After dining at a cafe in Michigan about 10 years ago, I tried duplicating this scrumptious twist on Chicken Salad at home. The cherries can be ordered on-line these days, which makes it much easier for those of us living where cherries are not readily available. Regular milk can be substituted for buttermilk, if necessary.

3 cooked, boneless chicken breast halves, diced
⅓ cup dried cherries
⅓ cup diced celery
⅓ cup toasted, chopped pecans
⅓ cup low-fat mayonnaise
1 tablespoon buttermilk
½ teaspoon salt
½ teaspoon ground black pepper
⅓ cup cubed apples

Steps:

In a large bowl, combine the chicken, dried cherries, celery, nuts, mayonnaise, milk, salt and pepper and apple if desired. Toss together well and refrigerate until chilled. Serve on toasted cracked wheat bread or croissants.

3 cups cooked chicken breasts, chopped fine
2/3 cup dried cherries
1/3 cup celery, chopped
1/3 cup red onion, chopped
1/3 cup tart apple, chopped
1 hard-boiled egg, chopped
1/3 cup sliced almonds, toasted
3/4 cup light mayonnaise
2 tablespoons lemon juice
salt and pepper

Steps:

In a large bowl, combine the chicken, cherries, celery, onion, apple, egg and sliced almonds.
In another small bowl, combine the mayo and lemon juice.
Add to chicken mixture and mix well.
Season with salt and pepper to taste.
Refrigerate for 1 hour to allow flavors to blend.
Serve on Croissants or crackers.

2-1/2 cups uncooked bow tie pasta
3-1/2 cups shredded cooked chicken
3 celery ribs, chopped
6 green onions, chopped
3/4 cup dried cherries
1 cup mayonnaise
2 teaspoons sugar
1/2 teaspoon salt
1/2 teaspoon Dijon mustard
1/8 teaspoon pepper
Dash dried tarragon

Steps:

Cook pasta according to package directions. Meanwhile, in a large bowl, combine the chicken, celery, onions and cherries. Drain pasta and rinse in cold water; add to chicken mixture., In a small bowl, whisk the mayonnaise, sugar, salt, mustard, pepper and tarragon. Pour over salad and toss to coat. Chill until serving.

This is great on pork tenderloin or ribs. If you wish, the chicken can be partially cooked in the microwave. Serve with a green salad or baked potato, if desired. This is also good at room temperature, but you will ned lots of napkins! Sweet and savory, but not too spicy for kids.

1 (12 ounce) jar apricot preserves
1 (8 ounce) bottle Russian-style salad dressing
1 packet dry onion soup mix
2 (4 pound) whole chickens, each cut into 8 pieces

Steps:

Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl combine the preserves, salad dressing and soup mix; stir together until well mixed and set aside. Place chicken pieces skin side down in two lightly greased 9x13 inch baking dishes.
Bake at 350 degrees F (175 degrees C) for 1/2 hour.
Brush the skin side of the chicken pieces with the glaze mixture (you will use about 1/2 of the mixture) and return to oven; reduce temperature to 250 degrees F (120 degrees C) and bake for another 1/2 hour. Brush with remaining glaze mixture just before serving.
