HARD TIMES CREAMED TUNA
Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

Steps:
- Melt butter in a small saucepan over medium heat. Stir flour into melted butter until smooth and slowly stream milk into the mixture while whisking continually. Bring mixture to a simmer and cook until thickened, about 5 minutes.
- Reduce heat to medium-low. Stir tuna into the milk mixture; season with salt and pepper. Cook until tuna is warmed, 2 to 3 minutes.
- Ladle tuna mixture over toasted bread to serve.

SAVORY POLENTA

Steps:
- Preheat oven to 350 degrees F.
- In a large, oven-safe saucepan heat the olive oil over medium heat. Add the red onion and salt and sweat until the onions begin to turn translucent, approximately 4 to 5 minutes. Reduce the heat to low, add the garlic, and saute for 1 to 2 minutes, making sure the garlic does not burn.
- Turn the heat up to high, add the chicken stock, bring to a boil. Gradually add the cornmeal while continually whisking. Once you have added all of the cornmeal, cover the pot and place it in the oven. Cook for 35 to 40 minutes, stirring every
- 10 minutes to prevent lumps. Once the mixture is creamy, remove from the oven and add the butter, salt, and pepper. Once they are incorporated, gradually add the Parmesan.
- Serve as is, or pour the polenta into 9 by 13-inch cake pan lined with parchment paper. Place in the refrigerator to cool completely.
- Once set, turn the polenta out onto a cutting board and cut into squares, rounds, or triangles. Brush each side with olive oil and saute in a nonstick skillet over medium heat, or grill.
FAUX CREAMED TUNA AND POLENTA
A gluten free, dairy free Tuna Casserole. I came up with this because Tuna Casserole is a comfort food for me, but I can no longer eat the gluten-full pasta or make it with the creamed soup that my recipe calls for. I tried many different things using various milk substitutes and no pasta (or gluten free pasta) but this is the best recipe I came up with.

Steps:
- Open can of tuna, measure peas, and have spices ready to measure - it is important to stir constantly in the beginning to avoid lumps so I like to have everything ready to go.
- Bring water to a boil.
- Stir as you sprinkle in polenta.
- As you add the rest of the ingredients (except butter sub.), continue stirring.
- After the polenta has thickened and the peas are no longer able to float, you only need to stir it every few minutes.
- Add butter substitute.
- Cook for about 20 minutes so flavors have time to blend.
- Serve warm.
- Refrigerate leftovers immediately.

Steps:
- Preheat oven to 350°F.
- Grease a shallow baking dish I use 9" x 13".
- Heat 2 tablespoons olive oil in a pan over medium heat, add onion & sliced mushrooms, cook until tender then remove from pan.
- Add 2 more tablespoons olive oil to pan and stir in flour whisking until smooth and frothy.
- Gradually add broth until it forms a sauce consistency.
- Then stir in the mayonnaise, salt and pepper. Stir until mixture is smooth.
- Mix in drained tuna, mushroom, onions & thawed peas if using.
- Spread pasta in baking dish and pour sauce to cover. (Will get dry pieces if some are left uncovered).
- Tear bread into crumbs and sprinkle on top if using sift paprika over entire pan to give a lovely colour and drizzle the additional olive oil.
- Bake in the preheated oven for 30 minutes until slightly browned on top.
