CAPE COD OATMEAL COOKIES

This recipe is from an old Fannie Farmer Cookbook I bought not long after I married. My Dad and my husband loved them so I would make them every year at Christmas and in-between. They are chewy and nourishing. Give them a try!

1 1/2 c flour
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 egg, lightly beaten
1 c sugar
1/2 c melted shortening
1/2 c melted butter
1 Tbsp molasses
1/4 c whole milk
1 3/4 c uncooked oatmeal
1/2 c raisins which have been soaked in vanilla to soften
1/2 c chopped nuts (i make with pecans - use your favorite)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Mix the flour, baking soda, cinnamon, and salt together in a large bowl. Stir in the remaining ingredients.
  • 3. Arrange by teaspoonfuls on unbuttered cookie sheets and bake until the edges are brown, about 12 minutes.

SIMPLE OATMEAL COOKIES OR COWBOY COOKIES

These are some cookies that I made for my SIL when she was having issues with fibre in her diet. She was encouraged to have oatmeal and so I tried to find her a "good" oatmeal cookie. This was attempt number two. This recipe is adapted from The Fannie Farmer Cookbook. I have included two versions of a great cookie. When I make the cowboy cookies, I make them BIG.

Number Of Ingredients 13

1 1/2 cups flour
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 egg, slightly beaten
1 cup sugar
1/2 cup shortening, melted (can use butter)
1 tablespoon molasses
1/4 cup milk
1 3/4 cups oatmeal, uncooked
1/2 cup raisins
3/4 cup sweetened coconut, flaked (reduce oatmeal by 1/4 cup) or 3/4 cup sweetened coconut, shredded (reduce oatmeal by 1/4 cup)
1/2 cup chocolate chips

Steps:

  • Preheat oven to 350°.
  • To make Simple Oatmeal Cookies: Mix the flour, baking soda, cinnamon and salt together in a large bowl.
  • Stir in the remaining ingredients.
  • Arrange by teaspoonfuls on unbuttered cookie sheets. Leave about 1 inch in between. They do spread a wee bit. Not too much though.
  • Bake until the edges are brown, about 10-12 minutes.
  • For Cowboy Cookies: Add in coconut and chocolate chips when you add in the rest of the ingredients (Step 3). Drop them by the FULL tablespoon on a cookie sheet. (Might have to "squish" them a bit) Bake for 14-17 minutes or until mostly brown.

The oatmeal raisin cookie has an international origin. Oatmeal cookies are the descendants of oat cakes made by the Scots and the British. Oat cakes first appeared when the Scottish began harvesting oats as far back as 1,000 B.C. History records that raisins and nuts had been added to the cakes since the Middle Ages. The first recorded oatmeal raisin cookie recipe was written by Fannie Farmer in 1896. Billed as a "health food," the cookies quickly became popular, and by early 1900's a recipe for the delicious treats appeared on every container of Quaker Oats.

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup light brown sugar, firmly packed
3/4 cup butter, softened
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups rolled oats or 1 1/2 cups quick-cooking oats
1 cup white chocolate chips (optional) or 1 cup toffee pieces (optional)

Steps:

  • Preheat oven to 350 degrees F. Grease 3 baking sheets. Combine flour, baking powder and salt in a medium bowl.
  • Place the brown sugar and butter in a large bowl. Beat with an electric mixer set on high speed until light and fluffy.
  • Beat in the eggs and vanilla until smooth.
  • Gradually stir in the flour mixture with a wooden spoon until thoroughly combined. Stir in the oats and raisins until blended.
  • Drop the dough by rounded spoonfuls 1 1/2 inches apart on the prepared baking sheets.
  • Flatten the dough slightly with a fork. Bake until golden brown, about 12 minutes.
  • Cool on the baking sheets for 2 minutes, then transfer to wire racks.
  • Serve warm or at room temperature. Once baked, cookies will keep for 4-5 days in an airtight container.

Many years ago this recipe was given to me as a recipe that was one of (or like)Fannie Farmer's chocolate cookies. My recent research shows that Fannie Farmer lived and published a cookbook in the late 1800's. I have never seen one of her cookbooks though her recipes remain popular.

Number Of Ingredients 8

3/4 cup shortening
1 cup sugar
1 egg
2 ounces unsweetened chocolate squares, melted
2 tablespoons milk
1/2 teaspoon vanilla
1/4 teaspoon salt
2 cups flour

Steps:

  • Cream shortening, gradually adding the sugar, creaming well.
  • Beat in the egg, chocolate, milk, vanilla and salt.
  • Gently, but thoroughly, stir in the flour.
  • Put through a cookie press or drop by level teaspoon fulls, 1 inch apart on ungreased cookie sheets.
  • Bake at 375 degrees for about 8 minutes.

  • "Preheat the oven to 350 degrees Fahrenheit and grease some cookie sheets. In a mixing bowl, thoroughly cream the shortening, vanilla, and sugars. Add the eggs and beat well. Stir in the peanut butter. Mix together the flour, salt, and baking soda, and add to the peanut butter mixture, combining thoroughly.
  • Form into tiny balls with the palm of your hands and place on the cookie sheets. Press each cooking twice with the back of a fork to make a crisscross design. Bake about 8-10 minutes or until firm.".

A good, old fashioned, mid-western cookie! We grew up eating these cookies. My grandma made them often! This recipe calls for melting the shortening and then creaming it with the sugar. I think that is the secret to making these cookies so crispy and light!

1 cup vegetable shortening
1 cup white sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups oatmeal (uncooked)
2 cups corn flakes (either one works nicely) or 2 cups crisp rice cereal (either one works nicely)
1 cup flaked coconut
1 cup chocolate chips
1 cup chopped nuts

Steps:

  • Melt shortening, pour over sugars. Mix well.
  • Add eggs and vanilla and mix well.
  • Stir dry ingredients together and add to sugar mixture. Mix lightly.
  • Add oatmeal, cereal, coconut, chocolate chips, and nuts and mix well.
  • Drop by tablespoon on greased cookie sheet.
  • Bake at 350°F for 10 to 12 minutes.
  • I use my cookie scoop and get 4 dozen yummy cookies!
