Ensalada De Manzanas Con Manchego image

From Tapas: A Taste of Spain in America by José Andrés of Jaleo restaurant in Washington, DC as posted on foldedspace.com with a few changes on my part. I substituted manchego for murcia al vino (also known as Drunken Goat because it is aged in red wine). Any specialty store will carry manchego as does Trader Joe's. If you can find murcia cheese, that can be used instead of course.

1 granny smith apple, peeled, cored, and cut into 1/2-inch cubes
6 ounces manchego cheese, cut into 1/2-inch cubes
1/2 tablespoon chopped fresh chives (NOT dried!)
1/2 cup chopped walnuts, toasted
1/2 cup spanish extra virgin olive oil (good quality!!)
3 tablespoons apple cider vinegar
salt
cracked black pepper
romaine lettuce (about 3 cups)
4 lemon wedges

Steps:

  • Toast the walnuts in a cast iron skillet until lightly toasted and fragrant. Set aside to cool.
  • Whisk the oil into the apple cider vinegar. Add salt and cracked black pepper to taste. Set aside.
  • Combine the apples, cheese, chives, and walnuts in a salad bowl. Toss gently.
  • Divide and arrange the romaine lettuce onto 4 salad plates. Place the salad ingredients onto each plate. Drizzle each serving with the simple vinaigrette.
  • Garnish each serving with a lemon wedge.
  • ¡Ole!

A sweet salad traditionally served in Mexico for Christmas or New Year's Eve dinner as one of many desserts. Kids love it. Any apple works fine, but I prefer crunchy apples that aren't too sweet or tart such as Gala or Golden Delicious.

5 apples, diced
1 (16 ounce) can pineapple chunks, drained 1 cup syrup reserved
1 cup raisins
1 cup pecans, coarsely chopped
1 (16 ounce) container sour cream

Steps:

  • Combine all the ingredients except reserved syrup in a large bowl. Add syrup to taste if the salad looks too dry. Refrigerate for 30 minutes and serve.

This lovely salad is as pretty as it is delicious. You can use all red, all golden or variously colored beets. Time does not include the roasting of the beets.

1 1/2 lbs beets, roasted and peeled
1 lemon
2 tablespoons red onions, finely diced
2 tablespoons parsley, chopped
2 tablespoons cilantro, chopped
1 tablespoon mint, chopped
1/2 teaspoon ground coriander
salt and pepper
6 tablespoons extra virgin olive oil
3 -4 cups salad greens (such as spinach, frisee and or or red leaf lettuce)
1/4 cup oil-cured black olive

Steps:

  • Cut the beets into quarters or sixths.
  • Finely grate the lemon zest and squeeze 2 tablespoons of lemon juice. Whisk together the lemon zest and juice, onion, herbs, coriander, 1/4 teaspoon salt, pepper to taste and the oil in a small bowl.
  • Taste the dressing on a beet and correct the seasonings if needed.
  • Toss the beets with enough dressing to coat lightly.
  • Toss the greens with the remaining dressing and arrange them on salad plates.
  • Add the beets and olives and serve.

1/2 lb white mushrooms or 1/2 lb brown button mushroom, sliced thinly
2 tablespoons butter
1 tablespoon fresh thyme or 1 tablespoon chives
salt and pepper, to taste
8 slices crusted bread
4 slices raclette cheese (or favorite cheese) or 4 slices smoked gouda cheese (or favorite cheese)
2 tablespoons Dijon mustard (optional)
butter (to grill the sandwiches)
olive oil (to grill the sandwiches)

Steps:

  • Heat butter in a pan.
  • Sautéed mushrooms with thyme until golden.
  • Salt and pepper.
  • Garnish 4 slices of bread with a slice of cheese, 1/4 of the mixture on each slice, and a little bit of mustard, if wanted.
  • Cover with the remaining slices of bread.
  • Heat a little bit of butter and oil in a pan.
  • Grill sandwiches on each side until they are well golden and the cheese has melted.

This recipe is adapted from an appetizer served at Tabard Inn Restaurant in Washington DC. The best way to store dates is to put them in bags and keep them in the freezer. Just take them out when you need them and let them thaw. They will last about one year before they begin to sugar.

12 large medjool dates
4 ounces goat cheese
1/2 cup balsamic vinegar
1/4 cup sugar
1 bunch radicchio

Steps:

  • Place the vinegar and sugar in a small sauce pan over medium heat.
  • Dissolve sugar and reduce until the mixture coats the back of a spoon.
  • Make a slit in each date and fill with goat cheese.
  • Drizzle balsamic reduction onto a small plate in an attractive design.
  • Place a few small radicchio leaves on top and place 2 or 3 dates on top of the leaves.
  • Drizzle a little more reduction on top of the dates.

4 ounces sweet chocolate
2 tablespoons coffee, strong and hot
4 eggs, separated
1/4 cup extra finely granulated sugar
1 teaspoon jamaican rum
1 cup heavy whipping cream
1 teaspoon sugar

Steps:

  • Grate the chocolate and melt over hot water, stirring constantly.
  • Add hot coffee and blend well.
  • Beat egg yolks and fine granulated sugar together with a whisk or electric beater for approximately 3 minutes or until they are thick and pale yellow in color.
  • Stir in the chocolate mixture and rum.
  • Whip the cream with the 1 tsp of sugar then beat the egg whites stiff but not dry and gently fold into the chocolate mixture alternatively with the whipped cream.
  • Pour into chilled cups, champagne glasses, or a souffle dish.
  • Chill for approximately 1 hour, or until set.
