Endive and Walnut Appetizers image

These leafy green specialties serve as a sophisticated appetizer when topped with California walnuts. Opt for a creamy white bean spread that's high in flavor and low in saturated fat - a great way to start a special evening.

Number Of Ingredients 8

1 (15-ounce) can cannellini beans, rinsed, drained
2 cloves garlic
2 tablespoons extra virgin olive oil
2 tablespoons lemon juice, fresh
1/4 cups basil leaves, fresh, torn
30 Belgian endive leaves
1/4 cup California walnuts, toasted, chopped
1/4 cup red bell pepper, chopped

Steps:

  • Puree beans, garlic, olive oil and lemon juice in a blender or food processor until smooth.
  • Add basil and pulse on and off until basil is finely chopped. (May be made a couple days ahead and refrigerated until ready to serve.)
  • Spoon equal amounts into endive leaves and top with walnuts and bell pepper.

3 heads endive - washed, dried, and separated into individual leaves
⅓ cup crumbled blue cheese
⅓ cup sweetened dried cranberries (such as Craisins®)
⅓ cup glazed walnuts
2 tablespoons balsamic vinegar, or to taste

Steps:

  • Arrange endive leaves on a serving tray.
  • Stir blue cheese, cranberries, and walnuts together in a bowl. Place a small amount of the blue cheese mixture on each leaf. Drizzle with balsamic vinegar.

1 raw, unblemished endive
Blue-cheese dressing (see recipe)
1 tablespoon coarsely chopped walnuts, preferably black walnuts

Steps:

  • Arrange the endive, sliced in half lengthwise, on an individual serving dish. Spoon about two tablespoons of blue-cheese dressing over the cut halves. Sprinkle the tops with one tablespoon of chopped walnuts.

Steps:

  • Carefully peel the leaves from the head of endive, and place them open-side up on a serving platter. Place one leaf of parsley at the base of each endive leaf and 1 tablespoon of Gorgonzola artfully on top of the parsley.

1 clove curshed garlic (fresh)
1/2 teaspoon salt
1 tablespoon mayonnaise
2 tablespoons olive oil
2 tablespoons lemon juice
1/4 cup chopped fresh parsley
1/2 cup finely chopped celery
1 cup roasted walnut
1/4 cup parmesan cheese, cut into small cubes
1 -2 head endive (the amount it up to your discretion)

Steps:

  • To roast walnuts, broil at 350 for 10 minutes until brown and roasted. Let cool! Break into small bits.
  • Cut parmesan cheese into small cubes.
  • Combine salt and garlic first, curshing garlic very well and mixing with salt.
  • Add remaining ingredients.
  • Spoon small amount onto separate washed leaves of endive. Top with walnuts.
  • Arrange on platter and you can make extras walnuts to put in the center if desired.
