Salt
1 pound baby carrots
2 tablespoons butter
2 tablespoons honey
1 tablespoon lemon juice
Freshly ground black pepper
1/4 cup chopped flat-leaf parsley

Steps:

  • In a medium saucepan, bring water to a boil. Add salt and then carrots and cook until tender, 5 to 6 minutes. Drain the carrots and add back to pan with butter, honey and lemon juice. Cook until a glaze coats the carrots, 5 minutes. Season with salt and pepper and garnish with parsley.

Honey Roasted Carrots image

This is a delicious side dish that's fancy enough to be served at a holiday meal but easy enough to make on a Wednesday. The roasted carrots are sweet and buttery. There is a little bit of salt and a slightly spicy undertone from the cayenne. The cayenne can easily be adjusted, though, to suit your taste buds.

2 lb fresh carrots, trimmed, very young work best but can also use baby carrots
1/4 c honey
2 Tbsp butter, melted
1/2 tsp salt
1/8 tsp cayenne pepper

Steps:

  • 1. Heat oven to 450°F Line 2 rimmed baking sheets with foil coated with cooking spray.
  • 2. Add butter and honey to a bowl.
  • 3. Add salt and cayenne.
  • 4. Toss carrots in honey mixture.
  • 5. Place carrots on prepared cookie sheets.
  • 6. Bake 15 to 20 minutes.
  • 7. Tossing once or twice until tender.

1kg Chantenay or other small carrots
3 tbsp sunflower oil
2 tbsp white wine vinegar
2 tbsp clear honey

Steps:

  • Heat the oven to 190C/170C fan/gas 5. Tip the carrots into a roasting tin and toss with the sunflower oil and some salt and pepper. Roast for 30 mins.
  • Drizzle the vinegar and honey over the carrots, toss well and return to the oven for a further 20 mins.

  • In a medium mixing bowl, toss the sliced carrots with the warmed honey, brown sugar, fresh herbs (thyme and rosemary), and salt & pepper. Transfer to your baking dish and spread evenly in the dish.
  • Bake at 425 degrees F (218 degrees C) for 20-25 minutes, stirring the carrots twice during the cooking time to roast the carrots evenly. Roasted carrots should have slightly browned edges, and will be tender when forked. Remove from the oven and serve immediately.
  • *If you like your carrots extra soft, continue to oven roast until they have reached your desired level of tenderness.
