WAFFLED FALAFEL
Besides just tasting wonderful, these easy waffled falafels are much lower in fat than their deep-fried relatives.

Steps:
- Preheat the oven to 200 degrees F (to keep cooked waffles warm).
- Combine the oil, cilantro, flour, parsley, baking powder, cumin, salt, coriander, cayenne, egg whites, garlic and chickpeas in a food processor and pulse until smooth.
- Lightly brush the top and bottom of the waffle iron with oil. Fill the waffle iron about three-quarters of the way full (some waffle iron should still be showing). Close the lid gently and cook until the falafel is golden brown and firm in the center, 6 to 10 minutes. Keep the cooked falafels warm in the oven or covered with foil on a plate while you make the remaining falafels.
- To build the sandwiches, stuff each pita half with a falafel. Add your choice of toppings, drizzle with the hummus and sprinkle with a few dashes of hot sauce.
BAKED FALAFEL WITH CUCUMBERS AND TAHINI

- Put a baking sheet on the middle oven rack and preheat to 450 degrees F. Pulse 2 cups cilantro, 1 cup onion, the garlic, cumin, 1/2 teaspoon salt and a few grinds of pepper in a food processor until finely chopped. Add the chickpeas and 2 tablespoons tahini; pulse to make a chunky paste. Scrape the mixture into a bowl and stir in the panko.
- Form the chickpea mixture into twelve 2-inch patties (about 2 tablespoons each). Remove the baking sheet from the oven, brush with 1 tablespoon olive oil and add the chickpea patties. Bake, flipping the patties and rotating the pan halfway through, until golden and crisp, 20 to 25 minutes.
- Meanwhile, mix the remaining 1/3 cup tahini with 6 tablespoons warm water and the juice of 1 lemon in a small bowl until creamy (it may look separated at first but it will come together). Season with salt and pepper; set aside. Toss the cucumbers with the juice of the remaining lemon, 1 cup cilantro, 1/2 cup sliced onion and 1 tablespoon olive oil in a medium bowl; season with salt and pepper.
- Warm the pita in the oven. Serve the falafel with the cucumber salad, pita and tahini sauce.
FALAFEL BURGERS
A healthy burger that's filling too. These are great for anyone after a satisfying bite low in calories.

- Drain the chickpeas and pat dry with kitchen paper. Tip into a food processor along with the onion, garlic, parsley, cumin, coriander, harissa paste, flour and a little salt. Blend until fairly smooth, then shape into four patties with your hands.
- Heat the sunflower oil in a non-stick frying pan, and fry the burgers for 3 mins on each side until lightly golden. Serve with the toasted pitta bread, tomato salsa and green salad.

- I have to tell you right off the bat that I had no idea that chickpeas could be used in a recipe without even cooking them, but that’s exactly how this dish is made. You’ll need to start off with dry garbanzo beans, so this means you can’t use the ones from a can because they have already been cooked.
- Add the dry garbanzo beans to a large bowl and cover them with water at least 3 times the volume. Let them soak overnight or until you can break them apart with your fingers. Once they have thoroughly soaked, drain them and set them aside.
- Place all ingredients into a food processor or blender and pulse until it acquires a minced consistency, do not purée.
- Shape into 3 oz. patties and place on a prepared sheet pan with parchment paper and bake at 425°F for 15 to 20 minutes.

- Begin by opening the canned chickpeas, draining, and then rinsing them really well. Dry the chickpeas with a clean linen cloth, and at the same time gently rub the chickpeas to remove the skins. Pick out as many skins as possible.
- Using a pestle, (or the empty washed chickpea can), crush the chickpeas until they are crumbly in texture.
- Add the minced garlic, chopped red onion, parsley, cumin, salt, pepper, and 3 tbsp flour to the mixture, and mix together with a spoon. Avoid over-mixing to prevent the mixture from becoming to paste-like.
- Form the falafel mixture into little balls and then flatten them to make little patties. Refrigerate the patties for 30 minutes to help them firm up.
