ENGLISH MUFFIN LOAVES
This is an easy yeast bread--no kneading required! The texture is like English muffins, great for toasting.

Steps:
- In a small saucepan, heat the milk and water until very warm.
- Combine 3 cups flour, yeast, sugar, salt, and soda in a large bowl. Add the warm milk and water, and beat well. Stir in enough of the remaining flour to make a stiff batter. Spoon into two 9 x 5 inch loaf pans that have been greased and dusted with the cornmeal. Cover, and let rise in a warm place for 45 minutes.
- Bake at 400 degrees F (205 degrees C) for 25 minutes. Remove from pans immediately, and let cool.

Steps:
- In a large mixing bowl, combine 2 cups flour, yeast, sugar, salt and baking soda.
- Add warm milk and water; beat on low speed for 30 seconds, scraping bowl occasionally.
- Beat on high for 3 minutes.
- Stir in remaining flour (batter will be stiff.) DO NOT KNEAD.
- Spray with cooking spray two 8 1/2 x 4 1/2 x 2 1/2" loaf pans.
- Sprinkle pans with cornmeal.
- Spoon batter into the pans and sprinkle cornmeal on top.
- Cover and let rise in a warm place until doubled, about 45 minutes.
- Bake at 375 for 35 minutes or until golden brown.
- Remove from pans immediately and cool on wire racks.
- Slice and toast.
- NOTES : If desired wrap 1 loaf in foil and freeze.

- In a small bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
- In a large bowl, combine the yeast mixture with warm milk, 3 cups flour, salt and baking soda; stir well to combine. Stir in the remaining flour, 1 cup at a time until a stiff batter is formed. Spoon batter into two lightly greased 9x5 inch loaf pans that have each been sprinkled with 1 tablespoon cornmeal. Cover and let rise in a warm place until doubled in size, about 45 minutes.
- Preheat an oven to 400 degrees F (200 degrees C).
- Bake in preheated oven for about 25 to 30 minutes or until the top is golden brown and the bottom of the loaf sounds hollow when tapped. Remove from pans immediately and place on wire racks to cool.
