My Favorite Macaroni Salad image

What would summer, or anytime really, be without macaroni salad? The variations are endless, but this one is my favorite. I hope you will give it a try and enjoy it as I do.

1 cup mayonnaise
2 tablespoons cider vinegar
1 tablespoon yellow mustard
1 teaspoon sugar
1 teaspoon salt
pepper
8 ounces macaroni, cooked and drained
1 cup celery, chopped
1/2 cup red bell pepper, chopped
1/2 cup green bell pepper, chopped
1/4 cup chopped red onion
1/2 cup black olives, chopped
2 eggs, hardboiled and chopped
1/4 cup pimiento, chopped

Steps:

  • Combine the mayonnaise, vinegar, mustard, sugar, salt, and pepper.
  • Stir in the remaining ingredients and mix gently.
  • Cover and place in refrigerator.

This is a family favorite! Macaroni, shrimp, and veggies make up this delicious salad!

1 ½ cups elbow macaroni
¾ cup mayonnaise (such as Best Foods®)
1 large cucumber, diced
½ cup frozen peas
2 ribs celery, diced, or more to taste
4 radishes, sliced, or more to taste
3 green onions, chopped, or more to taste
1 teaspoon seasoned salt (such as Season-All®), or to taste
1 pound cooked medium shrimp
3 hard-boiled eggs, sliced, or more to taste
1 small avocado, sliced
1 medium tomato, sliced

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and pour into a salad bowl.
  • Add mayonnaise, cucumber, peas, celery, radishes, green onions, and seasoned salt to the macaroni; toss well. Add shrimp last. Garnish with hard-boiled eggs, avocado, and tomato.

Family-Favorite Macaroni and Cheese image

I found this recipe in a Taste of Home publication awhile back. I had written it out and stuck it in my 'to try' binder. A few months ago I made it for the first time... it's now my absolute favorite baked macaroni and cheese recipe! (with it tweaked for my own tastes). Enjoy!

Number Of Ingredients 11

2 cups uncooked elbow macaroni
1/4 cup butter (I use margarine) or 1/4 cup margarine (I use margarine)
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground mustard (I use a squirt of yellow mustard)
1/4 teaspoon Worcestershire sauce
2 cups milk
8 ounces extra-sharp cheddar cheese, cubed
1/8 cup Italian seasoned breadcrumbs
1 tablespoon grated parmesan cheese

Steps:

  • Heat oven to 350 degrees.
  • Cook elbow macaroni as directed on package.
  • While macaroni is cooking, melt butter in a 3 quart saucepan over low heat.
  • Stir in flour, salt, pepper, mustard and Worcestershire sauce.
  • Cook over medium-low heat, stirring constantly, until mixture is smooth and bubbly.
  • Remove from heat.
  • Stir in milk.
  • Heat to boiling, stirring constantly.
  • Boil and stir for 1 minute.
  • Stir in cheese.
  • Cook, stirring occasionally, until cheese is melted.
  • Drain macaroni when done. Gently stir macaroni into cheese sauce and pour into ungreased 2 quart baking dish.
  • Mix together bread crumbs and parmesan cheese; sprinkle over macaroni and cheese.
  • Bake, uncovered, for 25 minutes or until bubbly.

Bair Family Macaroni Salad image

This is something that I grew up eating. Now my sister makes it for every cookout and holiday gathering due to requests from in-laws. It's the only macaroni salad I have ever liked. Prep time is time to cook macaroni and chop veggies. I did not include refrigeration time.

1 (16 ounce) box macaroni, cooked
12 eggs, hardboiled
1 green bell pepper, diced
1 large sweet onion, diced
2 large celery ribs, diced
3 cups mayonnaise (we use Miracle Whip)
2 tablespoons sugar
1 (6 ounce) can shrimp, drained

Steps:

  • Cook macaroni, prepare all veggies, and dice the eggs.
  • Drain macaroni and run cold water over it to bring it to room temperature.
  • Add all ingredients into very large bowl and mix (we use our clean hands for this).
  • Refrigerate until thoroughly chilled.
  • Best when made a day in advance, to let the flavors mingle.
  • If using canned shrimp, they will break up and be very fine. This means no one knows there's shrimp in it unless you tell them, so this can be your "secret ingredient". ;).
  • Larger shrimp can be used, this is just what mom always made it with.
