MARINATED CHICKEN BREASTS
For a healthy dinner tonight, try these Marinated Chicken Breasts from Food Network Kitchen. An herbaceous marinade infuses the meat with high-impact flavor.

Steps:
- Put the vinegar, herbs, mustard, powders if using and oil in a large re-sealable plastic bag. Close the bag and shake to combine all the ingredients. Open the bag, drop in the chicken breast in the bag. Close and shake the bag to coat evenly. Freeze for up to 2 weeks.
- Thaw in the refrigerator overnight, under cold, running water, or in the microwave at 30 percent power for 1 minute at a time.
- Heat a grill or grill pan. When the grill is hot, place the chicken on the grill and cook for about 4 minutes per side, or until cooked through. You can also bake the thawed chicken in a 375 degree F oven for 15 minutes, or until cooked through.
FELIX'S MARINATED CHICKEN
I was bored one day, and standing in front of the spice cupboard knowing I had defrosted chicken breasts. This actually came out much better than expected. Measurements are pretty close, but I wasn't really measuring when I made it. Prep time includes marinating time.

Steps:
- Combine all ingredients in a zip-top plastic bag, mix well.
- Marinate in refrigerator three hours, turning occasionally.
- Preheat broiler; spray shallow pan with cooking spray.
- Place chicken breasts in pan, drizzle half of marinade over top.
- Broil for 8 minutes.
- Turn chicken breasts over, drizzle rest of marinade over top.
- Broil an additional 8 minutes.
- If chicken is not done, turn again and broil 2 minutes on each side.

MARINATED CHICKEN

I love using soy and/or fish sauce as my salty elements because they provide the perfect level of salt and savoriness and pack in the flavor. This marinade is perfect for all proteins: beef, poultry, pork and fish!

Steps:
- Butterfly the chicken breasts using a sharp knife, then lightly pound to an even thickness.
- In a large glass bowl, whisk together the brown sugar, fish sauce, soy sauce, lime juice, canola oil, chile-garlic paste, scallion whites, sesame oil and ginger until combined. Add the chicken and turn to coat in the marinade. Cover and let marinade in the refrigerator for at least 2 or up to 4 hours.
- Preheat a grill or grill pan over medium-high heat until hot.
- Remove the chicken from the marinade and transfer to a paper-towel-lined baking sheet. Use paper towels to dab off some of the marinade.
- Brush the grill with canola oil, then grill the chicken until fully cooked, 3 to 5 minutes per side. Transfer the chicken to a platter and garnish with the scallion greens and sesame seeds. Serve.
ITALIAN MARINATED CHICKEN BREASTS
You can't get any easier than this recipe. I clipped it from a Kraft coupon, tweaked it just a little bit, and have been making this for years. My kids just love it, and it has saved me on many-a-workday when I didn't feel like cooking but had to! I usually serve this with buttered pasta or chicken-flavored rice and a green veggie on the side. NOTE: Prep time includes marinating time.

- In a glass 9 x 11 baking dish, place cleaned and trimmed chicken breasts, and season with salt and pepper, if desired.
- Pour Italian salad dressing over to coat and let marinate in the fridge for 1 hour.
- Preheat oven to 350 degrees.
- After the hour of marinating, turn chicken breasts over and sprinkle evenly with oregano and grated parmesan cheese.
- Bake in a 350 degree oven for 1 hour (or until juices run clear), checking after 45 minutes to make sure they do not get over-cooked.

- Combine soy sauce, wine, lemon juice, oil, italian seasoning, ginger, garlic, onion powder, and black pepper in a large, resealable plastic bag.
- Place chicken in the bag, and seal.
- Marinate in the refrigerator for at least 3 hours, or overnight.
- Preheat an outdoor grill for medium-hot heat,.
- Thread the chicken on skewers, and set aside.
- Pour marinade into a small saucepan, and bring to a boil over a high heat.
- Lightly oil grill grate.
- Cook chicken on the prepared grill for approximately 8 minutes per side, basting with the sauce several times.
- Chicken is done when juices run clear.
