FAST AND CHEAP GROUND TURKEY AND VEGGIES IN TAMARIND SAUCE
fast, easy, doesnt require much. Just made this up a minute ago and it's pretty darn good! please let me know if you think adding anything would be a good idea.

Steps:
- DEFROST GROUND TURKEY!
- grease a large pan and put on low/medium heat.
- Chop up all the veggies and throw them in the pan. Let them cook for about 3-5 minutes.
- Add the ground turkey, and use a spatula to break down the turkey chunks into small bits while stirring mix. Add salt, pepper, chili powder, and cumin as you wish. I didn't measure, but used a lot of cumin and a good amount of chili powder, so you might want to adjust tht to what you like the best.
- Pour in the tamarind sauce immediately after. I got that sauce in an indian grocery store, and like it a lot.
- Stir and let cook for 5-10 minutes or until meat is fully cooked and veggies too.
- I made this in bulk and have 4 or 5 more meals -- and it didn't even take a half hour!
- I ate this with a piece of whole wheat toast, but rice might be good with it too. Anyway, let me know what you think!

Steps:
- Heat olive oil in a large pot over medium-high heat. Saute onion, tomato, basil, and garlic in hot oil until the onion begins to soften, about 5 minutes.
- Break ground turkey into small pieces and add to pot; season with Italian seasoning and oregano. Cook and stir mixture until turkey is completely browned, 7 to 10 minutes.
- Stir tomato sauce into the turkey mixture; bring to a boil, reduce heat to low, and simmer until the sauce has thickened slightly, 20 to 25 minutes.
- Stir tomato paste into the turkey mixture until evenly colored; season with salt and pepper. Cook until the liquid is reheated, 1 to 2 minutes more.

TAMARIND-GLAZED TURKEY BURGERS
As culinary director for Balducci's, Katy Sparks brought take-out food to a whole new level. Instead of the typical fried chicken and heavy potato salad, the market offers horseradish-crusted salmon and grilled fingerling potatoes with lemon. In this recipe she's taken the often-bland turkey burger to a higher plane, with the addition of tamarind.

- Heat oil in heavy medium saucepan over medium-high heat. Add ginger and sauté 2 minutes. Add tamarind concentrate, honey, and water and bring to boil. Reduce heat; simmer until thick enough to coat spoon and reduced to 1¼ cups, stirring often, about 8 minutes. Cool completely (volume will reduce as glaze cools); mix in lime juice. Do ahead: Can be made 2 days ahead. Cover and chill.
- Stir mayonnaise, ginger, salt, jalapeño, black pepper, and 4 teaspoons glaze in large bowl to blend; mix in green onions. Add ground turkey; blend gently (do not pack tightly). Shape mixture into eight ½-inch-thick patties. Arrange patties on small baking sheet. Do ahead: Can be made 8 hours ahead. Cover and chill.
- Prepare barbecue (medium heat). Grill rolls, cut side down, until golden, about 2 minutes; transfer to work surface. Grill burgers until cooked through and thermometer inserted into center registers 160°F, about 8 minutes per side. Brush each burger with glaze. Place 1 burger, glazed side down, on each roll bottom; brush each burger with more glaze. Top each with onion, tomato, lettuce, and roll top. Serve, passing remaining glaze separately.
