Pat loves a fresh salad especially when it's topped with crispy falafel! This ready made falafel from Trader Joe's can easily be made in your air fryer, which has been Pat's favorite sidekick in the kitchen lately (with the exception of Flippin' Pat of course!) The creamy garlic tahini dressing brings this salad up a notch and Pat hopes you dive face first into this salad because it's so good!

1 bag Trader Joe's Fully Cooked Falafel 
Romaine lettuce
Grape tomatoes
2-3 Persian cucumbers 
1 can Trader Joe's Greek Chickpeas with Parsley & Cumin
Feta cheese
2-3 tablespoons Trader Joe's Garlic Spread Dip
1/2 cup tahini
1/2 teaspoon salt
1/2 teaspoon garlic powder (or minced)
1/4 cup warm water
Fresh parsley to taste
Squeeze of lemon

Steps:

  • Place falafel in air fryer and set to 325º for 10-12 minutes
  • Prepare salad: slice Romaine lettuce, tomatoes, cucumbers and place in salad bowl
  • Sprinkle feta and garbanzo beans
  • Combine all ingredients and while slowly adding warm water until creamy

2 c dry chickpeas (soaked overnight*)
1 c fresh parsley (packed)
1 c fresh coriander (packed)
1 large onion (diced)
4 cloves of garlic
1 lemon (juice and flesh)
1 tbsp cumin
1 tsp sea salt
Black pepper to taste
1 bunch kale
1 tbsp olive oil
2 tbsp apple cider vinegar OR lemon juice
Pinch sea salt
1 c cucumber (sliced)
1 c tomatoes (quartered)
1/2 c red onion (thinly sliced)
1/2 c hulled tahini
1/2 c hot water
1 lemon (juice and flesh)
2 cloves of garlic
2 tsp liquid sweetener (e.g. coconut nectar/brown rice syrup)
1 tsp sea salt
8 small wholemeal pita breads
Fresh herbs (optional)
Sesame seeds (optional)

Steps:

  • Falafels: Soak your chickpeas overnight in a big bowl of water, then drain and rinse before using. You can also do the two day soak and sprout method, by leaving them in your colander on day two covered with a tea towel - they'll sprout little tails by the next day.
  • Roughly chop your herbs, then blend all falafel ingredients in a food processor.
  • Heat a little coconut oil in a fry pan on medium high, then fry tablespoon sized balls on each side for around 3 minutes until golden.
  • Kale Salad: Pull the kale leaves off their stems by grabbing the stem with one hand and pushing your thumb and forefinger from the top of the stem down to the tip, removing the leaf. Wash and dry the leaves (put the stems in the compost), roughly chop, place in a bowl with the olive oil, apple cider vinegar/lemon juice, and sea salt, then massage with your hands for a minute until the leaves go bright green and soft.
  • Garlic Tahini Dressing: Blend all ingredients in a blender until super creamy and smooth. Make double if you dare - it's incredible on anything!
  • Plate up the kale salad on each plate, top with cucumber, tomatoes, red onion, falafels, drizzle with dressing, then top with extra herbs and sesame seeds if desired. Serve with freshly toasted wholemeal pita breads, or your favourite gluten free pita/wrap equivalent. Put the extra dressing on the table in case anyone wants a top up!

These patties are big on chickpeas: There are mashed chickpeas, chopped chickpeas and chickpea flour in the mix! They can be vegan if you skip the honey and use vegan buns.

2 cups shredded red cabbage
2 tablespoons extra-virgin olive oil
1 tablespoon lemon juice
1 teaspoon honey
1/4 cup chopped fresh mint
Kosher salt and freshly ground pepper
1/4 cup tahini
1 tablespoon lemon juice
Kosher salt and freshly ground pepper
1/2 onion, roughly chopped
3 scallions, roughly chopped
1 clove garlic, smashed
1 cup roughly chopped fresh parsley
1 teaspoon ground cumin
1 teaspoon ground coriander
Kosher salt and freshly ground pepper
2 15-ounce cans chickpeas, drained and rinsed
1/3 cup chickpea flour
1/3 cup olive oil, for frying
4 sesame hamburger buns
Sliced dill pickles and pepperoncini, for topping

Steps:

  • Make the cabbage salad: Toss the cabbage, olive oil, lemon juice, honey and mint in a medium bowl. Season with salt and pepper.
  • Make the tahini spread: Whisk together the tahini, lemon juice, and 1/4 cup water. Add up to 2 more tablespoons of water until the mixture is the consistency of mayonnaise. Season with salt and pepper.
  • Make the burgers: Combine the onion, scallions, garlic, parsley, cumin, coriander and 1/2 teaspoon each salt and pepper in a food processor and pulse until finely chopped. Mash 1/2 cup of the chickpeas in a small bowl with a fork; set aside. Add half of the remaining chickpeas to the food processor and pulse until finely chopped (the mixture should look smooth but not pasty). Add the remaining whole chickpeas and pulse until roughly chopped (a few chickpeas may remain whole).
  • Transfer the food processor mixture to a large bowl; add the chickpea flour and reserved mashed chickpeas and fold together with a rubber spatula until well combined. Form the chickpea mixture into four 4-inch-wide patties (1/2 to 3/4 inch thick). Place on a plate lined with wax paper. Loosely cover and chill for at least 30 minutes or up to overnight.
  • Heat the olive oil in a large nonstick skillet over medium heat. Add 2 patties; cook until dark brown and crisp, about 4 minutes. Carefully flip and cook until the other side is browned and the patties are hot in the center, 3 to 4 more minutes. Repeat with the remaining patties. Spread the tahini spread on the buns. Serve the burgers on the buns with the cabbage salad, pickles and pepperoncini.

Adapted from The Splendid Table's online newsletter. Light and fluffy, my husband said if he could eat this at every meal he'd be happy as a vegetarian. I make the sauce first, then the falafel. Serve on a plate with the sauce as part of a Middle Eastern meal, or stuff into a pita with vegetables and dress with sauce. We like this with Recipe#12165.

1 teaspoon cumin seed
1/2 teaspoon coriander seed
1/4 teaspoon fenugreek seeds (optional, but better with it)
1/4 teaspoon red chili pepper flakes
2 cups cooked chickpeas (I cook mine in the pressure cooker, but canned would be fine)
1/2 cup chopped white onion
3 medium garlic cloves
2 tablespoons white sesame seeds
1/4 cup matzo meal
1/4 cup chopped flat leaf parsley
1 teaspoon baking powder
1 egg
2 teaspoons salt (use less if the chickpeas are salted)
fresh ground black pepper
1 quart oil (for frying, we use a mix of canola and peanut oils)
1/4 cup tahini (sesame seed paste)
1 garlic clove
1/2 teaspoon cumin seed, toasted and ground
1/4 teaspoon fennel seed, toasted and ground
1/2 teaspoon salt
juice of half a small lemon (prefrably Meyer)
1/4 teaspoon red chili powder (we prefer ancho) or 1/4 teaspoon cayenne (we prefer ancho)
2 -4 tablespoons water

Steps:

  • Falafel: Grind the first four spices in a spice grinder or moprtar and pestle. Place the ground spices in the workbowl of a food processor along with the chickpeas, onion, and garlic. Pulse several times to mince the contents.
  • Add the sesame seeds, matzo meal, parsley, and baking powder and pulse until evenly mixed, being careful not to puree the mixture.
  • Beat the egg in a large bowl, add the chickpea mixture, salt, and pepper and mix well. Chill at least 15 minutes.
  • Form 16 balls of the chilled chickpea mixture and place on a parchment-lined baking sheet, flattening each ball slightly.
  • Heat the oil to 360 degrees in a large heavy pot and fry the falafel until golden, turning at least once. This should take 2 or 3 minutes. Drain well before serving, hot, with the tahini sauce and lemon wedges.
  • Tahini Sauce ( makes about 1/2 cup):Combine all ingredients except water in the workbowl of a food processor and pulse until smooth. Add the water slowly with the motor running until it forms a creamy sauce.

There's not one "right" way to make a falafel. So if you like less onion, put in less onion. If you like more herbs, put in more herbs. More spice, more spice. It's really up to you.

1 tablespoon cumin seeds
2 teaspoons granulated garlic
2 teaspoon chili powder
1 tablespoon dried parsley
1 teaspoon granulated onion
1/2 teaspoon za'atar
1/2 teaspoon sumac
Pinch allspice
Pinch chili flakes
Pinch black pepper
1 cup dried chickpeas, soaked overnight (yields two cups)
1/2 red onion, chopped
5 garlic cloves, chopped
3/4 cup chopped parsley (half bunch)
3/4 cup chopped cilantro (half bunch)
1/8 teaspoon baking soda
1 1/2 tablespoons spice mix
1/2 tablespoon salt plus more to taste
6 cups vegetable oil (fill the pot ¾ full)
1 garlic clove, chopped
2/3 cup water
2/3 cup tahini
Juice of half a lemon plus more to taste
1 teaspoon extra virgin olive oil
Salt, to taste

Steps:

  • Make the spice mix: In a skillet over low heat, toast the coriander and cumin seeds until fragrant, 1-2 minutes. Grind the toasted seeds in a spice grinder. Add the dried parsley, granulated garlic, chili powder, granulated onion, za'atar, sumac, allspice, chili flakes, a few turns of black pepper and continue grinding to combine. Set aside. Spice mix will keep for several weeks in an airtight jar.
  • For the falafel: In a food processor, add the chickpeas, chopped onion and garlic, parsley, cilantro, baking soda, spice mix and salt. Pulse until the mixture's combined and the chickpeas are pea-size, stopping and stirring halfway through. Tightly pack the falafel mixture into balls the size of an extra large marble and set aside.
  • Fry the falafel: Pour oil half full into a deep pan and set over medium heat. Secure a deep-fry thermometer to the pan's side and heat oil to 375 degrees F. Using a spider strainer, gently drop the falafel balls, one at a time, into the hot oil making sure the pot isn't overcrowded with falafel. Cook until most of the bubbles have disappeared and the falafel is golden brown, 1-2 minutes. Remove to a wire rack fitted over a baking sheet to cool and repeat the process until all of the falafel balls are cooked.
  • Make the tahini dressing and assemble the dish: In a blender add the garlic, water, tahini, lemon juice, olive oil, and salt. Blend until combined. Taste for seasoning, adding more salt and lemon juice if necessary and blend again. Set aside. Tahini sauce can be made several days ahead and stored in the refrigerator. To serve, place falafel balls on a platter, drizzle with tahini sauce and garnish with parsley and a lemon wedge.
