CALIFORNIA PIZZA RECIPE

California Pizza Recipe image

Provided by Natasha of NatashasKitchen.com

Categories     Easy

Time 2h20m

Number Of Ingredients 14

3/4 cup warm water
1 Tbsp active dry yeast
1/2 Tbsp honey
1 1/2 Tbsp olive oil
2 cups plus 2 Tbsp all-purpose flour
3/4 tsp salt
1/2 cup pizza sauce
2 cups 8-10 oz shredded Mozzarella cheese
6 slices of deli ham (chopped or cut into strips)
1 medium tomato (sliced)
1 small red onion (finely sliced)
6-7 mushrooms (sliced)
1/4 cup Black olives (sliced)
Fresh Basil Leaves

Steps:

  • Add 3/4 cup water and 1 Tbsp of dry yeast in the bread maker and let it stand for a 3-5 minutes.
  • Next, add 1/2 Tbsp of honey, 1 1/2 Tbsp olive oil, 2 cups + 2 Tbsp of flour, 3/4 tsp of salt in the bread-maker in the order they are listed and select the dough setting.*
  • Mine takes about an hour. The dough will be sticky and it will be easy to work with once it's oiled.
  • Drizzle another 2 Tbsp oil onto a large baking sheet. Transfer the dough onto the oiled baking sheet and turn it a couple times to make sure the dough is covered in oil.
  • Roll the dough out in the cookie sheet and spread on the pizza sauce.
  • Spread on the cheese, ham, tomatoes, mushrooms, olives and onions.
  • Bake at 415˚F for 15-20 minutes or until the crust is crisp and toppings are cooked.

GRILLED CALIFORNIA PIZZAS

Grilled California Pizzas image

Provided by Ina Garten

Categories     main-dish

Time 1h5m

Yield 6 pizzas

Number Of Ingredients 20

1 1/4 cups warm (100 to 110 degrees F) water
2 packages dry yeast
1 tablespoon honey
3 tablespoons good olive oil
4 cups all-purpose flour, plus extra for kneading
2 teaspoons kosher salt
1 red onion, thinly sliced
1 pound fresh mozzarella, grated
1/2 pound Italian Fontina, grated
1/2 pound mild goat cheese, such as Montrachet, sliced
1 red or yellow bell pepper, cored, seeded, and julienned
1/4 pound prosciutto, thinly sliced and julienned
1 bunch arugula, cleaned and dried
6 plum tomatoes, sliced 1/4-inch thick
4 pork or turkey sausages, cooked and sliced
1 bunch basil leaves, cleaned and dried
4 garlic cloves, roasted
Crushed red pepper flakes
1/2 cup good olive oil
Cornmeal

Steps:

  • For the dough, combine the water, yeast, honey, and olive oil in the bowl of an electric mixer fitted with a dough hook. Add 3 cups flour, then the salt, and mix. While mixing, add 1 more cup of flour, or enough to make a soft dough. Knead the dough on low to medium speed for about 10 minutes until smooth, sprinkling it with flour, if necessary, to keep it from sticking to the bowl.
  • When the dough is ready, turn it out onto a floured board and knead by hand a dozen times. It should be smooth and elastic. Place the dough in a well-oiled bowl and turn it several times to cover it lightly with oil. Cover the bowl with a kitchen towel. Allow the dough to rest at room temperature for 30 minutes.
  • Divide the dough into 6 equal parts and roll each one into a smooth ball. Place the balls on a baking sheet and cover them with a damp towel. Allow the dough to rest for 10 minutes. Use immediately, or refrigerate for up to 4 hours.
  • If you've chilled the dough, take it out of the refrigerator approximately 30 minutes ahead to let it come to room temperature. Roll and stretch each ball into a rough 8-inch circle and place them all on baking sheets sprinkled with cornmeal. (You will be able to fit 2 pizzas on each 18 by 13-inch baking sheet.)
  • Light your grill and wait until it's hot.
  • Place the pizzas directly onto the grill and cook on 1 side for 1 minute. Turn the pizzas over and brush with olive oil or garlic oil.
  • Top the pizzas with any toppings you wish, piling them high. Drizzle each pizza with 1 tablespoon of olive oil. Put the lid on your grill and cook for 5 minutes more, until the crust is crisp and the toppings are cooked.

WOLFGANG PUCK'S RECIPE FOR PIZZA DOUGH

Wolfgang Puck's Recipe for Pizza Dough image

Provided by Food Network

Time 1h30m

Yield 4 (7 or 8-inch) pizzas, 6 ounc

Number Of Ingredients 10

1 package active dry or fresh yeast
1 teaspoon honey or sugar
3/4 cup warm water (105 to 115 degrees F)
2 3/4 cups all-purpose flour
1 teaspoon salt
2 tablespoons olive oil
Tomato sauce and cheese
Cheese, tomatoes, olives
Salmon, sour cream mixed with chopped dill
Cheese, chili oil, pesto

Steps:

  • In a small bowl, dissolve the yeast and honey in 1/4 cup of warm water.
  • In a mixer fitted with a dough hook, combine the flour and the salt. Pour in 2 tablespoons of the oil, and when absorbed, scrape in the dissolved yeast. Add the remaining 1/2 cup of water and knead on low speed about 5 minutes.
  • Turn out onto a board and knead 2 or 3 minutes longer. Dough should be smooth and firm. Let rise in a warm spot, covered with a damp towel, about 30 minutes. (Dough will stretch when lightly pulled.)
  • Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth unfloured surface, roll the ball under the palm of your hand until the dough is smooth and firm, about 1 minute. Cover with a damp towel and let rest 15 to 20 minutes. At this point, the balls can be loosely covered with plastic wrap and refrigerated for 1 to 2 days.
  • Preheat the oven to 525 degrees F. Place a pizza stone in the oven.
  • To prepare each pizza, place a ball of dough on a lightly floured surface. Press down on the center, spreading the dough or roll into a 7 or 8-inch circle, with the outer border a little thicker than the inner circle. Brush lightly with oil and arrange the topping of your choice only over the inner circle.
  • Arrange the pizza on the baking stone and bake at 610 degrees for about 15 to 20 minutes, or until the pizza is nicely browned. Transfer to a firm surface and cut into slices with a pizza cutter. Serve immediately.

Provided by Bobby Flay

Time 1h30m

Yield 2 (14-inch) pizza crusts

Number Of Ingredients 6

3 1/2 to 4 cups bread flour, plus more for rolling
1 teaspoon sugar
1 envelope instant dry yeast
2 teaspoons kosher salt
1 1/2 cups water, 110 degrees F
2 tablespoons olive oil, plus 2 teaspoons

Steps:

  • Combine the bread flour, sugar, yeast and kosher salt in the bowl of a stand mixer and combine. • Grease a large bowl with the remaining 2 teaspoons olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. CALIFORNIA PIZZA KITCHEN PIZZA DOUGH

California Pizza Kitchen Pizza Dough image

Years ago, in finer times, the California Pizza Kitchen website listed their recipes for pizza dough and tomato sauce. Unfortunately they've long since removed that particular content, but not before yours truly could write down the recipe. FAIR WARNING - This is an overnight pizza dough. It can be used day-of, but the difference in flavor is staggering.

Provided by Pain au Chocolat

Categories     European

Time P1DT10m

Yield 2 small pizzas or calzones, 2 serving(s)

Number Of Ingredients 6

1 teaspoon active dry yeast
1/2 cup plus 1 tablespoon warm water (at about 110F)
1 1/2 cups bread flour (high gluten flours also work)
2 teaspoons sugar
1 teaspoon salt
2 tablespoons extra virgin olive oil (1 for dough & 1 for the bowl)

Steps:

  • Dissolve the yeast in the water and let it proof for 5 to 10 minutes. The yeast should have a little island of fizz/bubbles before you start. (if you're using instant yeast dissolve it in the water and skip the proof).
  • In a separate bowl mix all of the dry ingredients and create a little well in the middle. Dump your yeast mixture and the olive oil into the well and stir with either your fingers or a wooden spoon.
  • Once a lumpy kind of dough forms lightly oil your hands and start to knead the ball. Knead it for at least 5 minutes, until the dough is smooth but slightly tacky.
  • Lightly coat the ball in olive oil and place in an airtight container, allow to rise at room temperature for 1 1/2 to 2 hours.
  • You can use the dough at this point, but for a finer texture and a nice, mellow sort of tang do the following: Deflate the dough, bunch it back up into a ball, put it back into the container, and stow it in your refrigerator overnight.
  • About 2 hours before you're going to make your pizza remove the dough from the refrigerator, deflate again, and split into 2 equal portions. Roll both portions into balls, sealing any cracks as tightly as possible. Place the new dough balls on opposite sides of a shallow dish and cover with plastic wrap. Let them sit at room temperature for the aforementioned 2 hours (they'll be much easier to shape).
  • After this just heat your pizza stone (or failing that, the floor of your oven with both racks taken out) to 500 degrees F, roll out your dough balls, top them, and slide them into the oven using a cornmeal-dusted pizza peel (or failing that, anything smooth and thin enough to manuever, like a cutting board).
  • Your pizzas will cook very quickly, so it's easier to just eyeball their progress than try to time them.

PIZZA DOUGH

Pizza Dough image

This pizza dough is very easy to put together, and it's enough for four 10-inch-diameter pizzas. It is best if prepared in advance and refrigerated overnight. Refrigerated dough will keep several days. It may also be successfully frozen and thawed. Keeping preweighed individual frozen dough balls on hand makes it easy to have pizza whenever you like. (Thaw dough overnight in the refrigerator or leave at room temperature for several hours.)

Provided by David Tanis

Categories     easy, pizza and calzones, main course

Time 20m

Yield 4 dough balls (8 ounces/225 grams each)

Number Of Ingredients 4

2 teaspoons/5 grams dry active yeast
4 1/2 cups/625 grams all-purpose flour, plus extra for dusting
2 teaspoons/5 grams kosher salt
2 tablespoons/30 milliliters olive oil

Steps:

  • Put 1 3/4 cups/420 milliliters lukewarm water in a mixing bowl (use a stand mixer or food processor if you prefer). Sprinkle yeast over water and let dissolve, about 2 minutes.
  • Add flour, salt and olive oil and mix well until flour is incorporated and dough forms, about 5 minutes. It may look a little rough or pockmarked.
  • Lightly dust a work surface with flour. Turn dough out onto surface and knead lightly until it looks smooth, 3 to 4 minutes. Cut dough into 4 equal pieces, about 8 ounces/225 grams each.
  • Wrap dough pieces individually in resealable zipper bags and refrigerate for several hours or, for best results, overnight; you can also freeze it for future use. (You can skip this rise in the refrigerator and use the dough right away, but this cool, slow rise makes it easier to stretch and gives the pizza a crisper texture and more nuanced flavor.)
  • To use dough, form each piece into a smooth, firm ball, and place on a flour-dusted or parchment-lined baking sheet. (If you froze the dough, leave it at room temperature for several hours first, or defrost overnight in the refrigerator.) Flour lightly, cover loosely with plastic wrap and top with a kitchen towel. Leave to rise in a warm spot until doubled in size, about 30 minutes. Each dough ball with make a 10-inch diameter pizza.
