Seasoned with chiles, enchilada sauce and taco seasoning, this set-it-and-forget-it beef recipe is packed with south-of-the-border flavors.

2 tablespoons olive oil
1 small onion, chopped
1 lb ground beef
1 tablespoon Old El Paso™ taco seasoning mix
1 can (10 oz) Old El Paso™ enchilada sauce
1 can (4.5 oz) Old El Paso™ chopped green chiles
1/2 cup fresh cilantro, chopped
1 cup shredded Mexican cheese blend (4 oz)
4 soft burger buns

Steps:

  • Heat 10-inch skillet over medium heat. Add oil and onion; cook about five minutes or until soft. Add beef; cook until brown, stirring occasionally.
  • Spray 7-quart slow cooker with cooking spray. Pour mixture into slow cooker. Stir in taco seasoning mix, enchilada sauce and green chiles. Cover and cook on Low heat setting 4 to 6 hours.
  • Just before serving, stir in cilantro and 1/2 cup of the cheese. If too saucy, cook uncovered about 30 minutes longer, allowing extra moisture to evaporate.
  • Serve on buns. Top with remaining cheese. Enjoy!

1 medium onion, finely diced
1 medium bell pepper, finely diced
1 pound ground beef
One 15-ounce can diced fire-roasted tomatoes
One 15-ounce can kidney beans, drained and rinsed
1/4 cup tomato paste
2 tablespoons apple cider vinegar
1 teaspoon brown sugar
Kosher salt and freshly ground black pepper
4 hamburger buns

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the onions and bell peppers and saute until softened, about 10 minutes. Add the beef, breaking it up with a wooden spoon, and cook until browned, 3 to 5 minutes. Add the tomatoes, beans, tomato paste, vinegar, brown sugar, and some salt and pepper, and cook until slightly thickened, 10 to 15 minutes.
  • Serve warm on the hamburger buns.

1 (16 ounce) package cottage cheese
½ cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 2 /12-quart casserole with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Cook shell macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes.
  • Meanwhile, heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add water, tomato sauce, tomato paste, and seasoning mix. Reduce heat and simmer for about 10 minutes.
  • Drain and rinse macaroni. Spread 1/2 of the macaroni into the bottom of the prepared casserole dish. Top with cottage cheese, then the beef mixture. Repeat layers of macaroni, cottage cheese, and meat. Cover with Cheddar cheese.
  • Bake in the preheated oven until cheese is melted and casserole is bubbly, 35 to 40 minutes. Serve hot.

1 pound ground beef
1/2 cup chopped onion
1 can (8 ounces) tomato sauce
1 can (8-3/4 ounces) whole kernel corn, drained
1/4 cup water
1 envelope sloppy joe mix
2 tubes (6 ounces each) refrigerated buttermilk biscuits
2 tablespoons whole milk
1/3 cup cornmeal
1 cup shredded cheddar cheese, divided
Minced fresh parsley, optional

Steps:

  • Preheat oven to 375°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in tomato sauce, corn, water and sloppy joe seasoning; cook over medium heat until bubbly. Reduce heat and simmer for 5 minutes; remove from heat and set aside. , Separate biscuits; flatten each to a 3-1/2-in. circle. Place milk and cornmeal in separate shallow bowls; dip both sides into milk and then into cornmeal. Place seven biscuits around the sides and three on the bottom of an ungreased 9-in. pie plate. , Press biscuits together to form a crust, leaving a scalloped edge around rim. 12 ounces salsa (medium heat preferred)
1 (15 1/2 ounce) can red kidney beans, drained and rinsed
1 cup shredded cooked chicken
1 cup shredded monterey jack pepper cheese

Steps:

  • If you have a round crock pot, prepare it by tearing off three 18x2" strips of heavy-duty foil and placing the foil in the crock pot in a spoke design (crisscross the strips).
  • Spray with cooking spray.
  • You will be able to lift the pie out when ready to serve.
  • (If you have an oblong crock pot, you can probably just cook at one end and lift out with a spatula, or go ahead and try the foil thing).
  • Place one tortilla in the crock pot.
  • Top with a small amount of salsa, beans, chicken and cheese.

1 medium red bell pepper, diced

2 cups beef broth
¾ cup ketchup

½ teaspoon ground white pepper
2 dashes Worcestershire sauce
1 pinch cayenne pepper, or to taste
1 large egg
1 tablespoon water
1 (14.1 ounce) package refrigerated pie dough for a double-crust pie
6 slices Cheddar cheese

Steps:

  • Heat a large skillet over medium heat. Cook and stir ground beef and onion in the hot skillet until browned and crumbly, 7 to 8 minutes. Add bell pepper and garlic; cook and stir until tender, 2 to 3 more minutes.
