
2 eggs

1 ½ cups milk
¾ cup butter at room temperature
1 cup confectioners' sugar
2 teaspoons vanilla extract
2 cups marshmallow creme

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk flour, cocoa powder, salt, baking powder, and baking soda in a bowl. Beat 1 cup butter and white sugar in a separate large bowl, with an electric mixer on medium speed, until mixture is creamy. Beat eggs and 2 teaspoons vanilla extract into butter mixture.
  • Stir half the flour mixture into wet ingredients, followed by milk; stir remaining flour mixture into dough. Drop dough by tablespoonfuls onto baking sheets. For 25 whoopie pies, make 50 cookies.
  • Bake cookies in the preheated oven until set and lightly browned, about 10 minutes. Let cool completely.

Not knowing what to do with some strawberry cake mix, and not wanting to make a boring cake, I came up with this recipe using some other odds and ends in my kitchen. Not only was it surprisingly tasty... it was surprisingly quick as well!

1 (15.25 ounce) package strawberry cake mix
⅓ cup vegetable oil
2 large eggs
½ (8 ounce) container whipped topping (such as Cool Whip®)
½ cup crushed chocolate sandwich cookies (such as Oreo®)

Steps:

  • Preheat the oven to 275 degrees F (135 degrees C).
  • Combine cake mix, vegetable oil, and eggs in a large bowl.
  • Form dough into eighteen 1-inch balls and place on a cookie sheet. Flatten each ball with the palm of your hand.
  • Bake in the preheated oven until edges are golden, about 6 to 8 minutes. Cool on the baking sheet briefly before removing to a wire rack to cool completely, about 15 minutes.
  • Add whipped topping to one side of each cookie, working in pairs. Sprinkle 1/2 of the cookies with crushed Oreos®, then sandwich with remaining cookies. Wrap each whoopie pie with plastic wrap and place in a 1-gallon freezer bag.
  • Freeze for at least 1 hour before serving.
