CREAMED CHIPPED BEEF
This is a meal that my mother used to make a lot for us kids when we were growing up. You can find the dried beef in the grocery store with the pre-packaged lunch meats. It goes a long way on a cold day!

Add the butter-flour mixture, reduce the heat and simmer for 10 to 15 minutes, stirring occasionally. Add the salt and pepper and strain.
- For each serving, heat 1 cup of sauce to a simmer, add 2 ounces chipped beef and bring to a boil. Pour the mixture over two to three slices sourdough toast and garnish with parsley and paprika.
CREAMED CHIPPED BEEF ON TOAST
My mom used to make this recipe. It can also be made with 3/4 pound browned, drained hamburger. We called it SOS: Same Ole Stuff. Great comfort food! Either recipe is easy to make and tastes great with a cold beer. Serve over toast.

- Boost brain function. Beef is a good source of the amino acid taurine that helps protect against Alzheimer’s disease and other degenerative conditions such as Parkinson’s.
- Protect against cancer. The selenium content in beef helps prevent cellular damage, including damage from cancer-causing agents.
- Better sleep. Getting enough taurine can help you sleep better, which is especially important for those who are susceptible to insomnia.
- Legumes and supplements. Many people take beef as a diet supplement or to boost the levels of vitamin B12 in their body already.
- Treat edema. Beef is the richest food source of the amino acids cysteine and methionine, which produce compounds that have anti-inflammatory properties and can assist in reducing swelling associated with certain forms of heart disease, kidney disease, and stroke.
- Stress relief. Beef is a good source of amino acids such as tyrosine and tryptophan, which help the body cope with stress and can also relieve painful symptoms such as headaches.
- Weight loss. While this isn’t specifically linked to beef alone, it helps that beef is a lean protein source and has little saturated fat or cholesterol.
- Heart health. Beef and other red meat is a good source of “good” saturated fats that can help to lower cholesterol and triglyceride levels in the blood.
- Kidney and stroke. Beef is also a good source of potassium, which, along with sodium and magnesium, helps to regulate blood pressure.
- Diabetes. Red meat is a good source of protein, vitamins B6 and B12, zinc, calcium, and iron. These nutrients may aid the healthy digestion needed for diabetes treatment.
