Steps:
- Mix in all the meatball ingredients except butter and oil and mix well. Roll them into meatballs.
- Heat olive oil and 2 Tbsp butter in a skillet and place meatballs without crowding them and fry till golden brown on all sides. Plate them out and set aside.
- In the same pan, melt remaining 4 Tbsp butter. Gradually stir in flour to create a roux. Cook until flour starts to brown.
- Slowly stir in beef broth, mixing all those bits stuck to the pan into the sauce.
- Add in cream, Worcestershire sauce, mustard, salt and pepper. Cook for 4-5 minutes, until sauce starts to thicken up.
- Add in meatballs. Simmer for 10 minutes. Taste and adjust the seasonings to your liking.
- Serve it over bed of mashed potatoes. Garnish with chopped parsley and lingonberry jam.
TWISTED BEEF KOFTAS (MIDDLE-EASTERN MEATBALLS)
Traditionally made with lamb and mint, this is my own altered version of the scrumptious Indian dish. These meatballs are pretty spicy, so season to your known preferences. I like to use lots of pepper and cayenne and minimal salt. The prep time can be cut by preparing the ingredients in a food processor. All measurements are approximate, feel free to use what you have on hand! There are many ways to serve them. My favorite method is in a fresh, warm pita with a cucumber-yogurt sauce or with terriyaki and a handful of onions. My boyfriend likes to eat his with spicy mustard. Or for a flavor crossover use them as meatballs for spaghetti! Try a cool, light salad as a side, and don't forget dessert!

- Preheat oven to 350.
- Mix all ingredients in a medium mixing bowl until well-blended (using your hands works best).
- Form golf-ball sized meatballs from the mixture and place, without touching, on an ungreased baking sheet.
- Bake until slightly browned and cooked through (approximately 20-25 minutes).

- Preheat oven to 400 degrees.
- Spray baking sheet with PAM.
- Put celery, bell pepper, egg, oil, and milk (or liquid) in blender (or food processor) and process until vegetables are finely chopped.
- In a large bowl mix together meats, oats, seasonings, Parmesan cheese, and blender concoction then gently knead until uniform in texture.
- Take a little of the mix and cook it in a skillet on the stove so you can taste it to see if it needs more seasoning. Happy with that? Then proceed to the next step --.
- Roll all the mix into balls and line them up on the baking sheet (they will shrink so it's okay if they touch). To make the balls I like to use an ice-cream or cookie scoop (depending on the size I want), it makes the job easier. Also, use a baking pan with sides, such as a jelly-roll pan or cake pan, because these are juicy little balls and I don't want you set the oven on fire with meatball juice!
- Bake 30 minutes (or until no longer pink inside).
- Remove from oven and cover with foil for about 15 minutes - don't drain off the juices because the little balls will suck it all up. Alternatively, you can transfer meatballs right out of the oven into a pan of simmering sauce of your choice.
- The meat mixture can also be formed into patties and fried in a pan on the stove like you would a burger (use cooking spray or oil in the pan).
- Serve with some kind of sauce - bar-b-que, pasta sauce, creamy mushroom sauce, or just plain old gravy.
- NOTE: these freeze very well so I frequently make a double batch and freeze some in quart size freezer bags.

EXOTIC MEATBALLS
This is for those of you that love Middle Eastern flavors. This is basically my stuffed peppers but without being stuffed. Delicious!

Steps:
- Bring to a slow simmer the tomato sauce, 1/2 teaspoon of salt, oil, green bell pepper and the water.
- Cook the rice for 15 minutes, rinse well and drain water.
- Mix the remaining ingredients together and the cooled rice to form the meatballs. Place each ball into the sauce.
- Cook for about 1-2 hours on a low flame.
- Serve hot. Enjoy!
