GREEK PIZZA WITH SPINACH, FETA AND OLIVES
Sun dried tomatoes, spinach, and Kalamata olives boldly flavor this easy pizza.

Steps:
- Adjust oven rack to lowest position, and heat oven to 450 degrees. Mix mayonnaise, garlic and 1/2 cup feta in a small bowl. Place pizza crust on a cookie sheet; spread mayonnaise mixture over pizza, then top with tomatoes, olives and oregano. Bake until heated through and crisp, about 10 minutes.
- Toss spinach and onion with the 1 Tb. sun-dried tomato oil. Top hot pizza with spinach mixture and remaining 1/2 cup feta cheese. Return to oven and bake until cheese melts, about 2 minutes longer. Cut into 6 slices and serve.

- In a small bowl, toss the spinach, oil and Italian seasoning. Place crust on an ungreased 12-in. pizza pan. Arrange spinach mixture over crust to within 1/2 in. of edge. Place tomatoes on top; sprinkle with the cheeses, olives and onion., Bake at 450° for 10-15 minutes or until cheese is melted and edges are lightly browned.

EVELYN-INSPIRED GREEK TOMATO-SPINACH PIZZA
I received a wonderful care package from Evelyn/Athens in Greece. The whole package smelled wonderful from the Greek oregano that Evelyn had included in the package. What better recipe to really appreciate fantastic oregano than pizza!

Steps:
- Preheat the oven to 400°F.
- Heat the oil and saute the onion and garlic for about 5 minutes, until the onions are translucent.
- Add the spinach and keep sautéing until all the moisture has evaporated (you don't want this to be bone dry, just all the excess moisture should be cooked off).
- Add the oregano, basil and black pepper.
- Mix it into the spinach mixture and then remove from the heat.
- Mix in the ricotta cheese.
- Set aside for now.
- Find a jelly roll pan with a small rim and grease it.
- Lay one sheet of phyllo dough down on it, the sheet can be a little bigger than the pan, that's okay.
- Brush the sheet of phyllo with some of the melted butter.
- Top that with a second sheet of phyllo dough, and brush that with some melted butter.
- Keep going until all ten sheets have been layered and butter.
- Roll the overlapping ends of the dough onto itself to form the pizza"crust".
- Using a spatula, spread the spinach-ricotta mixture over the phyllo in an even layer.
- Arrange the tomatoes over this layer.
- Mix the mozzarella with the haloumi.
- If you can't get haloumi cheese, that's okay, don't kill yourself over it, just use 1 1/2 cups of mozzarella instead.
- Sprinkle the cheese over the tomatoes.
- Bake in the oven for 25-30 minutes, or until golden brown.

A simple and easy way to do Greek style pizza. I just added a Greek taste of oregano and some sugar to the tomato sauce You can also add some spinach leaves if you like. Enjoy.

- Combine tomato sauce and sugar. Add crushed oregano.

After coming in late from a trip, I picked up a Greek Pizza at a deli for a quick meal. We all loved it. Here's my attempt at duplicating the taste at home, which actually turned out better than the original!

- Pat the crust dough out on two greased pizza pans.
- Combine all the sauce ingredients, stirring until smooth. Divide between crusts.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). If using a pizza stone, place in oven to preheat.
- Heat 1 tablespoon olive oil in a large skillet; cook and stir onion and garlic until tender, about 5 minutes. Add spinach and continue to cook and stir until all liquid has evaporated, 5 to 7 minutes. Remove from heat and season with basil, lemon juice, oregano, and pepper. Allow mixture to cool slightly.
- Unroll pizza dough on preheated pizza stone or a large baking sheet and brush with remaining 1 tablespoon olive oil. Spread spinach mixture over dough, leaving a small border at the edge of the pizza crust. Top with 1 cup mozzarella cheese.
