CORN CHOWDER RECIPE

Steps:
- Cut the kernels from the cobs and set kernels aside for making chowder.* Place the bare cobs in a stockpot.
- Add 4 cups broth, 1 1/2 cups milk, and 1 cup cream to pot. Bring to a boil then reduce heat and simmer un-covered 20 minutes while making the chowder. Use tongs to remove and discard cobs before using corn stock in step 3.
- Place a 5 Qt dutch oven over medium/high heat. Add chopped bacon and cook stirring occasionally until browned. Remove bacon bits with a slotted spoon and set aside.
- In the same pot, add chopped onion, celery and carrot to the bacon fat and cook uncovered, stirring occasionally, until onion is soft (7-8 min).
- Add sliced potatoes, 4 cups corn kernels, 2 tsp salt, 1/4 tsp black pepper, and 1/4 tsp cayenne pepper. Pour corn stock into the pot, bring to a light boil then simmer uncovered 10-15 minutes or until potatoes are tender. Season with salt and pepper to taste**. Ladle into bowls and garnish with reserved bacon and chopped chives.

CORN CHOWDER WITH FRESH CORN
A creamy corn chowder made with fresh corn, red potatoes, and plenty of cream.

Steps:
- Cook the bacon in a large pot or Dutch oven until crisp. Remove to a paper towel to drain, leaving the bacon fat in the pot.
- Add the corn kernels, diced onion, diced pepper, and salt and black pepper to the bacon fat. Cook over medium heat, stirring frequently, about 8 minutes, until onions and peppers are soft.
- Add the diced potatoes and chicken broth. Bring pot to a boil over high heat. Cover, reduce to simmer, and allow potatoes to cook, about 15 minutes. Poke with a fork to make sure they are tender. Add the cream and the cooked bacon, heat over medium until heated through.
- Test for seasonings and add more salt and pepper as desired.

COLD DAY CORN CHOWDER
Steps:
- In a medium Dutch oven, melt the butter over medium heat. Add the bacon and cook, stirring occasionally, until crisp. Transfer to paper towels to drain.
- Drain or spoon off all but 3 tablespoons of the fat in the pot. Add the onion, bell pepper, and celery and cook, stirring occasionally, until the vegetables just begin to become tender, about 5 minutes. Season with salt and pepper and add the flour, thyme, paprika, and bay leaves. Stir the flour into the vegetables to make a paste and coat them evenly. Cook a minute or two to get rid of the raw flour smell. Add the chicken broth and bring to a simmer. Cover and simmer until all of the vegetables are tender, about 15 minutes.
- Uncover the pot and add the potato, half-and-half, and corn. Simmer, uncovered, until the potato is very tender but not yet falling apart, 10 to 12 minutes. If desired, puree about a cup of the soup in a food processor or blender and stir it back into the soup. Discard the bay leaves. Serve garnished with the cooked bacon and some chives or parsley.

My grandmother and mother made this dish to warm their families during the cold winter months. Nothing chased away a chill like this chowder! Now when it's cold and damp outside, I make this dish and think of these days. Everyone in my household enjoys the delicious warmth of a steaming bowl of Corn Chowder.

- Cook bacon until nice and crispy, then add onion, bell pepper and celery and saute until cooked, but not over done. Add water, potatoes, salt, pepper, paprika and bay leaf, and simmer for about 30 minutes or until potatoes are tender. Stir in flour and 1/2 cup of milk, and bring to a boil, and then add heated half and half and milk. Stirring, add corn and ham, and simmer on low to heat through, but not to a boil. Garnish with chopped parsley. For a Sunday lunch it paired nicely the Secateurs Chenin Blanc.

- Cook bacon in a 12-inch skillet over medium heat until crisp, 5-7 minutes.
- Stir in 1 tablespoon oil and onions and cook until softened, 5-7 minutes.
- Stir in garlic, tomato paste, and thyme and cook until fragrant, about 30 seconds.
- Stir in flour and cook for 1 minute.
- Whisk in 2 cups broth, scraping up any browned bits; transfer to slow cooker.
- Stir remaining 3 cups broth, potatoes, carrot, and bay leaves into slow cooker.
- Season chicken with salt and pepper and nestle into slow cooker.
- Cover and cook until chicken is tender, 4-6 hours on LOW.

- Combine soup, ham, corn, potato, bell pepper and thyme in slow-cooker; mix well.
- Cover; cook on LOW 6-8 Hours or on HIGH 3-4 hours.

- Place chicken, breast side down, in a large pot. Add enough water to just cover chicken. Add whole 1/2 onion, carrot halves, parsley, and peppercorns. Bring to a boil, partially covered. Reduce heat, and simmer gently for 1 hour. Remove chicken, and let cool. Strain broth through a fine sieve lined with cheesecloth into another pot, and bring to a simmer. - Stir in reserved chicken and the cream, and heat until warmed through, about 1 minute. Season with salt, and garnish with dill. Serve immediately with crackers on the side.

- Pre-Cook Bacon. I like to cook my bacon in the oven at 425 degrees on Convection Roast for about 15-18 minutes. Set aside and let cool. (You can also do this while you are preparing the soup)
- Heat the butter and 1 tablespoon olive oil in a soup pot over medium heat. Add the onion, garlic, celery, shredded carrots, and thyme and cook until the vegetables are soft, about 8 to 10 minutes. Coat the vegetables with flour and stir well. Pour in the vegetable stock and bring to a boil. Next, add the cream and potatoes. Bring to a boil and boil for about 7 minutes to help the potatoes break down and thicken the soup.
- Pour in the two bags of frozen corn kernels. Let simmer for about 5 minutes. Once the corn is heated thoroughly, use a hand blender to partially pure the chowder. This will help to thicken it up. I like to leave some of the chowder chucky.
- Pour in the cubes of rotisserie chicken into the chowder. Stir to combine and let simmer for at least 10 minutes. Add salt and pepper to taste.
