- In a large saucepan, heat oil over medium-high heat. Add onion and celery; cook and stir until tender. Add garlic; cook 1 minute longer., Stir in broth, pumpkin, beans, turkey, salt, basil and pepper. Heat through, stirring occasionally. If desired, serve with cheese.

- In a large saucepan, saute onion and celery in oil until tender.
- Add the garlic, cook 1 minute longer.
- Stir in the turkey, broth, pumpkin, beans, salt, basil, and pepper, and bring to a boil.
- Reduce heat, simmer uncovered for 10-15 minutes or until heated through, stirring occasionally.
- Serve with cheese.
HEARTY TURKEY SOUP
A delicious way to use up some of that leftover turkey. You may even have leftover crudites to use for the veggies. If you are able to get turkey stock, you can sub that for the chicken broth. One 14 oz. can of diced tomatoes (or petite diced) can be subbed for the fresh tomato.

- Heat oil in a large saucepan or stockpot; add mushrooms and saute about 5 minutes or until tender.
- Stir in chicken broth, barley, onion, sage and pepper.
- Bring mixture to a boil, reduce heat and simmer, covered, for 20 minutes or until barley is almost tender.
- Stir in carrot, celery, zucchini and tomatoes; cover and simmer for 10 minutes.
- Add turkey and continue to cook, covered, about 15 minutes or until barley and vegetables are tender.

HEARTY TUSCAN WHITE BEAN SOUP
This is a really easy Tuscan style white bean and spinach soup. I prefer it meatless, but mini meatballs can be added.

Steps:
- Heat the oil in a 4 quart soup pot over medium heat.
- Add the onion, garlic, carrots, celery and thyme and cook until the vegetables are tender, about 10 minutes.
- Add the chicken broth, tomatoes and bay leaf.
- Drain the beans and roughly mash 1/2 a can of beans. Add the beans and mashed beans to the pot.
- Squeeze the water from the thawed spinach and add to the pot.
- Season with salt and pepper and simmer for at least 10 minutes and up to 30 minutes.
- Add the macaroni and cook until tender according to package directions. (About 10 minutes.).
- Serve sprinkled with grated parmesan and/or pecorino romano.

- Heat olive oil in large sauce pan, with deep sides, to medium high heat. When hot, add turkey cutlets. Cook for 3-4 minutes on each side. Remove from pan and let rest for 5 minutes on cutting board.
- Slice turkey into thin strips, and cut in half. Add back to skillet, along with skillet sauce packet, fire roasted tomatoes, and pasta. Stir to combine, then add box of chicken broth and black pepper.
- Remove from heat, and stir in spinach, vinegar, and cheese. Let sit for 5 minutes so spinach wilts. Taste, and add salt as needed. This will depend on the amount of sodium in your broth.
