Sous vide ribs cooked for 24 hours and then finished on the smoker or grill will make the best pork ribs you have ever had. These ribs are meaty yet tender and fall off the bone just by touching them.

1 rack st. louis ribs
1/2 cup bbq sauce

Steps:

  • Remove the silver skin from the back of the ribs.
  • If you don't have a roll of vac and seal bags, cut between the ribs to make smaller potions that will fit into a gallon bag.
  • Place the ribs into a sous vide water bath set at 155 F and cook for 24 hours. basting liquid for ribs
  • For added flavor, add the purge, or liquid in the bag, to the BBQ sauce that you will be basting the ribs with.
  • Heat your smoker grill to 225 and smoke the ribs for one hour. After an hour lightly baste the ribs with the bbq sauce. Close the lid and smoke for an additional 15 minutes.
  • Continue to baste the ribs every 15 minutes allowing the bark to form in between each basting.
  • Ribs are done when the internal temp reaches 170 but I let mine go to 190.

24 Hour Sous Vide Ribs image

These bbq ribs are rubbed with a smokey dry rub, cooked in a sous vide bath for 24 hours, slathered with BBQ sauce, and then grilled to perfection.

1 rack of ribs
1/2 tablespoon olive oil
3/4 cup pork dry rub*, divided
1/2 cup BBQ sauce (or more, to taste)

Steps:

  • First, fill a large pot with water (something large enough to submerge your ribs). Preheat your sous vide water bath to 152ºF by attaching your sous vide to the side of the pot.
  • Next, prepare pork dry rub by combining all of the spices together in a medium bowl and set aside.
  • Then, remove rack of ribs from the package and place it onto a large baking sheet. Use a sharp knife to cut the rack in half. Then, flip the ribs over and remove the white membrane by peeling it back. Discard membrane.
  • Generously season ribs with your dry rub. Use about 1/2 cup of dry rub at this point and save the rest for later. Use your hands to massage the rub into the front and back of the ribs.
  • Transfer each half rack of ribs into 2 separate food saver bags and remove as much air as possible and seal. Submerge bags into the sous vide water bath and use 2 clips to attach them to the side of the pot. Cover pot with a piece of tin foil, leaving a hole for the sous vide to stick out. The reason we do this is to prevent evaporation overnight.
  • Set timer for 24-hours. Make sure to check water level every so often to make sure that the water does not evaporate. If it does, just add more.
  • Once the 24-hours is up, remove bags from water bath and then cut them open with a pair of scissors. Discard the juices and remove the ribs. Place ribs on top of paper towel and use an additional paper towel to blot any moisture out of them.
  • Use around 1/4 cup more of dry rub to season the front and back of the ribs. Then, use a brush to apply a layer of your favorite BBQ sauce. You can use as much or as little BBQ sauce as you'd like.
  • Preheat grill to 450ºF. Then, rub grill grates with olive oil or spray with nonstick cooking spray. Grill both sides of the ribs for 5-6 minutes or until you get a charred edge.
  • Let ribs rest for 5-10 minutes before serving.

Man O Man, is this ever good, the coleslaw is awesome on this sandwich! I add 3 cloves of minced garlic. I can see this meat over some pasta as well, so not just for a sandwich! I took another reviewer's advice on the Food Network site and turned my oven up to 400 degrees after the 90 minutes of cooking (on 375 degrees) and continued to cook the meat for an additional hour. Next time I would make double the ribs, so we have some leftovers. This is adapted from Food Network, Big Daddy's show. Hope you enjoy!

6 (4 ounce) beef short ribs
kosher salt and freshly cracked black pepper
3 tablespoons oil
1 small onion, diced
1 cup dry red wine
1/4 cup balsamic vinegar
1 (14 ounce) can stewed tomatoes
4 cups beef stock
2 sprigs fresh thyme
1 sprig fresh rosemary
4 brioche bread or 4 ciabatta buns
kicked up Coleslaw, recipe follows

Steps:

  • Preheat oven to 375 degrees F.
  • Season the short ribs with salt and pepper.
  • In a large Dutch oven or soup pot over medium-high heat, add the oil. Sear the ribs on all sides until well colored and slightly charred. Remove the ribs from pan to a plate and set aside.
  • Over medium-low heat, add the onions to the Dutch oven and cook for 1 to 2 minutes.
  • Add the red wine and vinegar and reduce liquid by half.
  • Stir in the tomatoes, stock and fresh herbs.
  • Add the short ribs and cover the pot. Put in the oven and cook until meat is fork tender, about 90 minutes.
  • Remove from oven, transfer the short ribs to a large bowl and shred the meat.
  • Assemble the sandwiches on brioche buns with slaw.
  • Skim the fat from the cooking liquid, strain into a serving bowl and use for dipping the sandwiches.
  • Kicked Up Cole Slaw:
  • 1 (16-ounce) package shredded cole slaw mix
  • 1/2 red onion, sliced thin
  • 2 green onion, sliced
  • 3/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 2 tablespoons white vinegar
  • 2 tablespoons sugar
  • Several dashes hot sauce
  • 1/2 teaspoon coarsely ground black pepper
  • Pinch cayenne pepper
  • 1/4 teaspoon celery salt
  • Pinch kosher salt
  • In a large bowl, mix together all ingredients. Allow to sit in refrigerator for 30 minutes before serving.
  • Serve on top of sandwiches.
