1-1/2 teaspoons plus 1 tablespoon butter, divided
2 cups semisweet chocolate chips
1 package (11-1/2 ounces) milk chocolate chips
1 can (14 ounces) sweetened condensed milk
1 teaspoon vanilla extract

Steps:

  • Line a 9-in. square pan with foil; grease foil with 1-1/2 teaspoons butter., In a large microwave-safe bowl, melt chocolate chips and remaining butter, stirring after 1 minute and every 30 seconds thereafter. Stir in milk and vanilla. Spread into prepared pan. Refrigerate until firm., Using foil, lift fudge out of pan. Remove foil; cut fudge into 1-in. squares. Store in an airtight container in the refrigerator.

1 cup chopped walnuts

Steps:

  • Line one 8x8 inch square pan with foil. Lightly butter the foil.
  • In a small saucepan melt the chocolate chips over low heat, stirring constantly. Remove the melted chocolate from the heat and stir in the frosting and the nuts stirring until smooth. Pour into the prepared pan and refrigerate until firm. Once firm cut in small squares.

20 oz dark chocolate chips ((60% Cacoa))
14 oz sweetened condensed milk
1/4 cup seedless raspberry jam
1 tsp vanilla extract
1/4 tsp salt
12 oz white chocolate chips ((divided))
1 1/2 tbsp coconut oil or shortening
1/2 tsp raspberry extract or liqueur
pink food coloring

Steps:

  • Spray a 8 or 9-inch square pan with baking spray and line with parchment paper.
  • In a large microwave safe bowl, combine dark chocolate chips and sweetened condensed milk
  • Heat on high heat in 30 second intervals, stirring in between, until nice and smooth.
  • Stir in raspberry jam, vanilla extract, and salt until combined.
  • Remove 1/3 cup white chocolate chips form the pacakge and set aside.
  • Add remaining white chocolate chips to the mixture and stir. The dark chocolate mixture will be still be warm at this point so the chips will melt partially and create a marbling effect - depending on how hot it is.
  • Spoon the fudge mixture into the prepared pan and refrigerate until firm.

1 package (10-1/2 ounces) pastel miniature marshmallows

1 package (11 ounces) butterscotch chips
1 cup peanut butter

Steps:

  • Line a 13-in. x 9-in. pan with foil; grease the foil with 1 tablespoon butter. Place marshmallows in prepared pan. , In a saucepan over low heat, melt the chips, peanut butter and remaining butter, stirring constantly. Pour over marshmallows. Tap pan lightly on work surface. Refrigerate. , Using foil, lift fudge out of pan. Cut into squares. Store in an airtight container in the refrigerator.

300ml whole milk
350g caster sugar
100g unsalted butter
1 tsp vanilla extract

Steps:

  • Line an 18cm square tin with greaseproof paper.
  • Put the milk, sugar and butter in a heavy-based saucepan. Heat slowly, stirring all the time, until the sugar has dissolved and the butter has melted.
  • Bring to the boil for 15-20 minutes, stirring all the time. When the mixture rises dramatically take it off the heat, stirring all the time until the mixture goes back down.
  • When the mixture reaches the soft-ball stage (115°C on a temperature probe) remove from the heat and stir in the vanilla extract. Leave to cool for 5 minutes.
  • Beat the mixture with a spoon for a few minutes until it starts to thicken and the gloss disappears. Pour the mixture immediately into the tin and leave to set at room temperature.
  • Once set, cut the fudge into small pieces and store in a sealed container.

1 pkg (12 oz) hershey's chips or, (10 oz) pkg nestle's chips***
1 can(s) frosting (don't use whipped kind -it doesn't set as well)
USE ANY FLAVOR CHIPS AND FROSTING

Steps:

  • 1. Put the bag/package of chips in a glass bowl -don't pile them all to the middle -kind of spread them out. Microwave on high for 90 seconds. Take out and stir well. DO NOT OVER-MICROWAVE CHIPS OR THEY WILL SCORCH. They will still hold their shape, but melt when you stir them.
  • 2. Then dump one whole can of frosting on top of the melted chips. Microwave on high for 90 seconds. Take out and stir well.
  • 3. Pour/spoon into a 8"X8" or 9"X9" square pan. Refrigerate until chilled and set. Then cut into small pieces (Believe it or not, it is real rich.).
  • 4. HINT 1: Sometimes I put a capful of Vanilla Extract and a pinch of salt in it after everything has melted. I thought that it may give more of a home-made taste. I had a few nuts and broke them up in it too. But you do not have to do that, as the lady who initially told me about the fudge didn't use vanilla, salt or nuts -and it is delicious just using the chips and frosting!
  • 5. Hint 2: I lined the pan with aluminum foil and put it up the sides of the pan -and gave it a little squirt with Pam. If you have the Reynolds Release Aluminum Foil, that would be real good too. You don't have to line the pan with foil -but it just makes it easier to get out of the pan, since you just lift it out. I did put a little bit in a plastic container that I sprayed with Pam -and didn't line it with foil and it came out just fine. The first piece was a little tricky, however.
  • 6. ***It really doesn't make much difference if you use Hershey's or Nestle's chips (Nestle's just has 2 ounces less). BUT DO NOT USE A CHEAPER BRAND.
  • 7. HERE ARE SOME COMBINATIONS THAT YOU CAN MAKE -EXPERIMENT WITH YOUR OWN COMBINATIONS: .Milk Chocolate Chips and Cream Cheese Frosting; .Milk Chocolate Chips and German Chocolate (coconut and pecan) Frosting; .Peanut Butter Chips and Choclate Frosting; .Mint Chocolate Chips and Chocolate Frosting; .Butterscotch Chips and Vanilla Frosting; .Any Flavor Chips and Vanilla Frosting.
