1 package (1/4 ounce) quick-rise yeast
1 tablespoon sugar
3/4 cup warm water (110° to 115°)
2-1/2 cups biscuit/baking mix

Steps:

  • Dissolve yeast and sugar in warm water. Stir in biscuit mix and turn out onto a lightly floured surface. Knead until smooth and elastic, about 5 minutes. , Divide and shape dough into 24 small balls. Place on greased baking sheet. Cover and let rise in a warm place until doubled, about 30 minutes. , Bake at 400° until golden brown, 10-15 minutes.

After a long attempt to recreate the infamous yeast rolls of O'Charleys, I was able to get close. This is the result of a few years of trying to find out how they do it. If you've never heard of the place, I guarantee you will still LOVE these rolls! (Note: I doubled this recipe and was able to make enough to feed two very hungry families over Thanksgiving... just so you know!)

Number Of Ingredients 10

1/2 cup warm water (120-130 deg.- the hottest possible water from your faucet should be great!)
2 1/4 teaspoons yeast (or one .25 oz pkg.)
1/2 cup oil
1/2 cup boiling water
1/3 cup sugar
1 beaten egg
3 cups flour
1 tablespoon baking powder
1 teaspoon salt
2 -3 tablespoons melted butter

Steps:

  • Mix together the warm water and yeast packet in measuring cup. Let it get good and foamy.
  • Mix together the oil, boiling water, and sugar. Stir until sugar dissolves. Add the foamy yeast water, and then the beaten egg.
  • Sift together the flour, baking powder and salt. Add about 1 cup of dry mix to the liquids at a time, and mix very, very well.
  • Grease pan.
  • Pinch dough into balls. Keep them small because they will still rise. Let rise 2 hours, or until just past doubled.
  • Preheat oven to 400.
  • Bake for 10-15 minutes, or until golden brown on top. Brush with melted butter fresh out of the oven, and serve warm.

3 1/2-4 1/2 cups flour
3 tablespoons sugar
5 teaspoons yeast
1 teaspoon salt
1 cup milk
1/2 cup warm water
1/4 cup butter

Steps:

  • Preheat oven to 425.
  • In a large bowl combine 1/2 of the flour with sugar, yeast and salt. Stir until mixed. In microwave heat milk until just under the boiling point. Pour into dry mixture. Melt butter, combine with water and add to flour mixture; stir until combined. Add remaining flour while stirring until dough leaves the sides of bowl and forms a ball. Turn dough out on a lightly floured board and knead in enough remaining flour until dough is smooth and elastic.
  • Wash out bowl and grease inside with oil. Placedough in greased bowl to rise. Cover with plastic wrap and a towel. Run 2 inches of very warm water in sink. Place bowl in water to speed rising. Allow to rise for 15 minutes.
  • Divide and shape dough as desired. Cover and let rise another 15 minutes. Bake at 425 degrees for 12-15 minutes or until golden brown.

2 tablespoons shortening
3 tablespoons white sugar
1 cup hot water
1 (.25 ounce) package active dry yeast
1 egg, beaten
1 teaspoon salt
2 ¼ cups all-purpose flour

Steps:

  • In a large bowl, mix the shortening, sugar, and hot water. Allow to cool until lukewarm, and mix in the yeast until dissolved. Mix in the egg, salt, and flour. Allow the dough to rise until doubled in size.
  • Grease 8 muffin cups. Divide the dough into the prepared muffin cups, and allow to rise again until doubled in size.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Bake for 10 minutes in the preheated oven, or until a knife inserted in the center of a muffin comes out clean.

Number Of Ingredients 9

1 1/2 sticks (12 tablespoons) unsalted butter
1/4 cup sugar
3/4 cup whole milk, at room temperature
Three 1/4-ounce packets active dry yeast
5 cups all-purpose flour, plus extra for dusting
2 teaspoons kosher salt
3 large eggs
Olive oil, for greasing
Flaky sea salt, for sprinkling

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt 1 stick of the butter in a small saucepan, then bring to a boil and cook until there are light brown specks in the butter, 3 to 4 minutes. Pour the browned butter into a small bowl and whisk in the sugar until dissolved. Whisk in the milk; the mixture should be lukewarm, around 110 degrees F. Next, whisk in the active dry yeast. Set aside until foamy, 5 minutes.
  • In a large bowl, mix together the flour and salt. Make a well in the center, add the eggs and whisk the eggs together with a fork. Pour the browned butter mixture into the well. Using a fork, gradually incorporate the flour into the liquids. Continue stirring just until a shaggy dough comes together. Transfer to a lightly floured work surface and knead with floured hands until the dough becomes very smooth, about 5 minutes.
  • Lightly grease a large bowl with olive oil. Add the dough, turning it once to coat. Cover with a clean kitchen towel and let rise until doubled in size, about 1 hour.
  • Punch down the dough. Melt the remaining 1/2 stick of butter and use half of that to grease the bottom and sides of a 9-by-13-inch baking dish. Divide the dough into thirds and divide each third into 10 balls. To create smooth tops: roll each ball between your palms, and then stretch the dough across the top of the ball, pinching the excess at the bottom.
  • Place the dough balls, seam-side down, in the prepared baking dish -- 5 to the short side, 6 to long side. Cover and let rise until slightly puffy, 30 minutes. Brush the tops with the remaining butter and sprinkle generously with flaky sea salt.
  • Bake until the tops are golden brown and the rolls sound hollow when lightly tapped, 15 to 17 minutes. Serve warm.

Stir in cheese and enough remaining flour to form a soft dough., Turn onto a lightly floured surface; knead until smooth and elastic, about 4-6 minutes. Cover and let rest for 10 minutes. Divide into 13 pieces. Shape each into a ball. Place in a greased 9-in. round baking pan. Cover and let rise in a warm place until doubled, about 30 minutes., Preheat oven to 375°. Bake rolls 11-14 minutes or until lightly browned. Combine honey, garlic salt and remaining butter; brush over rolls. Remove from pan to wire rack.

3 pkg active dry yeast
1/2 c warm water
5 c self rising flour (if you use all purpose flour, add 1 tsp. salt and 2 tsp baking powder)
1 tsp baking soda
1/2 c sugar
1 c butter flavored shortening
2 c lukewarm buttermilk

Steps:

  • 1. Dissolve yeast in warm water and set aside.
  • 2. Mix flour, sugar and soda. Cut in shortening. Add buttermilk and yeast. Mix; Turn dough out onto a floured work surface and knead lightly. Shape into desired shapes. Place on a baking sheet or muffin tin that has been sprayed with Pam. Bake at 400 degrees for 15 minutes. When almost brown, brush tops with melted butter.

6 cups flour
1/2 ounce fast rising yeast
1/2 cup sugar
1/2 teaspoon salt
1/2 cup oil
2 eggs
2 cups warm water
1 egg, beaten (for brushing)

Steps:

  • Proof the yeast with a bit of the warm water and sugar in a small bowl.
  • Meanwhile, mix the flour, remaining sugar and salt together in a large bowl.
  • When the yeast is foaming and bubbling after a few minutes, mix it into the dough along with the two eggs, warm water and oil.
  • Knead the dough (it will be sticky) until smooth and elastic.
  • In a KitchenAid mixer this only takes a couple minutes on speed 3.
  • Let rise in a warm place for 1 1/2 to 2 hours.
  • Punch down and then shape into rolls and let rise again.
  • I like to make cloverleaf rolls with this recipe, which involves placing three balls of dough, no bigger than a ping pong ball, in a greased muffin cup.
  • Once the balls have risen again, brush with the beaten egg for a nice brown finish and bake in a hot oven.
  • The time will depend on the size, but mine take about 15 minutes at 200 C.
