GREEK PIZZA WITH SPINACH, FETA AND OLIVES



Greek Pizza with Spinach, Feta and Olives image

Sun dried tomatoes, spinach, and Kalamata olives boldly flavor this easy pizza.

½ cup mayonnaise
4 cloves garlic, minced
1 cup crumbled feta cheese, divided
1 (12 inch) pre-baked Italian pizza crust
½ cup oil-packed sun-dried tomatoes, coarsely chopped
1 tablespoon oil from the sun-dried tomatoes
¼ cup pitted kalamata olives, coarsely chopped
1 teaspoon dried oregano
2 cups baby spinach leaves
½ small red onion, halved and thinly sliced

Steps:

  • Adjust oven rack to lowest position, and heat oven to 450 degrees. Mix mayonnaise, garlic and 1/2 cup feta in a small bowl. Place pizza crust on a cookie sheet; spread mayonnaise mixture over pizza, then top with tomatoes, olives and oregano. Bake until heated through and crisp, about 10 minutes.
  • Toss spinach and onion with the 1 Tb. sun-dried tomato oil. Top hot pizza with spinach mixture and remaining 1/2 cup feta cheese. Return to oven and bake until cheese melts, about 2 minutes longer. Cut into 6 slices and serve.

2 cups fresh baby spinach
3 tablespoons olive oil
3 teaspoons Italian seasoning
1 prebaked 12-inch thin pizza crust
2 plum tomatoes, thinly sliced
1 cup (4 ounces) crumbled feta cheese
1/4 cup shredded part-skim mozzarella cheese
1/4 cup chopped pitted Greek olives
2 tablespoons chopped sweet onion

Steps:

  • In a small bowl, toss the spinach, oil and Italian seasoning. Place crust on an ungreased 12-in. pizza pan. Arrange spinach mixture over crust to within 1/2 in. of edge. Place tomatoes on top; sprinkle with the cheeses, olives and onion., Bake at 450° for 10-15 minutes or until cheese is melted and edges are lightly browned.

I received a wonderful care package from Evelyn/Athens in Greece. The whole package smelled wonderful from the Greek oregano that Evelyn had included in the package. What better recipe to really appreciate fantastic oregano than pizza!

1/4 cup olive oil
2 cups chopped onions
3 garlic cloves, minced
3 (10 ounce) boxes frozen spinach, thawed and squeezed dry
2 teaspoons dried oregano
1/2 cup fresh basil, chopped
1/4 teaspoon fresh ground black pepper
15 ounces ricotta cheese
10 sheets frozen phyllo dough, thawed
1/4 cup butter, melted
5 fresh tomatoes, sliced
1 cup grated mozzarella cheese
1/2 cup grated halloumi cheese

Steps:

  • Preheat the oven to 400°F.
  • Heat the oil and saute the onion and garlic for about 5 minutes, until the onions are translucent.
  • Add the spinach and keep sautéing until all the moisture has evaporated (you don't want this to be bone dry, just all the excess moisture should be cooked off).
  • Add the oregano, basil and black pepper.
  • Mix it into the spinach mixture and then remove from the heat.
  • Mix in the ricotta cheese.
  • Set aside for now.
  • Find a jelly roll pan with a small rim and grease it.
  • Lay one sheet of phyllo dough down on it, the sheet can be a little bigger than the pan, that's okay.
  • Brush the sheet of phyllo with some of the melted butter.
  • Top that with a second sheet of phyllo dough, and brush that with some melted butter.
  • Keep going until all ten sheets have been layered and butter.
  • Roll the overlapping ends of the dough onto itself to form the pizza"crust".
  • Using a spatula, spread the spinach-ricotta mixture over the phyllo in an even layer.
  • Arrange the tomatoes over this layer.
  • Mix the mozzarella with the haloumi.
  • If you can't get haloumi cheese, that's okay, don't kill yourself over it, just use 1 1/2 cups of mozzarella instead.
  • Sprinkle the cheese over the tomatoes.
  • Bake in the oven for 25-30 minutes, or until golden brown.

After coming in late from a trip, I picked up a Greek Pizza at a deli for a quick meal. We all loved it. Here's my attempt at duplicating the taste at home, which actually turned out better than the original!

2 (14 inch) pizza crusts, unbaked (I use Pizza Dough and Sauce)
1 (6 ounce) can tomato paste
1/2 cup red wine or 1/2 cup water
1 teaspoon italian seasoning
1 teaspoon salt
1 tablespoon sugar
1 tablespoon olive oil
1 lb mozzarella cheese, shredded
1/4 cup small fresh spinach leaves
1/2 red onions or 1/2 sweet vidalia onion, sliced very thin
1/2 red bell pepper, sliced thin
4 -6 ounces sliced black olives
4 ounces feta cheese, crumbled
black pepper

Steps:

  • Pat the crust dough out on two greased pizza pans.
  • Combine all the sauce ingredients, stirring until smooth. Divide between crusts.
  • Top each pizza with half the mozzarella cheese, followed by other ingredients in order given.
  • Bake in a preheated oven at 400°F for 20 minutes or until cheese is browned and bubbly.

  • In bread machine pan, place the first five ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). , When cycle is completed, turn dough onto a lightly floured surface. Roll into a 16x11-in. rectangle. Transfer to a 15x10x1-in. baking pan coated with cooking spray. Build up edges slightly. Prick dough thoroughly with a fork. Brush with oil; sprinkle with Parmesan cheese, Italian seasoning and garlic salt. Top with spinach, tomatoes and mozzarella cheese. , Bake at 375° for 17-22 minutes or until crust is golden brown and cheese is melted. Broil 4-6 in. from the heat for 2-3 minutes or until cheese is golden brown.

1 tablespoon olive oil
½ cup diced onion
2 cloves garlic, minced
½ (10 ounce) package frozen chopped spinach, thawed and squeezed dry
¼ cup chopped fresh basil
2 ¼ teaspoons lemon juice
1 ½ teaspoons dried oregano
ground black pepper to taste
1 (14 ounce) package refrigerated pizza crust
1 tablespoon olive oil
1 cup shredded mozzarella cheese
1 large tomato, thinly sliced
⅓ cup seasoned bread crumbs
1 cup shredded mozzarella cheese
¾ cup crumbled feta cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). If using a pizza stone, place in oven to preheat.
  • Heat 1 tablespoon olive oil in a large skillet; cook and stir onion and garlic until tender, about 5 minutes. Add spinach and continue to cook and stir until all liquid has evaporated, 5 to 7 minutes. Remove from heat and season with basil, lemon juice, oregano, and pepper. Allow mixture to cool slightly.
  • Unroll pizza dough on preheated pizza stone or a large baking sheet and brush with remaining 1 tablespoon olive oil. Spread spinach mixture over dough, leaving a small border at the edge of the pizza crust. Top with 1 cup mozzarella cheese.
  • Press tomato slices into seasoned bread crumbs until coated; arrange tomatoes over pizza. Spread remaining 1 cup mozzarella cheese and feta cheese over tomatoes.
  • Bake in preheated oven until pizza crust is golden brown and cheese is melted, about 15 minutes.
