SHRIMP AND POTATO SALAD WITH ARUGULA PESTO



Shrimp and Potato Salad with Arugula Pesto image

Shrimp and raw and cooked vegetables are brought together into a colorful dinner salad with the bright flavors of a lemony arugula pesto in this delicious dish.

1 pound small red potatoes, cut into 1-inch pieces
Kosher salt
12 ounces green beans, trimmed
1 cup assorted cherry tomatoes, halved
5 ounces baby arugula (about 6 cups)
1/4 cup plus 2 tablespoons extra-virgin olive oil
2 tablespoons pine nuts
2 tablespoons grated Parmesan cheese
2 cloves garlic, chopped
1 teaspoon grated lemon zest, plus the juice of 1 lemon
Freshly ground pepper
Pinch of red pepper flakes
1 pound large shrimp, peeled, deveined and patted dry

Steps:

  • Put the potatoes in a large saucepan, cover with cold water and season with salt. Bring to a boil, then reduce the heat to a gentle boil and cook until fork-tender, 8 to 10 minutes. Remove the potatoes with a slotted spoon to a large bowl, leaving the water in the pot.
  • Fill a separate large bowl with ice water. Return the pot of water to a boil, add the green beans and cook until crisp-tender, 5 to 7 minutes. Drain and transfer to the ice water. Drain the beans again and add to the potatoes. Add the cherry tomatoes.
  • Combine 2 cups arugula, 1/4 cup olive oil, the pine nuts, Parmesan, half of the garlic, half of the lemon juice, 1/4 teaspoon salt and a few grinds of pepper in a food processor. Process until smooth. Pour the pesto over the vegetables and toss to coat.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat; add the red pepper flakes and remaining garlic and cook 30 seconds. Add the shrimp, sprinkle with the lemon zest and season with salt and pepper. Cook, turning once, until pink, 3 to 4 minutes. Remove from the heat.
  • Toss the remaining arugula, 1 tablespoon olive oil and the lemon juice in a bowl; season with salt and pepper. Divide the arugula among shallow bowls and top with the vegetables and shrimp.

The arugula pesto is a nice change from the usual basil based pesto sauce. A quick recipe to prepare, and yummy enough for company!

1 lb cleaned arugula
2 cups loosley packed Italian parsley
1/2 cup toasted pine nuts
6 cloves garlic, peeled
2 cups olive oil
8 ounces grated fresh parmigiano-reggiano cheese (plus extra cheese for garnishing)
1 tablespoon salt
2 teaspoons finely shredded lemons, rind of
1 1/2 teaspoons ground black pepper
1 lb farfalle pasta (bow tie shaped pasta)
1 lb precooked shrimp

Steps:

  • Pesto Sauce: Remove tough stems from arugula.
  • In a large bowl, toss together the arugula and parsley, set aside.
  • Place pine nuts and garlic in food processor, process until combined.
  • Add olive oil, 2 cups cheese, salt, lemon peel and pepper to garlic mixture.
  • Process until combined.
  • Pour mixture into a medium sized bowl.
  • In the same processor bowl, add about 1/4 of the greens and 1/4 of the cheese mixture.
  • Process until combined.
  • Remove mixture from processor and set aside.
  • Repeat the steps# 7, 8 and 9 three more times, until all greens & cheese mixture have been processed.
  • Return all the processed mixture to processor, and process again until everything is well combined.
  • Makes 4 cups of pesto sauce, which can be stored (covered) in the refrigerator for about 1 week.
  • Cook pasta according to package directions.
  • While pasta is cooking, warm 2 cups of the pesto sauce, and warm the cooked shrimp.
  • When pasta is cooked, drain well and toss with the warmed shrimp and pesto sauce.
  • Garnish with additional grated cheese (to taste).

2 cups fresh arugula
1/2 cup parsley leaves
1/4 cup chopped onions
1 tablespoon lemon zest
1/2 cup white wine
1/2 cup olive oil
1 cup Arborio rice
1/2 ounce butter
2 1/2 cups chicken stock, hot
Salt and pepper
1 pound shrimp, peeled and deveined
2 tablespoons olive oil

Steps:

  • To make the pesto combine all of the ingredients into a food processor and blend until a paste is formed and set aside.
  • Using a saucepot, combine the rice and the butter and mix well over medium heat. Cook it stirring until a roasted aroma develops. Add the liquid in several additions, stirring the rice frequently. Cook the risotto until the rice is al dente, and most of the liquid is absorbed, it should take about 20 minutes. The texture should be creamy.
  • Add the pesto to the risotto and mix well. Cook another minute.
  • Saute the shrimp in olive oil until pink and tails are curled, about 3 to 5 minutes. To serve, plate the risotto in the center of the plate and top with the shrimp.

1 pound shrimp
1 pound asparagus
1 medium onion, chopped
1 clove garlic, minced
3 tablespoons olive oil
1 1/2 cups chopped Italian tomatoes, with their juice
3/4 cup dry white wine
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
1 pound farfalle
Coarse salt and freshly ground pepper
2 tablespoons flat-leaf Italian parsley

Steps:

  • Peel the shrimp. Trim the tough ends of the stalks from the asparagus. With a vegetable peeler, pare away any tough skin from the lower half of the stalk. Cut the asparagus into 1 1/2-inch pieces.
  • Cook the asparagus in boiling salted water until barely tender. Rinse under cool running water and drain well. Set aside.
  • Meanwhile, sauté the onion and the garlic in 2 tablespoons olive oil until soft. Add the tomatoes, wine and thyme and simmer gently for 20 minutes, covered. Bring 6 quarts salted water to boil for the farfalle.
  • Cook the farfalle until al dente. While it is cooking, add the shrimp to the sauce, cook for 3 minutes, stirring, then add the asparagus and heat through. Correct seasoning.
  • Drain the farfalle and toss the pasta in a heated bowl with the remaining tablespoon of olive oil. Then add the sauce and toss well. Serve immediately. Sprinkle with parsley. This needs no cheese.

1/2 cup pine nuts

3 cups fresh basil leaves
1 cup olive oil
1/2 cup parmesan cheese, grated
2 tablespoons lemon juice

1 cup English cucumber, diced
4 green onions, sliced

Steps:

  • Cook the pasta according to the package directions.
  • Drain and rinse with cold water; drain again.
  • In a food processor or blender, process the pine nuts, garlic and basil leaves until finely chopped.
  • With the processor running, pour in the olive oil until combined.
  • Add the cheese, lemon juice, salt and pepper.
  • Toss the pesto with the pasta.
  • Mix in the peas, cucumber and green onions.
  • Serve garnished with basil leaves.

1 garlic clove, chopped
4 ounces fresh basil, stems removed
1/4 cup pine nuts, slightly toasted
1/4-1/2 cup extra virgin olive oil, to your liking
1/4-1/2 cup parmesan cheese, grated
1 1/2 lemon, juice of
8 ounces farfalle pasta (1/2 box)
salt
fresh ground pepper, to taste
1 lb large shrimp, raw, de-shelled, cleaned

Steps:

  • Boil water for pasta and cook as directed to al dente.
  • Pesto:.
  • In a food processor, pulse together basil, garlic and a pinch of salt.
  • Add pine nuts and pulse again.
  • Scoop into a bowl and mix in 1/4 cup of olive oil and 1/4 cup of Parmesan. Stir gently. (If the sauce is not moist, add more oil.).
  • Season to taste and add the rest of the remaining cheese. Adjust oil again, if needed.
  • Squeeze juice of 1/2 - 1 lemon to pesto, to taste.
  • Clean and devein shrimp.
  • In a bowl add 1 tablespoons oil, juice from 1/4 lemon, pinch of salt and pepper. Add shrimp to mixture and coat.
  • Heat a grill pan over med-high heat. Spray with cooking spray.
  • Grill shrimp for 1 minute on each side. Once shrimp has been turned, squeeze juice from 1/4 lemon to coat.
  • Remove from heat.
  • Mix 1/2 of the pesto with the pasta to coat. Serve in warm bowls with shrimp served on top. Season with salt and fresh cracked pepper.
  • You may sprinkle a pinch of Parmesan and/or a fresh squeeze of lemon juice to make it even more delish.
  • Save extra pesto in a covered container in the refrigerator or freeze and use at a later date.

Steps:

  • In a food processor, combine garlic,arugula, half the pine nuts and olive oil; process until finely chopped.
  • Add the grated Parmigiano cheese, salt, pepper and red pepper flakes; pulse. Add chicken broth a few tablespoons at a time until sauce is thick and emulsified. (You shouldn't need very much broth).
  • Cook pasta until it is al dente, drain, reserve a small amount of the pasta water.
  • In a pasta pot, combine hot pasta, arugula pesto, cherry tomaotes and remaining pinenuts, cook briefly over medium heat until well mixed, adding just a little of the reserved pasta water if it seems dry.
  • Serve hot, topped with shaved or grated cheese.
