SOFT FARMER'S CHEESE COOKIES

These popular Russian Soft Farmer's Cheese Cookies are tender and flaky. The dough is made with cold butter and farmer's cheese (ricotta or cottage cheese can also be used), which results in a texture that resembles puff pastry - crisp and golden on the outside with a multitude of thin layers inside.

1 cup butter (chilled)
7.5 - 8 oz farmer's cheese
2 cups all purpose flour
2 egg yolks
2 Tablespoons water (cold or chilled)
1/2 - 1 cup granulated sugar

Steps:

  • Grate the chilled butter on a box grater.
  • Add the farmer's cheese and flour. Use your hands to quickly mix the ingredients together. It will be a very dry and crumbly texture.
  • Add the egg yolks and water. Mix the dough and knead on the counter until it comes together.
  • Form the dough into a disc and wrap it up in aluminum foil or parchment paper. Refrigerate for at least an hour.
  • Preheat the oven to 375 degrees. Line a baking sheet with parchment paper.
  • Break off part of the dough and roll it out thinly on a well floured surface.
  • Use a biscuit cutter (about 3 inches), an overturned cup or glass (preferably with thin edgeor anything else that is round and will be able to cut through the dough and press out as much circles from the dough as possible.
  • Save the scraps, scrunch them into a little ball and refrigerate until it's firm again.(Also keep the rest of the dough refrigerated when you're not using it.)
  • Put the sugar into a bowl and press one side of the circle of dough into the sugar.
  • Fold it in half to form a half moon shape. Press one side into the sugar again, fold it in half and press one of the sides in the sugar.
  • Repeat with the rest of the dough. You will have 80-100 cookies, depending on the size that you make them.
  • Place the cookies sugar side up on the prepared baking sheet. Bake for 20 - 25 minutes, until the cookies are puffed up and golden brown.

GOOSE FEET COOKIES (GUSINIE LAPKI)

1 3/4 cups unbleached all-purpose flour, plus more for dusting
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 cup fresh farmer cheese
1/2 cup (1 stick) unsalted butter, room temperature
1 vanilla bean, seeds scraped
1 heaping tablespoon finely grated orange zest (from 1 orange)
1/3 cup granulated sugar
1 large egg, lightly beaten
Coarse sanding sugar, for sprinkling

Steps:

  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, mix together cheese, butter, vanilla seeds, and orange zest with a wooden spoon until well combined. Add flour mixture and stir until mixture resembles coarse crumbs. Transfer dough to a piece of plastic wrap, shape into a disk, and wrap tightly. Refrigerate 1 hour.
  • Preheat oven to 350 degrees. On a lightly floured surface, roll out dough 1/8 inch thick. Using a 4-inch round cutter, cut out rounds. Gather dough scraps, reroll, and cut out more rounds.
  • Place granulated sugar in a wide shallow bowl. Working with one round at a time, brush with water, then dip in sugar to coat. Fold round in half, covering sugar; fold in half again. Place seven cookies on each of two parchment-lined baking sheets. Brush tops with egg wash and sprinkle with coarse sanding sugar. Bake until golden, 25 to 30 minutes. Transfer sheets to wire racks; let cool completely. Cookies are best eaten the day they are made.

2 packs or one pack farmer cheese 426-453 gr (Friendship has packs of 213 gr or 453 gr)
2 sticks unsalted butter room temperature 226 gr
3 cups all-purpose flour 360 gr
1 Tablespoon baking powder
1 teaspoon vanilla extract or vanilla paste
pinch of salt
1/2 cup granulated sugar for décor

Steps:

  • In a mixing bowl, sift together all-purpose flour, baking powder and pinch of salt.
  • In a large bowl, mix farmer cheese, unsalted butter, vanilla extract (or vanilla paste).
  • Add flour mixture and mix well.
  • Transfer dough to a plastic wrap, shape into a disk and wrap tightly. Refrigerate for at least an hour.
  • Preheat oven to 375F degrees. Line a baking sheet with parchment paper.

CZECH-STYLE FARMER CHEESE, BACON & NOODLE BAKE

I'm on record as loving all things Czech (a legacy from my great-uncle Emil Placek). This recipe by Grete Willinsky from her "Kochbuch Der Buchergilde" was modified slightly by me, but will likely keep my record intact. This can be used as a side dish or paired w/a salad choice for a tasty & hearty meal. *ENJOY* ... 1/2 lb egg noodles
1 tablespoon olive oil
3/4 lb farmer cheese (may sub dry curd cottage cheese)
1 cup sour cream
1 teaspoon caraway seed
salt & pepper (to taste)
4 slices bacon (thick-sliced & diced or use 6-8 std slices bacon)
1 onion (finely chopped)
1 tablespoon butter (for baking dish or use PAM as desired)
3 eggs
paprika (to dust surface of finished dish)

Steps:

  • Preheat oven to 350°F (180°C).
  • Boil egg noodles in salted water till done, drain in a colander, rinse w/cold water, drain again & add 1 tbsp olive oil. Mix well & set aside in a bowl.
  • Pass farmer cheese (or dry curd cottage cheese if using) thru a fine sieve. Stir in 1/3 cup sour cream + caraway seed & season w/salt & pepper. Add this mixture to the noodles & stir to combine.
  • Fry diced bacon in a skillet w/the onion till the bacon is crisp. Add bacon & onion to the noodle & cheese mixture & stir to combine.
  • Grease a deep ovenproof dish w/butter (or use PAM as desired). Place noodles, cheese mixture, bacon & onion in the baking dish.
  • Whisk eggs w/remaining 2/3 cup sour cream & pour this mixture evenly over the contents of the baking dish. Dust surface lightly w/paprika.
  • Bake for approx 45 min or till the top is browned & mixture tests done using the knife method. Allow to cool for 5 min & serve immediately.
  • NOTE: Serves 4 as a main-dish or 6 as a side-dish.

A good, old fashioned, mid-western cookie! We grew up eating these cookies. My grandma made them often! This recipe calls for melting the shortening and then creaming it with the sugar. I think that is the secret to making these cookies so crispy and light!

1 cup vegetable shortening
1 cup white sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups oatmeal (uncooked)
2 cups corn flakes (either one works nicely) or 2 cups crisp rice cereal (either one works nicely)
1 cup flaked coconut
1 cup chocolate chips
1 cup chopped nuts

Steps:

  • Melt shortening, pour over sugars. Mix well.
  • Add eggs and vanilla and mix well.
  • Stir dry ingredients together and add to sugar mixture. Mix lightly.
  • Add oatmeal, cereal, coconut, chocolate chips, and nuts and mix well.
  • Drop by tablespoon on greased cookie sheet.
  • Bake at 350°F for 10 to 12 minutes.
  • I use my cookie scoop and get 4 dozen yummy cookies!
