THE ULTIMATE GRILLED CHEESE SANDWICH

Steps:
- Preheat a griddle or nonstick skillet to medium-low. Spread 2 teaspoons of the butter on one side of a bread slice. Repeat with the remaining butter and bread. Place one of the slices butter-side down and shingle the cheese on top, covering the entire surface. Top with the other slice of bread, butter-side up.
- Place the sandwich on the griddle and cook until the bottom is golden brown and crisp, 3 to 4 minutes. If the bread is browning too quickly, shift the griddle off the heat. Flip the sandwich, then cover with a small metal bowl and cook until the bottom is golden brown and the cheese is melted, 3 to 4 minutes. Once golden brown on both sides, toast the edges of the sandwich, if desired. Transfer to a cutting board, cut in half on the bias and serve immediately.

- Spread one side of each bread slice with the butter. On a clean work surface, place 4 slices buttered-side down. Divide the cheese and ham among those 4 slices. Place the remaining 4 slices of bread on top, buttered-side up.
- Heat a grill pan or a 12-inch skillet with a lid over medium heat until warm. Place the sandwiches in the skillet (in batches if necessary) and cook, covered, 3 to 5 minutes on each side, or until cheese melts and bread is golden brown.
- Cut each sandwich in half; slide in 1 or 2 tomato slices and serve hot.

SHEET PAN GRILLED CHEESE SANDWICHES
Everyone loves a grilled cheese, but when making sandwiches for a crowd, who wants to stand over the stove making them one by one? Not me! My hack of baking them on a sheet pan in the oven means the sandwiches will be ready at the same time, and I can enjoy hanging out with my friends and family while the oven does all the work.

- Arrange a rack in the bottom of the oven, place a large rimmed baking sheet on the rack and preheat to 450 degrees F.
- Spread one side of 6 slices of bread with 4 tablespoons of the butter and place, buttered sides down, on a second large rimmed baking sheet.
- Top each buttered bread slice with 1 slice of cheese or some of Kardea's Pimento Cheese and your desired toppings. Top with another slice of cheese and the remaining 6 bread slices. Spread the tops of the bread slices with the remaining 4 tablespoons of the butter.
- Carefully remove the hot baking sheet from the oven, and place it on top of the uncooked sandwiches, rimmed edges up. Press down on the sandwiches.
- Place the stacked baking sheets in the oven on the bottom rack. Bake until the cheese is melted and the bread is golden brown and crispy, 10 to 12 minutes. Serve immediately.
- Add the yellow Cheddar, cream cheese, white Cheddar, pimentos and mayonnaise to a bowl and mix together. Add the chives, garlic powder, cayenne, smoked paprika, salt and pepper and mix until thoroughly combined.

Although almost everyone seems to have their own version of the "best" grilled cheese sandwich, this one defines grilled cheese as it was meant to be. The crunchy texture of the bread and the perfectly melted cheese ensure that. To create the perfect sandwich, be sure to press it firmly after you've turned it. This compresses and crisps the bread and makes the cheese-bread ratio just right.

- Butter one side of each of the bread slices. Place 4 slices of bread, buttered side down, on your work surface. Distribute the cheese over the bread slices. Place remaining bread, buttered side up, on top of the cheese.
- Heat a large nonstick pan over a medium-high heat for 2 minutes. Put the sandwiches into the pan, cover, and cook for 2 minutes. Remove the cover and turn the sandwiches, pressing each one firmly with a spatula to flatten slightly. Cook for 1 minute or until underside is golden brown. Turn the sandwiches once more, press with the spatula again, cook for 30 seconds, and remove from the pan. Cut in half and serve immediately.

- Spread Dijon mustard lightly across one side of one slice of bread. You’re aiming for a very thin layer. Stir the green onion into the grated cheese, and set aside.
- Melt a pat of butter (about 1 teaspoon) in a medium non-stick skillet over medium heat (or a large skillet, if you’re planning on making two sandwiches at once). Once melted, place the mustardy slice of bread into the skillet, with the mustard side facing up.
- Top the slice with the oniony cheese (aim for about a 3/4-inch layer of cheese). Then place the remaining slice of bread on top. Cover the skillet with a lid, and cook for several minutes, or until the underside of the bread is golden.
- Remove the sandwich from the skillet with a spatula, and add another pat of butter to the skillet. Once melted, carefully flip the other side of the sandwich against the buttered pan. Cover and cook until the underside of the bread is nice and golden, and the cheese is all melted. If the bread is browning before the cheese has melted, dial down the heat as necessary.
