Erin's Irish Creme Liqueur image

This is so easy, and since it's creamier than the store-bought versions of Irish creme liqueur, we prefer it. Drink a pinch as liqueur or use to make Irish coffees. One may add more Irish whisky for stronger flavor. Store in refrigerator for up to three weeks.

¼ cup milk chocolate chips
2 teaspoons butter
3 ½ fluid ounces Irish whiskey, or more to taste
¼ teaspoon instant coffee granules
1 teaspoon hot water
1 (14 ounce) can sweetened condensed milk
1 ½ cups heavy whipping cream

Steps:

  • Put chocolate chips and butter in a glass bowl; heat in microwave on high until chips are softened, about 30 seconds. Stir chocolate mixture until smooth, cooking in microwave another 15 seconds to assure chocolate is soft enough, if needed. Add Irish whiskey and stir until smooth.
  • Dissolve coffee granules in hot water in a small pitcher. Pour the chocolate mixture, sweetened condensed milk, and cream into the pitcher and stir until smooth.
  • Refrigerate mixture until completely chilled, at least 20 minutes.

Elin's Irish Canadian Cream Liqueur image

A homemade Canadianized version of the Irish cream liqueur. Everyone's favourite coffee sidekick, especially on St. Patrick's Day!

1 can (300ml) condensed sweet milk (I used Eagle brand)
1 1/2 cups 10% (half and half or coffee) cream - you can also use whipping cream if you want a heavier cream flavour
1 cup Irish Whisky (I used Bushmills)
1/4 cup Wolfhead Coffee Whisky1 tsp cocoa powder
1 tsp vanilla

Steps:

  • Whisk together the cocoa powder and 1/2 cup of the cream until smooth and cocoa lumps are gone
  • Add the rest of the cream and the condensed milk, whisk
  • Add the Irish Whisky, Wolfhead Coffee Whisky and vanilla
  • Whisk until mixed, a few minutes
  • Strain into a container and chill for about 1 hour
  • Keep in the fridge (this will last about 2 months). Shake well before serving.

A smooth, creamy liqueur, like Bailey's, that melts in your mouth. It makes great gifts during the holidays! I have kept it refrigerated for up to 3 months, and it was still delicious!

4 large eggs
2 tablespoons freeze-dried instant coffee granules or 2 tablespoons instant coffee
2 tablespoons chocolate syrup
2 teaspoons vanilla extract
1/2 cup boiling water
1 1/2 cups good brand Bourbon or 1 1/2 cups rye whiskey
1 cup half-and-half cream
1 (14 ounce) can sweetened condensed milk

Steps:

  • Dissolve coffee ganules in boiling water.
  • Using mixer, beat eggs in large mixing bowl for about 3 minutes.
  • Add coffee and remaining ingredients to the egg mixture.
  • Mix well.
  • Strain if desired.
  • Pour into air-tight glass container.
  • Store in refrigerator from 1 month or more.
