Slow-Cooker Enchiladas Two Ways image

This easy hack lets you make two dishes in your slow cooker at once. Why choose between green and red enchiladas when you can have both?

One 8-ounce package cream cheese, at room temperature
2 teaspoons ground cumin
16 corn tortillas
One 10-ounce can green enchilada sauce
One 15-ounce can black beans, drained and rinsed
One 15-ounce can whole corn kernels, drained
8 ounces pepper jack cheese, grated
1 cup salsa verde, plus more for serving
Chopped fresh cilantro, for serving
Sliced avocado, for serving
One 10-ounce can red enchilada sauce
2 cups cooked chicken breast, cut into 1-inch cubes
1 cup red salsa, plus more for serving
8 ounces sharp Cheddar, grated
Hot sauce, for serving

Steps:

  • Fold a large piece of foil in half and slide it vertically down the center of a 6-quart slow cooker to create a wall that divides the cooker insert into two compartments; make sure it fits snugly.
  • Mix the cream cheese and cumin in a medium bowl until smooth and combined.
  • For the green enchiladas: Place 2 tortillas slightly overlapping on the bottom of one compartment of the slow cooker. Spread 2 tablespoons of the cream cheese mixture over the tortillas, then pour over a quarter of the green enchilada sauce. Sprinkle with a third of the black beans, a third of the corn and 1/4 cup of the pepper jack cheese. Repeat 2 more times and top with 2 tortillas. Pour over the remaining green enchilada sauce and sprinkle with the remaining pepper jack cheese.
  • For the red enchiladas: Place 2 tortillas slightly overlapping on the bottom of the empty side of the slow cooker. Spread 2 tablespoons of the cream cheese mixture over the tortillas, then pour over a quarter of the red enchilada sauce. Sprinkle with a third of the chicken and 1/4 cup of the Cheddar. Repeat 2 more times and top with the last 2 tortillas. Pour over the remaining red enchilada sauce and sprinkle with the remaining Cheddar.
  • Cover the slow cooker and cook on low until the cheese is melted and bubbling, the filling is heated through and the sides of the tortillas are crisp, 4 to 6 hours.
  • Garnish individual servings of green enchiladas with more salsa verde, cilantro and avocado, if desired. Garnish individual servings of red enchiladas with more red salsa and hot sauce, if desired.

You can make the sauce ahead of time for these chicken enchiladas, served with coriander, avocado and soured cream.

1 large onion, finely chopped
1 tbsp olive oil
1 garlic clove, crushed
1 tsp smoked paprika
1 tsp dried oregano
1 tsp chilli powder
½ tsp ground cumin
500g/1lb 2oz passata
1 tbsp brown sugar
1 tbsp cider vinegar
salt and freshly ground black pepper
2 onions, sliced
I red pepper, deseeded and sliced
1 yellow pepper, deseeded and sliced
3 tbsp olive oil
2 garlic cloves, finely chopped
1 red chilli, seeds removed, finely chopped
4 skinless, boneless chicken breasts, cut into thin strips
400g/14oz red kidney beans, drained and rinsed
8 flour tortillas
100g/3½oz cheddar, grated
4 spring onions, trimmed and sliced
2 tbsp finely chopped coriander
1 large avocado, peeled and sliced
150ml/5fl oz soured cream

Steps:

  • Start by making the enchilada sauce. Put the onion into a medium saucepan with the olive oil and cook over a low-medium heat for 7-8 minutes, or until soft and just starting to brown at the edges.
  • Add the crushed garlic and cook for a further minute. Add the smoked paprika, dried oregano, chilli powder and ground cumin, mix well and cook for a further 30 seconds.
  • Add the passata, brown sugar and vinegar to the pan, season well with salt and freshly ground black pepper and cook over a low-medium heat for 20 minutes until thickened slightly. Remove from the heat and blend until smooth.
  • Preheat the oven to 190C/170C/Gas 5.
  • For the enchilada, heat half of the olive oil in a large frying pan, add the sliced onions and peppers and cook over a medium heat for about 3 minutes, or until just tender and starting to caramelise at the edges. Add the garlic and red chilli and cook for a further 30 seconds. Remove from the pan and set aside.
  • Heat the remaining oil in the frying pan, add the chicken and cook quickly over a medium heat until cooked through and golden brown.
  • Return the onion and pepper mixture to the pan, add half of the enchilada sauce, and drained kidney beans, season well and cook for a further minute.
  • Lay the flour tortillas on the work surface and divide the chicken mixture between them. Roll the flour tortillas around the filling into cigars and arrange neatly and snuggly in an ovenproof dish (roughly 20 x 30cm/8x 12in). Spoon the remaining enchilada sauce over the top and scatter with grated cheese.
  • Bake for about 20 minutes, or until the filling is piping hot and the cheese bubbling, melted and golden-brown.
  • To serve, scatter with the spring onions and chopped coriander and serve with sliced avocado and soured cream alongside.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray an 8-inch, 2-quart baking dish with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes.
  • Mix cooked beef, black beans, 1/4 cup enchilada sauce, salsa, and 1/2 cup Mexican cheese together in a medium-sized bowl.
  • Divide beef mixture evenly among tortillas. Wrap tortillas around filling; place seam-side down into the prepared baking dish. Pour remaining enchilada sauce over tortillas and top with remaining Mexican cheese. Cover the baking dish with aluminum foil.
  • Bake in the preheated oven until bubbly and thoroughly heated, 35 to 40 minutes.

5 large flour tortillas (soft taco size)
1/4 cup vegetable oil (for frying tortillas)
1/2 lb ground beef or 1/2 lb pork
1 (10 ounce) can red enchilada sauce
1 cup colby-monterey jack cheese (divided)
1/2 cup instant beef bouillon
1/2 cup sour cream
1 tablespoon fresh cilantro
1 teaspoon salt
1 teaspoon pepper
1 clove garlic, minced
1/2 cup onion, chopped
1/4 cup bell pepper, chopped

Steps:

  • Brown Meat, Garlic, Onion and Bell Pepper.
  • Drain.
  • Stir in 3 tbs enchilada sauce, 1/2 cup cheese, sour cream, beef broth and cilantro.
  • Mix well and set aside.
  • In a lg frypan heat 1/4 cup oil and brown tortillas 15 sec each side.
  • Drain well on paper towels.
  • Spoon mixture onto tortillas and roll, place seam side down in pan.
  • Cover with remainder of enchilada sauce and cheese.
  • Bake at 325 deg for 30 min.

I came across this recipe about three years ago on TOH's website. It originally called for 10 flour tortillas (6 inches), but I found my alteration to the recipe to be much better. I have also substituted on occasion pintos for black beans, and used Pace Picante sauce instead of the salsa. This recipe has become a staple at my house.

1 (10 ounce) can enchilada sauce, divided
4 ounces cream cheese, cubed
1 1/2 cups salsa
2 cups shredded chicken
1 (15 ounce) can pinto beans, rinsed and drained
1 (4 ounce) can chopped green chilies
8 extra 10-inch flour tortillas
1 cup shredded Mexican blend cheese
shredded lettuce, chopped tomato, sour cream, and black olives

Steps:

  • Spoon 1/2 cup enchilada sauce into a greased 13" x 9" baking dish. In a large saucepan, cook and stir the cream cheese and salsa over medium heat for 2-3 minutes or until blended. Stir in the chicken, beans, and chilies.
  • Place about 6 tablespoons of chicken mixture down the center of each tortilla. Roll up and place the enchiladas seam side down over sauce. Top with remaining enchilada sauce; sprinkle with cheese.
  • Cover and bake at 350F for 25-30 minutes or until cheese has melted and the enchilidas are heated through. Serve with lettuce, tomato, sour cream and olives if desired.

  • Preheat oven to 350º. In a large saucepan, heat the olive oil. Cook the onion and bell pepper over moderate heat until softened, 5 to 7 minutes. Add the garlic, jalapeño, chili powder, cumin, crushed red pepper, paprika, oregano, sugar, salt and pepper and cook, stirring, for 1 minute. Stir in the tomatoes and remove from heat. Blend the mixture in a food processor or blender until smooth. Return the tomato to heat, and bring to a simmer. Add the chicken breasts and cook, covered, for 10 minutes. Flip the chicken breasts, cover and cook for 10 minutes, until the chicken is no longer pink and cooked through. Transfer the chicken to a cutting board and use two forks to shred it.
  • In a large bowl, combine the chicken with the corn, 1/2 cup of the tomato sauce and 1/2 cup of the cheese.
  • Wrap the tortillas in a damp paper towel and warm them in a microwave oven until soft and pliable, about 15 to 20 seconds.
  • Spread a thin layer of sauce on the bottom of a 4-by-eight-inch glass baking dish. Arrange the tortillas on a work surface. Divide the chicken mixture between the two tortillas. Roll up the tortillas and arrange in the baking dish. Top the enchiladas evenly with the remaining sauce. Sprinkle the tops of the enchiladas with the remaining 1/4 cup of cheese. Bake for 15 to 20 minutes, until the enchiladas are hot and the cheese is melted.
