- In a food processor, pulse together butter, cheese, egg, mustard, salt, and red-pepper flakes until smooth. Add flour and pulse until combined. Transfer dough to a work surface and form into a 2-inch-wide log. Wrap in plastic and refrigerate until firm, 4 hours (or up to 1 day).
- Preheat oven to 350 degrees, with racks in upper and lower thirds. Slice dough into 1/4-inch rounds and arrange, 1 inch apart, on 2 parchment-lined baking sheets. Bake until edges are golden, 15 to 20 minutes, rotating sheets halfway through. Let cool completely on racks before serving.

- Put the Cheddar, flour, butter, salt, seasoned salt and cayenne in a food processor and pulse until the mixture resembles sand. Add the ice water and pulse until the dough comes together. Form the dough into a ball, wrap in plastic and refrigerate for 1 hour.
- Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat.
- Roll out the dough to 1/4-inch thickness and cut into squares with a pizza cutter. Use a wooden skewer to poke a small hole in the center of each square. Transfer to the prepared baking sheet and bake until golden brown, 15 to 17 minutes. Allow to cool before packing up.

- Preheat oven to 350 degrees, with racks in middle and lower third. In a food processor, pulse chickpeas until coarsely chopped. Add coriander, salt, pepper, flour, and butter, and pulse to combine. With machine running, gradually add 3 tablespoons cold water until dough forms a ball. Add Parmesan and pulse to combine.
- Divide dough and form into two 1-inch-thick disks. On a lightly floured surface, roll out each disk to an 1/8-inch thickness. Brush with egg white and sprinkle with sesame seeds. With a knife, cut into 1-by-3-inch rectangles and place, 1/2 inch apart, on 2 parchment-lined baking sheets. Bake until golden brown and crisp, 25 to 30 minutes, rotating sheets halfway through. Let crackers cool on sheets.

Steps:
- Preheat oven to 350.
- Mix all dry ingredients, when stir in sesame oil. Gradually add water, adjusting as needed. Dough is ready when it can be formed into a ball (but don't make it too wet, as rolling out will be really hard).
- You can dust a surface and roll out with a pin, or press with a tortilla press (which is what I do). I like to press numerous small circles, so they cook more evenly. The edges will brown before the center gets done.
- Put dough on a non-stick cookie sheet and prick with a fork. You can cut them apart with a pizza cutter now, or lightly score them--however you like. I leave them in my little circles. Bake 15-20 minutes or until crisp in the center!
- Servings will depend on how big you make your crackers!

- In a large bowl or food processor add your chickpea flour along with your salt, pepper, garlic powder and baking powder and mix/blend until full combined.
- Add in half of your water and oil and mix until your chickpea flour absorbs all of it, being sure to break down larger clumps before adding in the rest of your oil and water and work it in until your mix develops a crumb texture.
- Sprinkle in your finely shredded cheese and work it into your chickpea mixture until fully incorporated. (A food processor does a great job for this part).
- Placed your processed crumb-textured mixture onto a clean work surface and work the mixture by squeezing it together until a dough forms. Your dough should be soft and workable but not sticky or tacky. If it is excessively crumbly or is having trouble forming together, add more water a tbsp at a time.
