1 1/2 lbs green beans, fresh
1 lemon, juice of
3 tablespoons vegetable oil
1 teaspoon salt
2 cloves garlic, minced
2 tomatoes, large,cut into wedges

Steps:

  • Wash and trim the green beans.
  • Cut them diagonally into 1 1/2 inch pieces.
  • Cook the bean in boiling water to cover for about 10-15 minutes, until just tender.
  • Drain the beans and set them aside to cool.
  • Combine the lemon juice, oil, salt and garlic.
  • In a bowl combine the beans and tomato wedges.
  • Toss them with the dressing.

A salad made from beans,radish and cheese .Makes a light but satisfying lunch.Oregano not part of the original recipe,but good.May be served over romaine lettuce if desired.

5 cups cooked black beans, thoroughly drained
10 red radishes
3/4 lb queso panela cheese, crumbled
1/2 cup cilantro, minced
2/3 cup extra virgin olive oil
1/3 cup red wine vinegar
1 teaspoon sea salt (or to taste)
2 teaspoons cilantro, minced very finely or
1/2 teaspoon Mexican oregano, crumbled (optional)

Steps:

  • Thoroughly drain beans.Slice radish thinly.Mince cilantro.Mix all salad ingredients gently.
  • Whisk together all dressing ingredients.
  • toss dressing with salad gently.
  • Serve chilled or room temperature over lettuce,if desired.

3 tablespoons olive oil
1 1/2 tablespoons vinegar
1 garlic clove, minced
1/8 teaspoon chili powder
1/2 teaspoon oregano
2 cups kidney beans or black beans, cooked, drained
1 green pepper, chopped
1/2 cup red onion, chopped
1 tablespoon , chopped pimiento
12 pitted black olives, sliced
1/2 head lettuce

Steps:

  • In a small jar, combine the oil, vinegar, garlic, chili powder, and oregano. Fit with a tight lid and shake vigorously to blend. In a large bowl, combine remaining ingredients, except lettuce. Pour oil mixture over bean mixture, cover, and refrigerate at least 2 hours. To serve, arrange lettuce leaves on a plate and spoon salad over the leaves.
