2 small red onions
2 tbsp. fresh lime juice
1/4 tsp. sugar
kosher salt
Freshly ground black pepper
3 peppers (red, yellow, orange), seeded and quartered
2 jalapeños, halved and seeded
4 tbsp. extra-virgin olive oil
1 lb. skirt steak, trimmed and cut crosswise into 4 pieces
6 c. Greens

Steps:

  • Heat grill to medium-high. Slice all but 1⁄4 of the red onions into 1⁄2"-thick rings. Finely chop remaining quarter and place in a small bowl. Add lime juice, sugar, and 1⁄4 teaspoon each salt and pepper and toss to combine.
  • Brush onion slices, peppers and jalapeños with 1 tablespoon oil. Season steak with 1⁄4 teaspoon each salt and pepper. Grill vegetables until just tender, 4 to 5 minutes per side. Grill steak to desired doneness, 3 to 4 minutes per side for medium-rare. Transfer vegetables and steak to a cutting board. Let steak rest at least 5 minutes.
  • Finely chop jalapeños and add to the bowl with raw onions and remaining 3 tablespoons oil. Mix to combine.
  • Cut peppers and onions into pieces and slice steak. Divide greens among 4 plates. Top with steak and vegetables, then drizzle with jalapeño dressing.

It's a fresh, vibrant, crispy, juicy, robust ,earthy, tangy explosion in every forkful, perfect for lunch, dinner, entertaining or potlucks. It's prep ahead friendly for a meal you can throw together in minutes when ready to serve. You can also customize the chicken salad recipe by using more or less of your favorite ingredients, adding corn, black beans, etc. Now prepare to fall in love -this might just be the best chicken salad recipe of all time!

2 tablespoons olive oil
2 tablespoons brown sugar
2 tablespoons orange juice
2 tablespoons lime juice
2 tablespoons reduced sodium soy sauce
1 tablespoon Dijon mustard
1 tablespoon chili powder
1 1/2 teaspoons ground cumin
1 tsp EACH garlic powder, onion powder, salt
1/2 tsp EACH smoked paprika, chipotle chili pepper, dried oregano
1/4 teaspoon pepper
2 teaspoons mesquite liquid smoke ((optional))
2 small chicken breasts (1 pound) or boneless chicken thighs (pounded to an even thickness)
1 red bell pepper, (quartered if grilling, sliced if cooking on the stove)
1 orange bell pepper, (quartered if grilling, sliced if cooking on the stove)
1 yellow bell pepper, (quartered if grilling, sliced if cooking on the stove)
1 red onion, (quartered if grilling, sliced if cooking on the stove)
1 large head Romaine lettuce (6 cups), chopped
1 pint cherry tomatoes, halved
2 avocados, sliced or chopped
1/3 cup packed cilantro, finely chopped
1/4 cup cotija cheese
1/4 cup roasted, salted sunflower seeds or pepitas
3/4 cup sour cream or Greek yogurt
1/2 cup medium roasted salsa verde ((or regular salsa))
1/4 cup mayonnaise
2 tablespoons lime juice, plus more to taste
2-3 cloves garlic, minced
1/2 tsp EACH salt, ground cumin, pepper
cayenne pepper to taste

Steps:

  • MARINADE: In a large freezer bag, whisk together all of the Chicken Fajita Marinade ingredients. Remove ¼ cup to a separate freezer bag and add the bell peppers and onions. To the first bag, add the chicken and turn to evenly coat. Marinate the chicken and the vegetables in the refrigerator for 4 hours up to overnight.
  • DRESSING: Make the dressing while the chicken is marinating so it has time to chill. Whisk all of the dressing ingredients together in a medium bowl. Cover and refrigerate until ready to use. Add additional lime juice for a tangier dressing and cayenne pepper for a spicier dressing.

fajita seasoning for chicken (recipe below)
1 lb boneless skinless chicken breast, cut into thin strips
vegetable cooking spray
1 tablespoon fresh lime juice
salt & fresh ground pepper
2 tablespoons chopped fresh cilantro
6 -8 cups shredded romaine lettuce
1/2 cup thin sliced green bell pepper
1/2 cup thin sliced red bell pepper
1 small red onion, sliced into rings
1/2 cup shredded monterrey jack cheddar cheese or 1/2 cup Mexican blend cheese
1 (15 ounce) can pinto beans (optional) or 1 (15 ounce) can black beans, rinsed and drained (optional)
1 roma tomato, diced
4 -8 black olives
1 avocado, sliced
salad dressing (Creamy Cilantro Lime Dressing recipe below)
1 tablespoon chili powder (I love Ancho or chipotle)
1 1/2 teaspoons ground cumin
1 1/2 teaspoons Mexican oregano
1 teaspoon salt
2 tablespoons chopped cilantro
1/2 cup sour cream
1 1/2 tablespoons lime juice
1 teaspoon granulated sugar
1/4 teaspoon ground cumin
1/4 teaspoon chili powder

Steps:

  • Place a large skillet coated with cooking spray over medium-high heat until hot.
  • Add chicken and sprinkle chicken with fajita seasoning and saute 8 minutes or until chicken is done (no longer pink inside) and browned on the outside
  • Sprinkle with 1 tablespoon fresh lime juice. Salt and fresh ground pepper to taste. Garnish with chopped fresh cilantro set aside.
  • In a mixing bowl, combine lettuce, peppers, cheddar cheese, tomato and beans and toss with chicken. Drizzle with cilantro lime dressing
  • Plate and garnish with black olives and sliced avocado. Serve with warm tortillas or tortilla chips and your favorite salsa or Pico de Gallo.
  • To Make Fajita Seasoning: Combine all seasonings well.
  • To Make Creamy Cilantro Lime Dressing: Combine all ingredients, and stir well with a whisk. Cover dressing and refrigerate.
