6 spinach tortillas
2 tablespoons butter, melted
1 tablespoon canola oil
1 pound boneless pork loin chops, cut into thin strips
1 envelope fajita seasoning mix
1 medium onion, thinly sliced
1 medium sweet red pepper, thinly sliced
1 medium green pepper, thinly sliced
4-1/2 cups shredded lettuce
1 medium tomato, chopped

Steps:

  • Place six 10-oz. custard cups upside down in a shallow baking pan; set aside. Brush both sides of tortillas with butter; place in a single layer on ungreased baking sheets. , Bake, uncovered, at 425° for 1 minute. Place a tortilla over each custard cup, pinching sides to form a bowl shape. Bake for 7-8 minutes longer or until crisp. Remove tortilla from cups to cool on wire racks., In a large skillet, heat oil over medium-high heat. Combine pork and seasoning mix; add to the skillet. Cook and stir until meat juices run clear. Remove pork with a slotted spoon., In the drippings, saute onion and peppers until crisp-tender. Place lettuce in tortilla bowls; top with the pork, pepper mixture and tomato.

1 cup basmati rice
Kosher salt
2 bell peppers (1 red, 1 yellow), cut into thick strips
1 large white onion, sliced into thick rings
3 tablespoons extra-virgin olive oil
Freshly ground pepper
1 1/2 pounds turkey cutlets (about 6)
1 tablespoon fajita seasoning
Juice of 1/2 lime
1 cup fresh cilantro
1 avocado, sliced
1/2 cup sour cream
1/2 cup pico de gallo or salsa

Steps:

  • Preheat a grill to high. Combine the rice, 12/3 cups water and a pinch of salt in a medium saucepan. Bring to a boil, then reduce the heat to low and stir. Cover and cook until the liquid is absorbed and the rice is tender, about 18 minutes. Let stand, covered, 5 minutes.
  • Meanwhile, put 1 bell pepper strip and 2 outer rings from 1 onion slice in a blender; set aside. Brush the remaining bell peppers and onion with 2 tablespoons olive oil; season with salt and pepper. Toss the turkey with the remaining 1 tablespoon olive oil and the fajita seasoning; season with salt and pepper.
  • Grill the peppers and onion, turning halfway through, until tender and charred in spots, about 10 minutes. Remove the vegetables to a large bowl; add the lime juice. Season with salt and pepper and toss. Grill the turkey until marked and cooked through, 2 to 3 minutes per side. Remove to a cutting board; slice into strips.
  • Puree the reserved bell pepper and onion with 1/4 cup water, the cilantro and 1/4 teaspoon salt. Fluff the rice with a fork and stir in the cilantro puree. Divide the rice among bowls; top with the turkey, vegetables, avocado, sour cream and pico de gallo.

1 beef flank steak (1 pound)
12 miniature sweet peppers, halved and seeded

SALAD:
12 cups torn mixed salad greens
1 cup fresh cilantro leaves
1/2 cup reduced-fat lime vinaigrette

Steps:

  • In a small bowl, mix brown sugar, chili powder and salt. Rub onto both sides of steak., Place peppers and onion on a grilling grid; place on grill rack over medium heat. Grill, covered, until crisp-tender, stirring occasionally, 9-11 minutes; add tomatoes during the last 2 minutes. Remove from grill., Place steak and corn directly on grill rack; close lid. Grill steak until a thermometer reads 135° for medium-rare, 8-10 minutes on each side; grill corn until lightly charred, turning occasionally, 10-12 minutes., Divide greens and cilantro among 4 bowls. Cut corn from cobs and thinly slice steak across the grain; place in bowls. Top with vegetables; drizzle with vinaigrette. If desired, serve with cheese, lime and tortillas.

Warm and wonderful! I have tasted many chicken tortilla soups that were very good, but adapted this one to my own tastes. The fajita spiced chicken really makes it!

1 (16 ounce) package chicken breasts, diced (pre-marinated in fajita seasoning)
8 cups chicken broth
1 onion, chopped
1 (8 ounce) can tomato sauce
1 (12 ounce) can diced tomatoes
1 tablespoon fresh cilantro, chopped
1 tablespoon ground cumin
1 avocado, fresh sliced
1 (16 ounce) package monterey jack cheese
1 (13 ounce) bag tortilla chips

Steps:

  • Pour chicken broth and about a quart of water into large pot. Bring to boil and add chicken, onion and cilantro. Boil for about 5 minutes.
  • Reduce heat to medium and add tomatoes, tomato sauce and cumin and continue cooking for 20 minutes.
  • In separate bowls, place about 5 tortilla chips, a little Monterey jack cheese and a slice of avocado.
  • Spoon chicken soup into the bowls over the tortillas, cheese and avocado.
  • Can add a dollop of sour cream to the top if desired.

1 cup long-grain rice
2 tablespoons chili powder
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
2 tablespoons olive oil or canola oil
1 1/2 pounds boneless, skinless chicken breasts, sliced 1/4 inch thick
1 red bell pepper, cut into 1/2-inch-thick strips
1 yellow bell pepper, cut into 1/2-inch-thick strips
1 large red onion, sliced 1/2 inch thick
One 15-ounce can black beans, rinsed and drained
4 tablespoons fresh lime juice (from about 2 limes)
1/2 cup sour cream
1/2 cup fresh cilantro, roughly chopped

Steps:

  • Cook the rice according to the package directions. Preheat the broiler to high with the rack in the highest position. Line a rimmed baking sheet with foil.
  • Put the chili powder, cumin, 1 1/2 teaspoons salt, 1/2 teaspoon pepper and oil in a large bowl and whisk to combine.
  • Add the chicken, peppers and onions to the bowl and toss to coat well. Scatter the chicken and vegetables in an even layer on the prepared baking sheet and broil until the vegetables are starting to char and soften and the chicken is cooked through, about 10 minutes.
  • Meanwhile, combine the black beans and 2 tablespoons lime juice in a small bowl. Once the chicken and vegetables are out of the oven, add the beans to the baking sheet and toss to combine. (The heat from the fajitas will warm the beans.)
  • Meanwhile, make the sour cream drizzle: Put the remaining 2 tablespoons lime juice, sour cream and cilantro in the bowl of a mini food processor and pulse until mostly smooth and green. Season to taste with salt and pepper.
  • Divide the rice between 4 bowls and top with the fajita mixture. Drizzle with the sour cream mixture before serving.

Remove the veggies from the skillet and lower the heat to medium. Add the Old El Paso Refried Beans to the skillet. Stir and cook until warm.
  • To assemble: Place warm refried beans in the bottom of four bowls. Top each bowl with 1/2 cup chopped kale, 1/2 cup cooked quinoa, charred onions and peppers, diced avocado, one chopped hard boiled egg, 1 1/2 tablespoons pistachios, and lime wedges. Squeeze the lime juice over the bowls and enjoy!
