This is a recipe from one of my reader fans from the past. Thelma was always there to help promote my books, and supply me with a new recipe every once in awhile.

Number Of Ingredients 5

Ingredients

1 1/2 c all purpose flour
1 c brown sugar,lightly packed
1 1/2 c rolled oats,uncooked
3/4 c butter, room temperature not too soft though
3/4 c jam-raspberry or plum or cooked dates

Steps:

1. Mix together flour,sugar and rolled oats. Work in butter until mixture is crumbly. Press 1/2 of the mixture evenly in an 8-inch square pan. Spread with jam to within 1/4-inch of edges. Press remaining mixture over jam, covering it completely. Bake in 325^ for 40-45 minutes, until golden brown. Cool and cut in squares.

Every occasion I went to as a child, I can remember seeing this cake. I hated it back then. I guess I have acquired a taste for it as the years have gone by. I love it now. This is not overly sweet. This is very similar to date squares.

Ingredients

1 1/2 cups all-purpose flour
1 1/2 cups rolled oats
1 cup brown sugar, packed
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup butter, softened
2 cups dates, chopped, pitted
1/2 cup sugar
1 teaspoon lemon juice
3/4 cup boiling water

Steps:

Filling: In saucepan, cook dates, sugar, lemon juice and water over medium heat, stirring often, until the dates are soft, about 15 minutes.
Let cool.
In a bowl, combine flour, rolled oats, sugar, baking soda and salt; blend in butter until mixture is crumbly.
Pat half onto bottom of 9 inch square pan.
Spread filling evenly over the top.
Sprinkle with the remaining flour mixture, patting lightly.
Bake in a 350F oven for 30 to 35 minutes or until nicely browned.
Let cool; cut into squares.

Preheat the oven to 180°C (350°F/Gas 4). Lightly grease a 16 × 26 cm (6¼ × 10½ inch) baking tin and line the base with baking paper, extending the paper over the long sides for easy removal later.
Combine the oats, flour, sugar, butter, salt, coconut and a pinch of salt in a large bowl. Press half the oats mixture into the prepared tin. Spread the jam on top. Sprinkle over the remaining oats mixture and press lightly with your fingertips to flatten.
Bake on the lowest shelf in the oven for 15 minutes, then transfer to the middle shelf to bake for a further 15 minutes, or until the top is golden brown. Allow to cool in the tin, then slice into pieces and serve.
