1 cup (2 sticks) butter, softened, divided
1 cup firmly packed brown sugar, divided
1 egg yolk
1-1/2 cups flour
1/4 tsp. salt
1/2 cup light corn syrup
1/4 cup whipping cream
1 tsp. vanilla
2 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate, chopped
1 cup chopped pecans, toasted

Steps:

  • Preheat oven to 350°F. Line 13x9-inch baking pan with foil, with ends of foil extending over sides of pan. Lightly grease foil; set aside. Beat 3/4 cup each of the butter and brown sugar in large bowl with electric mixer on medium speed until light and fluffy. Blend in egg yolk. Add flour and salt; mix well. Place in prepared pan; press firmly onto bottom to form crust. Bake 16 to 18 min. or until golden brown.
  • Meanwhile, place remaining 1/4 cup each butter and brown sugar, the corn syrup, whipping cream and vanilla in large microwaveable bowl. Microwave on HIGH 4 min., stirring every 2 min.; set aside. Cool crust slightly on wire rack. Spread butter mixture evenly over crust.
  • Bake an additional 18 to 20 min. or until set. Sprinkle with chopped chocolate. Continue baking 1 to 2 min. or until chocolate is melted; spread chocolate evenly over dessert. Sprinkle with pecans. Cool completely. Refrigerate 30 min. or until chocolate is firm. Remove dessert from pan, using foil handles. Cut into 36 bars or diamond shapes. Store in tightly covered container at room temperature.

1 cup butter (only real butter can be used in this recipe)
1 cup sugar
1/4 cup water
1/2 teaspoon salt
3 semi-sweet chocolate baking squares or 1/2 cup chocolate chips
1 cup coarsely broken pecans

Steps:

  • In heavy saucepan, combine butter, sugar, water, and salt.
  • Cook to hard-crack stage (300°F) stirring with a WOODEN SPOON constantly and watching carefully. Do not try a plastic spoon, it will melt into your delicious candy!
  • Immediately pour into ungreased 13"x9" pan.
  • Cool until hard.
  • Melt chocolate over hot, but not boiling water.
  • Spread over toffee; sprinkle with nuts, pressing them into chocolate.
  • Let stand 2-3 hours or chill 30 minutes.
  • Break into bite-size pieces.

7 inch pastry case ready cooked
Quart pint milk
60 g margarine
40 g brown sugar
25 g plain flour
75 g golden syrup
(if no brown sugar use more Golden Syrup)

Steps:

  • 7 inch pastry case ready cooked. Either your own or bought. I tend to buy fresh pastry and line my pie dish and bake blind until cooked. My the ready cooked ones are very sweet & tasty.
  • Melt the margarine and sugar, then stir in the flour. Whisk in the hot milk and stir as it thickens and reaches boiling point.
  • Keep stirring all the time while you are waiting for the mixture to boil, then cook for 2-3 minutes stirring all the time.
  • Remove from the heat, and add the syrup, then whisk the mixture.
  • Spread the filling into the flan case and serve hot or place in the fridge to cool & serve with whipped cream or custard, or anything you want, I like it on its own. But I do put grated chocolate on for my grand children.

1 box cook and serve chocolate pudding mix 5 ounce size. prepared as directed on box.
1 pkg 10" graham cracker crust
1/4 c heath english toffee bits, plus 1 tablespoon for garnish
1 oz hershey bar
8 oz cool whip lite topping, thawed.

Steps:

  • 1. Sprinkle 1/4 cup of toffee bits on the crust. Pour warm pudding into crust. Place in refrigerator for at least an hour or overnight.
  • 2. Top the pie with the cool whip. Sprinkle with I tablespoon health bits and shave the Hershey bar on top.

This is the BEST recipe for English Toffee, hands down! This is such an easy and QUICK treat to make for the Christmas holidays. You don't even need a candy thermometer!

1 & 1/2 cups salted butter ((3 sticks))
1/4 cup + 2 tablespoons water
1 & 1/2 cups granulated sugar
3/4 teaspoon salt
2 & 1/2 cups semisweet chocolate chips
1 & 1/2 - 2 cups sliced almonds*

Steps:

  • Start by coating an 11x17 inch baking pan with nonstick spray. Or use your fingers to coat it with a bit of butter. You can use parchment paper if you want but I actually found that it wasn't necessary.
  • Add the 1 and 1/2 cups butter to a HEAVY 3 quart saucepan. (You need good quality pots for candy-making.)
  • Melt the butter over medium heat until almost melted, then add the water, sugar, and salt. Be sure to add the sugar to the CENTER of the melted butter (see photo). Don't let the sugar touch the edges. If you have even just a few granules of sugar on the edge of the pot, it could crystalize the whole pot of candy, meaning that your mixture will not get hot enough to reach the hard crack stage, which is what you need for toffee.**
  • Turn the heat up to medium high and get yourself a long sturdy wooden spoon. You're going to have to stir for the next 10 minutes or so, so gear up. If you skipped the greasing the pan step before, you lose 10 preparation points. Because now you have to stir. Get someone else to prep the pan. (Or do it VERY quickly in between stirs!)
  • Stir for about 10 minutes. If you have a candy thermometer, attach it to the edge of your pot, but even if you have one, I would still get out a jar of peanut butter and set it next to the stove with the lid off to see what color it is. When the candy reaches the color of peanut butter, it is ready to be poured into the pan. (There is NO peanut butter in this recipe!! Don't add it to the pot! You just want the color!)
  • I tested this recipe with and without a candy thermometer, and my toffee looked like peanut butter at about 285-290 degrees F. Hard crack stage is 300 degrees, and you can certainly go that high if you want. See, there is wiggle room, even in candy recipes! I would rely more on the color of the toffee though. The peanut butter trick really does work great.
  • Remove the pot from the stove and QUICKLY pour it into the prepared pan, scraping the edges. Use a spatula to spread it out as soon as possible. You don't need to go to the edges of the pan, although you can.
  • Immediately sprinkle the top of the toffee with 2 cups of chocolate chips. Use your judgement to see if you want to add another 1/2 cup. I'm kind of a chocolate addict so...
  • Wait 4-5 minutes for the chocoalte chips to melt. If you were too slow and your chocolate isn't melting, then stick it in the oven at 350 for 2-3 minutes, or however long it takes to get the chocolate chips just barely melted. Then use an offset spatula to spread the chocolate to the edges of the toffee.
  • Sprinkle right away with sliced almonds. You can use your hands to gently press the almonds in; whichever ones are not touching melty chocolate are just going to fall right off.
  • Let the pan cool for 1-2 hours. You can speed this up by sticking it in the fridge, but if you do this will MUST wait until the toffee returns to room temperature before breaking it up, otherwise it will be too brittle and just break into sad toffee crumbs.
  • Once the chocolate is completely set, break up the pan. You can lift up the edge of the whole sheet of toffee and break it up, or use a butter knife to help you make cuts (although once you get started, it really does work better to break up with your hands. Snap off pieces to your heart's content. It's so satisfying.)
  • Store in a ziplock or tupperware on the counter. Try not to eat it all at once.

350g digestive biscuits
140g butter , melted
50g desiccated coconut
200g milk chocolate , chopped
200g dark chocolate , chopped
250ml milk
300ml double cream
6 egg yolks
3 tbsp cornflour
100g soft light brown sugar
50g hazelnuts , chopped
300g golden caster sugar
100g butter , diced
200ml double cream
1 tbsp instant coffee
350ml double cream
25g golden caster sugar
1 tsp vanilla extract

Steps:

  • In a food processor, blend the biscuits with the butter and coconut to make the base for the pie. Press it into a deep 21cm fluted tart tin, going all the way up the sides and making sure the corners are not too thick.
  • In a large saucepan, melt both chocolates with the milk and cream over a very low heat, stirring slowly all the time. In a separate bowl, beat the egg yolks with the cornflour and sugar.
  • When the chocolate has melted, add the egg mixture and stir together until it thickens, about 10-12 mins. When the texture is like thick custard, pour it into the tin and even out the top using a spatula. Sprinkle with the hazelnuts and place in the fridge for at least 2 hrs.
  • Meanwhile, make the toffee sauce. Dissolve the sugar and 2 tbsp water in a large pan over a low heat. Bring to the boil and cook until golden and caramelised, about 2 mins. Whisk in the butter in small batches, then remove from the heat and stir through the cream. Set aside to cool.
  • To make the coffee cream, mix the coffee in 1 tsp boiling water to make a paste. In a large bowl, whip the cream halfway, then add the coffee, sugar and vanilla, and whip until soft peaks form. Cover and chill until ready to serve.
  • To serve, cut the pie into wedges. Reheat the toffee sauce in a small saucepan or the microwave and serve with the coffee cream.

  • Line a 9x13-inch pan with parchment paper. Sprinkle half of the toasted nuts evenly on top of the parchment paper.
  • MAKE THE TOFFEE:Spray a heavy, light-colored saucepan with nonstick spray. This is a crucial step because it will help to prevent boiling syrup from flowing over the pan. Combine butter, sugar, water, corn syrup and salt in the pan and heat over medium temperature. It's important to use a light-colored pan so you can more easily observe the color of the toffee as it's cooking. Clip a candy thermometer to the side of the pan so it's touching the ingredients but not the bottom of the pan.
  • Cook to the "hard crack" stage (295 to 300 degrees F), whisking constantly and watching closely. This should take 15 to 20 minutes. Don't rush the process. Low and slow is good. Syrup that does not reach temperature will be chewy instead of crunchy. And if you try to cook it more quickly, you'll end up with the butter separating from the sugar.
