2 large heads escarole, trimmed and cut into 1 1/2-inch pieces
2 tablespoons unsalted butter
1 medium shallot, minced
3 garlic cloves, minced
1 tablespoon plus 1 teaspoon all-purpose flour
1 cup whole milk
Coarse salt and ground pepper
2 slices white bread, crusts removed, torn into large pieces

Steps:

  • Preheat oven to 400 degrees. Place a colander in a large bowl. Bring a large pot of salted water to a boil. In 2 batches, cook escarole until tender, 7 minutes, then drain in a colander, pressing with a spatula to squeeze out as much liquid as possible.
  • In a small saucepan, melt 1 tablespoon butter over medium. Cook shallot and garlic until tender, 4 minutes. Add flour and cook, stirring, 1 minute. Whisking constantly, add milk and cook, whisking, until mixture comes to a boil and thickens, 2 minutes. Remove from heat, season with salt and pepper, and stir in escarole. Pour mixture into a 1-quart baking dish.
  • In a food processor, pulse bread until coarse crumbs form; transfer to a small bowl. Melt 1 tablespoon butter and pour over breadcrumbs, stirring to combine. Season with salt and pepper. Top escarole with breadcrumbs and bake until golden brown and bubbling, 15 to 20 minutes.

ESCAROLE WITH LEMON BREAD CRUMBS

3 tablespoons extra-virgin olive oil
3 tablespoons butter
1 cup bread crumbs
2 finely chopped green onions
2 lemons, zested, plus 1/2 lemon
2 escarole, thinly sliced
Salt and freshly ground black pepper
A few grates nutmeg
1/2 cup chicken stock
A drizzle honey

Steps:

  • Heat 1 tablespoon olive oil and the butter in a skillet over medium heat, when butter melts add bread crumbs, onions and lemon zest. Toast the bread crumbs until golden, transfer to a bowl and return pan to heat. Add remaining 2 tablespoons olive oil to the pan and then add the escarole. Turn escarole in oil to wilt, then season with salt, pepper and nutmeg. Add the stock and honey and simmer over low heat 2 to 3 minutes to mellow greens a bit. Squeeze the juice of 1/2 lemon over greens, top with the bread crumb mixture and serve.

WILTED ESCAROLE WITH GARLIC, LEMON AND OIL



Wilted Escarole with Garlic, Lemon and Oil image

1/4 cup extra-virgin olive oil, 4 turns of the pan
2 cloves garlic, crushed
2 teaspoons anchovy paste, eyeball it
6 anchovy fillets, chopped
Couple pinches red pepper flakes
2 heads escarole, trimmed, rinsed, and dried
1 lemon, juiced

Steps:

  • Heat the extra-virgin olive oil in a deep skillet over medium-low heat with garlic and anchovy. Cook together 3 to 4 minutes to infuse garlic into oil. Remove the garlic cloves and stir oil to mix in the melted anchovies and add the red pepper flakes. Raise heat to medium-high. When oil ripples or begins to waft smoke, add greens and stir fry them 2 to 3 minutes. Squeeze lemon juice over the greens, toss, and serve.

Escarole is a bitter green and we love it sauteed with fresh garlic. A quick blanching keeps it bright green and tames some of it's bitterness. I found this version in "The North End Italian Cookbook". Fried bread crumbs and a few red pepper flakes makes this dish fantastic.

2 lbs escarole
2 tablespoons olive oil
2 tablespoons vegetable oil
3 -4 cloves garlic, chopped
1/4 cup breadcrumbs
red pepper flakes
salt and pepper

Steps:

  • Bring a large pot of water to a boil.
  • Coarsely chop the escarole.
  • Add to water, cook 2 minutes, drain, rinse with cold water and drain again.
  • Heat oil in a heavy skillet, add garlic and red pepper flakes and cook over medium heat until garlic is browned.
  • Add bread crumbs and cook until browned.
  • Turn heat to high, add escarole, season with salt and pepper, stir and toss until heated through.
  • Place in a serving bowl and pour any oil left in the pan over the escarole.

Braised Escarole with Garlic and Lemon image

1 head escarole, about 1 pound
1/4 cup extra-virgin olive oil
1 tablespoon unsalted butter
4 garlic cloves, sliced
1/2 teaspoon red pepper flakes
2 bay leaves
1/2 lemon, cut in thin slices
2 cups water or chicken broth
Pinch sugar
Kosher salt and freshly ground black pepper

Steps:

  • Break off the leaves of the escarole and wash them individually, taking care to remove any soil at the base of the stems. Shake the leaves dry, stack them up, and slice the escarole crosswise into ribbons about 1 1/2-inches wide.
  • Place a large deep skillet over medium heat and add the olive oil and butter. Toss in the garlic, red pepper flakes, bay leaves, and lemon slices; cook and stir for a couple of minutes, tossing to combine. Nestle the escarole into the pan and saute until it begins to wilt and shrink down, about 2 minutes. Sprinkle the escarole with a pinch of sugar and season with salt and pepper. Pour in the water and cover the pan. Simmer for 20 minutes until the escarole is tender.

GARLIC AND OIL SAUTEED ESCAROLE

1/2 cup flavored olive oil, recipe follows
4 garlic cloves, peeled and minced
1 recipe escarole, recipe follows
Salt and pepper, to taste
1 cup extra virgin olive oil
4 garlic cloves, peeled and crushed
2 large bunches escarole

Steps:

  • Heat oil in a small, heavy saucepan over medium-low heat. Add garlic and barely simmer until garlic is just beginning to brown. Remove and discard garlic. Pour oil into a clean container and reserve.
  • Remove any tough outer or damaged leaves from the escarole. Cut off the tough root end and tear leaves into large pieces. Wash well in a sink filled with cold water. Shake off excess water. In a deep saucepan with cold water to cover by about 2 inches, boil escarole for about 5 minutes over high heat. Remove from heat and drain in a colander. Immediately place escarole in cold water to cover, stopping the cooking process. When escarole is cool, drain well in a colander and pat dry.
  • TO MAKE GARLIC AND OIL SAUTE()EED ESCAROLE: Heat oil in a large, heavy sauteG pan over medium heat. Add garlic. Stir in the escarole and sauteG for 3 minutes or until hot. Season with salt and pepper and serve.

1 large escarole (or 2 small heads)
4 slices prosciutto, thin slices, chopped
1 -2 garlic clove, chopped
2 tablespoons olive oil
2 long italian hot peppers, seeded & julienned
1/2 cup breadcrumbs
1/4 cup pecorino romano cheese, grated
1 cup chicken broth
salt and pepper, to taste (at the very end)

Steps:

  • Clean and rinse escarole twice; chop in large pieces.
  • Boil down for 5 or 6 minutes so it's tender and wilted.
  • Place olive oil in a saute pan and heat.
  • Add chopped garlic and prosciutto and render for 2 or 3 minutes. Do not burn garlic.
  • Add seeded peppers and cook another minute or so.
  • Add the escarole and all the other ingredients in the pan.
  • Gradually add the bread crumbs and grated cheese, tossing gently until blended.
  • Taste for final salt and pepper seasoning.
  • Place in a casserole; sprinkle a little of the bread crumbs and place under a broiler for 3-4 minutes. Serve hot.

UTICA GREENS



Utica Greens image

This dish was popularized by Joe Morelle in the late 1980s at the Chesterfield Restaurant in Utica, N.Y., where it is on the menu as greens Morelle. More widely known as Utica greens, it has become commonplace, in modified versions, in Italian restaurants throughout central New York, and even migrated to New York City, Las Vegas and Florida. This version of the dish is fairly spicy. Use fewer cherry peppers if you prefer it less hot. You will have leftover oreganato, the topping of bread crumbs and cheese; use it for another greens dish or add it to baked chicken or shrimp. Typically served in restaurants as an appetizer, Utica greens makes a great main course at home with some crusty bread and a glass of red wine.

1/2 cup extra-virgin olive oil
1 cup bread crumbs
1/2 cup Parmigiano-Reggiano, grated
1 head escarole, about 1 1/4 pound, bottom removed, leaves separated and washed thoroughly to remove grit
2 tablespoons extra-virgin olive oil
4 slices prosciutto (about 2 ounces), sliced thin and cut into roughly 1-inch squares
4 to 6 hot cherry peppers (pickled will do if you can't find fresh), tops and seeds removed, broken by hand or chopped into 4 or 5 chunks
2 cloves garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup Parmigiano-Reggiano, grated, plus 2 or more tablespoons for garnish

Steps:

  • Bring a large pot of water to boil over high heat. Prepare an ice bath in a large bowl and set aside.
  • Meanwhile, in a medium bowl, prepare the oreganato: Mix the oil, bread crumbs and cheese until well blended. It should have the texture of moist beach sand. Set aside.
  • When the water is boiling, blanch the greens until they are nearly limp but still a little firm, about 1 to 2 minutes. Plunge them into the ice bath to stop the cooking. Remove and drain them well in a colander or salad spinner, allowing them to remain moist but not dripping wet. Squeeze just a little of the moisture from them, then chop them into 2-inch pieces. Set aside.
  • Heat the broiler. Coat a large pan with the olive oil. Over medium heat, sauté the prosciutto, cherry peppers and garlic until the prosciutto is browned and slightly crisp, about 5 minutes. (Lower heat slightly if garlic begins to brown too quickly.) Add the chopped greens to the pan, season with salt and pepper and stir to mix well.
  • Add 1/2 cup Parmigiano-Reggiano and 1/2 cup of the oreganato. Cook 3 to 4 minutes, stirring frequently to blend, scraping the bottom of the pan to keep the oreganato from burning.
  • Sprinkle another 1/4 cup oreganato atop the greens. (Save leftover oreganato for use in another greens dish, or add it to baked chicken or shrimp.) Place the pan under the broiler and broil until the top browns, about 2 minutes. Remove from the broiler and sprinkle a bit more cheese on the dish. Serve immediately.
