EASY CHEESY BEAN BURRITOS (LOW-FAT)
My dad used to make this once a week growing up. The recipe came off a tortilla wrapper over 20 years ago. Super easy, cheap, lowfat, and yummy! Serve with a salad for a great weeknight meal.

Steps:
- In a medium saucepan, heat oil over medium-high heat.
- Add onion and cook until clear.
- Reduce heat to medium, add green chilies, refried beans, and spices.
- Cook, stirring frequently, until hot.
- Add cheese and stir until melted and combined.
- Turn heat to low.
- Warm a large skillet over medium-high heat.
- Add 1 tortilla and cook about 1 minute per side, until slightly golden brown.
- Remove tortilla to plate, spread 1/8 bean mixture, and wrap into a burrito.
- Repeat steps 8 and 9 with remaining tortillas.

BEAN & CHEESE BURRITOS
These can be frozen before baking. Thaw them in the refrigerator, then bake at 350 degrees for 30 minutes. Add a salad and you have a great meal.

Steps:
- Saute onion in oil, just until softened. Add garlic and stir for 30 seconds. Add tomatoes, tomato sauce, chilies, oregano, basil, salt, and pepper. Bring to a boil. Reduce heat and simmer for 15 minutes.
- Combine the black beans and refried beans in a bowl. Combine both types of cheeses in a separate bowl.
- Place 6 tablespoons or 1/10th of the beans and about 2 tablespoons of cheese in a tortilla. Roll it up and place it in and ungreased 9 x 13 baking dish. Repeat with all 10 tortillas.
- Pour the sauce on top and sprinkle with the remaining cheese. Bake at 350 degrees for 20 minutes.

CHEESY MEXICAN RICE & BEAN BURRITOS
Taco Bell, move over! This is a wonderful vegetarian recipe. You can use fat free refried beans, sour cream, low fat cheese & this can be a healthy meal! 8)

Steps:
- In medium saucepan, bring the sauce to a boil.
- Add rice and pepper.
- Cover, remove from burner and let stand 5-10 minutes (or until the liquid has been absorbed) then fluff with a fork.
- Next, spread 1/4 cup of the beans evenly over tortillas to within 1 inch of edges.
- Top each with 1/4 of the rice mixture, tomato and cheese.
- Spoon in the sour cream down centers of tortillas.
- Roll tortillas up. Serve right away while warm.
