ZINGERMAN'S REUBEN SANDWICH

- Preheat oven to 350 degrees F.
- Sprinkle the corned beef with a little water, wrap it tightly in aluminum foil and steam it in the oven.
- Meanwhile, put the whole loaf of rye bread (unwrapped) into the oven. Bake the bread until the crust is very crunchy, about 15 minutes. Set the bread on the counter and let it cool for about 5 minutes.
- When the rye bread is cool enough to handle place it on a cutting board. Hold the bread knife at a 45-degree angle and cut 12 slices.
- Take the corned beef out of the oven and unwrap it. Spread each slice of bread with Russian dressing. Layer half of the slices with corned beef, sauerkraut and slices of Swiss cheese, then top the sandwiches with the remaining slices of bread (dressing-side down).
- Heat 2 large heavy skillets over medium heat. Brush the bread with butter. Put the sandwiches in the pans and weight them with a lid or heat proof bowl topped with something heavy. Cook until the first sides are crisp and golden about 7 minutes then flip the sandwiches. Cook until the second sides are also well toasted and the cheese is melted. Lift the sandwiches onto a cutting board. Cut each in half diagonally and serve.
- Combine the mayonnaise, chili sauce, sour cream, parsley, onion, pickle, lemon juice, horseradish and Worcestershire sauce in a bowl and mix well.

MINI CUBAN REUBENS WITH PULLED PORK AND ORANGE MAYO
One of the first grilled cheeses I ever made at The Foundry on Melrose, these bite-sized sammies from The Great Grilled Cheese Book are an homage to my dearest friend and chef Alfonso Ramirez. Just like when we get together, these bad boys are trouble.

- For the pork: Season the pork pieces with salt and place in a stove-top pressure cooker. Add the garlic, orange juice and orange peels. Place the lid on top put over high heat. Once it comes to pressure, cook on high pressure for 45 minutes.
- When finished cooking, cool and release pressure according to manufacturer's directions. Very carefully open the cooker and, using a slotted spoon, transfer the pork to a plate.
- Strain the remaining liquid into a high-sided saute pan over medium-high heat, reserving the softened garlic for later, and reduce until a glaze consistency, 5 to 10 minutes. This will be for your Orange Mayo.
- When the pork is cool enough to handle, using 2 forks or your fingers, shred it, transfer it to a heatproof bowl, and pour the reduced cooking liquid over the meat.
- For the kraut: Add the shredded cabbage, vinegar, orange juice, honey, and salt to a large saucepan and bring to a boil over medium-high heat. When the liquid comes to a boil, remove from the heat and let cool in the liquid to room temperature. Once cooled, remove the quick pickled cabbage from the liquid and put into a bowl, storing in the refrigerator until needed.
- For the orange mayo: Add the mayonnaise, mustard and softened garlic to a large bowl and whisk to combine making sure the garlic is thoroughly blended. Pour in about 1/2 cup of the reduced orange sauce and whisk until thoroughly smooth. Taste and adjust seasoning as needed.
- Line up all of the bread slices on a work surface. Spread each slice with 1 tablespoon of the orange mayo. Top half of the bread slices with 1/8 of the grated cheese, one-fourth of the pork, a small mound of the kraut, 4 pickle chips, and a second layer of grated cheese. Close the sandwiches with the remaining mayo-bread slices.
- Line a large platter with paper towels. Preheat a double burner cast iron griddle pan over medium heat and add 2 tablespoons butter. Once the butter has melted, turn down the heat to low, add 2 sandwiches, and cook, turning once, for 2 to 3 minutes on each side, until browned and crisp on both sides and the cheese is melted. Transfer to the prepared platter to blot the excess grease. Repeat with the remaining butter and sandwiches.
- Cut the sandwiches in quarters, plate, and serve.

OVEN-GRILLED REUBEN SANDWICHES
For a great homemade Reuben sandwich, make a quick "sauerkraut" by simmering bagged coleslaw with vinegar and sugar, and replace overly sweet Russian dressing with a simple blend of mayonnaise and Dijon mustard. Oven-grilling allows you to cook the sandwiches all at once (and without turning them) rather than cooking them in batches on the stovetop.

- Adjust oven rack to middle position, place baking sheet on rack, and heat oven to 450 degrees.
- Bring vinegar and sugar to boil in large skillet over medium heat. Stir to dissolve sugar; add coleslaw, cover, and cook, tossing occasionally, until coleslaw is tender, 8 to 10 minutes. Remove lid and simmer until liquid has evaporated, 1 to 2 minutes. Season with salt and pepper.
- Combine mayonnaise and mustard in small bowl.
- Spread 1 tablespoon mayonnaise mixture on each bread slice.
- Layer 1 slice cheese, 1/2 cup coleslaw, 1/4 pound corned beef, and 1 slice cheese on top of bread slice.
- Top with second slice of bread and compress sandwich with your hands.
- Repeat to make three more sandwiches.
- Brush tops and bottoms of sandwiches with melted butter.
- Transfer sandwiches to preheated baking sheet. Bake until toasted, about 10 minutes. Serve.

- Spread 1 teaspoon mustard on each slice of bread. Spread 1 tablespoon dressing on mustard, then top with one slice of cheese.
- Divide corned beef between two slices of bread. Divide sauerkraut and place on meat; grind over pepper. Top with other slice of bread.
- Method 1: Pan Grilled:.
- Spread outside bread with 1 tablespoon butter. Melt the remaining 1 tablespoon butter in a large nonstick frying pan over medium heat.
- Add sandwiches, unbuttered side down, and fry until golden, about 5 minutes each side. Turn and brown the other side.
- Method 2: Oven Grilled.
- Preheat oven to 400°F.
- Spread one tablespoon butter on top of bread and then carefully flip sandwich over onto a sheet pan. Butter top piece of bread and bake for about 10 minutes, or until browned and cheese is melted.
