PINEAPPLE BROWN SUGAR-GLAZED BONELESS HAM
Boneless smoked ham makes a holiday centerpiece that's as easy to serve as it is to prepare. Dressed in pineapple rings and studded with cloves and maraschino cherries, it is a nostalgic dish that is classic and timeless. Finished with brown sugar glaze it comes out of the oven glossy and golden.

- Let the ham sit at room temperature for about 30 minutes. Preheat the oven to 350 degrees F.
- Place the ham on a cutting board. Using a sharp paring knife, score the top and sides in a diagonal crosshatch pattern about 1/4 inch deep. Push the cloves into the ham if using, placing them at the intersections of the cuts. Put the ham, scored side-up, on a rack set in a roasting pan.
- Drain the pineapple rings, reserving the juice. Arrange the sliced pineapple all over the ham, securing with toothpicks. Add a maraschino cherry to the center of each pineapple slice and secure with a toothpick.
- Pour 1/4 inch water into the bottom of the pan and tent the ham loosely with foil. Roast until an instant-read thermometer inserted in the thickest part of the ham registers 130 degrees F, about 1 hour.
- Meanwhile, combine the honey, brown sugar and reserved pineapple juice in a large saucepan set over medium heat. Bring to a simmer and cook, stirring occasionally, until thickened, syrupy and reduced to about 3 cups, 25 to 30 minutes. Set aside.
- Increase the oven temperature to 425 degrees F.
- Uncover the ham and carefully brush a third of the glaze all over. If the water in the roasting pan has evaporated, add more. Bake the ham for 15 minutes more. Brush with another third of the glaze and bake for 15 minutes more. Brush the remaining glaze over the ham and cook until the glaze is shiny and the skin is dark golden brown and crispy, about 15 minutes more. Let rest for 15 minutes before slicing.
HAM LOAF RECIPE
An old fashion ham loaf with pineapple brown sugar glaze is a classic Amish dish and a great way to use up leftover ham.

- Preheat oven to 350 degrees F.
- Place ham in food processor and grind for approximately one minute (or use a meat grinder). Put the ground meat in a large mixing bowl.
- Lightly beat the eggs in a small bowl. Then in the large bowl combine eggs, bread crumbs, milk, pepper and dry seasoning blend with the ground ham and mix well.
- Shape the ham loaf mixture into a roughly 8 x 4" oval and place into a shallow baking dish or loaf pan.
- Bake the large loaf uncovered for 25 minutes.
- Combine glaze ingredients and spoon glaze over loaf.
- Place loaf back into oven and bake for an additional 35 minutes, basting occasionally with the glaze.
- Remove loaf from the oven and allow to cool a bit before putting on serving platter and slicing.

EVELYN'S HAM-PINEAPPLE LOAF
My Grandma Robinson's best friend gave her this recipe. I was skeptical as a kid, but found I could not get enough of it. It was actually a family favorite. It is great as a leftover-even on a sandwich. The photo shows it granished with pineapple rings, so pretty!

- 1. ***I call ahead to my meat market and have them grind the ham. You may use half ground pork if you like in place of half of the fresh ham.***
- 2. Preheat oven to 350
- 3. Crumble the ham in a bowl. Lightly beat the eggs and milk in a med. bowl, add the ketchup, syrup and brown sugar. mix well.
- 4. Pour the egg mixture over the ham, add drained pineapple and salt, and mix with hands. Careful not to over-mix.
- 5. Place in a loaf pan or make a free form loaf on a baking sheet. Spoon off grease twice during baking.
- 6. Add the glaze during the last 15 minutes. Bake about an hour or until nicely browned.
PINEAPPLE HAM LOAF
I was looking for something for dinner and this caught my eye and so we had to try it. This is tender and very yummy. Make and excellent dish for a church brunch or pot luck. I got this recipe from The Best of Country Cooking 2002 Taste of Home.

- In a bowl, combine eggs, milk, Worcestershire sauce, bread crumbs, 1 teaspoon mustard, salt and pepper. Add ham and pork mix well.
- Shape into eight oval patties, set aside.
- Drain pineapple, reserving 1/2 cup of juice. Place a pineapple slice between each ham patty. (Refrigerate remaining pineapple and juice for another use.) Carefully place in an ungreased 9 in x 5 in x 3 in loaf pan.
- Pat patties around pineapple to form a loaf. Combine brown sugar, remaining mustard and reserved juice; pour a small amount over loaf. Bake, uncovered, at 350 degrees for 1 1/4 hours or until lightly browned and meat thermometer reads 160 degrees, basting occasionally with remaining juice mixture.

- Add ham and pork.
- Mix well.
- Shape into loaf and place in a 13x9x2 baking pan.

- Preheat the oven to 350 degrees F (175 degrees C). Melt butter in the bottom of an 8x4 inch loaf pan. Sprinkle brown sugar over the butter. Slice pineapple rings in half, and arrange them over the sugar.
- In a large bowl, mix together the ham, onion, bread crumbs, eggs, and 1/4 cup of juice from the pineapple. Blend in the mustard powder and cayenne pepper. Pack half of the mixture into the pan on top of the pineapple slices. Sprinkle the Swiss cheese over it, then pack the remaining ham mixture on top. Cover with aluminum foil.
- Bake for 45 to 50 minutes in the preheated oven. Let cool in the pan for 5 minutes, then turn upside down onto a serving plate. Slice as you would a meatloaf, and serve.

This is a delicious ham loaf that my family has love for about 100 years! Sometimes my mother would double or triple the recipe if company was coming or if she wanted to have leftovers. (We had a big family).

- 1. Preheat oven to 350 degrees.
- 2. Set 1/2 can of crushed pineapple aside. Put the rest in a bowl (including juice). Stir in the bread crumbs, Leave sit.
- 3. Beat the eggs and soy sauce and spices together well in large bowl. Add the green pepper, meats and mix together very well. Add the pineapple and bread mixture. Combine together well.
- 4. Put into a roast pan, form into a loaf. Bake at 350 degrees for 2 hours.
- 5. While the loaf is baking: Make the topping for the loaf by mixing all ingredients together and set aside until the last 35 minutes of cooking. Spread it over the loaf and return to oven for remaining time.
- 6. Remove from oven and let sit for 10 minutes before slicing to serve.

- Mix all ingredients together except for the pineapple.
- Roll into a loaf and divide into nine patties.
- In a shallow, oven proof dish, form a long roll placing the pineapple in between each patty starting and finishing with meat.
- Bake for 30 minutes in a slow oven 325 degrees.
- Take from oven and pour some of the mixture of brown sugar, pineapple syrup, lemon juice, and mustard over the loaf and bake again for one hour, basting every 20 minutes with the glaze.
