Stuff these with your favorite ingredients! Use only butter for this recipe. This dough should make about 10-12 empanadas depending on the size you are making them. This dough can also be made using a food processor and completely frozen butter pieces, though you will have to be careful not to overprocess the dough when mixing on the processor.

2 1/4 cups all-purpose flour
1 1/2 teaspoons salt
1/2 cup partially frozen butter (cut into small cubes, place the butter cubes in the freezer until ALMOST completely frozen)
1 large egg
1/3 cup ice water
1 tablespoon vinegar

Steps:

  • In a large bowl sift together flour and salt.
  • Blend in the cold butter cubes using you fingers or a pastry blender until the mixture resembles coarse meal (the mixture should be pea-size).
  • In a small bowl whisk together egg, ice water and vinegar.
  • Add to the flour mixture, stirring with a fork just until incorporated (the mixture will look somewhat lumpy).
  • Transfer the mixture onto a LIGHTLY floured surface.
  • Gather the dough together with your hands and gently knead with the heel of your hand once or twice (just enough to bring the dough together, do not overwork the dough or it will be tough!).
  • Form the dough in a semi-flat ball or rectangle.
  • Cover the dough tightly with plastic wrap and chill for 1 hour or up to 8 hours.
  • Roll out the dough, then cut into desired size circles.
  • Fill with favorite fillings then close the dough over the filling as you would a pierogi.
  • Brush the ends with egg wash then seal together with a fork.

1 cup shredded Monterey Jack cheese (4 oz)

Steps:

  • Heat oven to 350°F. Heat 12-inch nonstick skillet over medium-high heat; add beef, onion, pepper flakes and 1/2 teaspoon salt, stirring to break up meat. Cook 5 to 6 minutes or until beef is no longer pink. Remove from heat; drain and return to pan. Stir in vinegar and cilantro.
  • Separate dough into 8 biscuits. Press or roll each to form 6-inch round. Scoop 1/4 cup beef mixture on center of each round; top each with 2 tablespoons cheese.
  • Fold each in half; gently stretching dough over filling, pressing seal.
  • Using fork, press seams to seal. Place on ungreased cookie sheet. Bake 24 to 26 minutes or until golden brown.

½ teaspoon salt
⅓ cup white sugar
1 egg yolk
½ cup water
2 tablespoons all-purpose flour for dusting
2 tablespoons melted butter for brushing

Steps:

  • Whisk together the 2 cups flour, salt, and sugar in a bowl until evenly blended; make a well in the center of the mixture. Whisk the egg yolk and water together in a small bowl until smooth; pour into the well and mix to form a stiff dough. Transfer the dough to a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Roll the dough with a rolling pin until thin, sprinkling with flour to prevent from sticking. Brush with melted butter and roll it like a jelly roll. 1/2 cup hot water
1/4 lb lean (at least 80%) ground beef
1/2 cup chunky-style salsa
1 tablespoon raisins
8 pimiento-stuffed green olives, sliced
1/2 teaspoon ground cumin
1/8 teaspoon ground cinnamon
1 egg
1 tablespoon water

Steps:

  • Heat oven to 350°F. Line cookie sheet with cooking parchment paper. In medium bowl, stir Bisquick mix and hot water until stiff dough forms. Let stand 10 minutes.
  • Meanwhile, in 8-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in salsa, raisins, olives, cumin and cinnamon; set aside.
  • Place dough on surface sprinkled with Bisquick mix; gently roll in Bisquick mix to coat. Shape into a ball; knead 10 times. Roll dough into 13-inch round. With 3-inch round cutter, cut dough into rounds. Gather dough scraps together and reroll to 1/8-inch thickness. Cut to make 20 rounds.

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/2 cup butter, softened
1-1/2 cups flour
3/4 lb. Mexican chorizo, casings removed
1/4 cup finely chopped onion s
1 egg, beaten

Steps:

  • Heat oven to 400ºF.
  • Beat cream cheese and butter in large bowl with mixer until blended. Gradually beat in flour. Shape into ball; wrap in plastic wrap. Refrigerate while preparing empanada filling.
  • Cook meat and onions in large skillet on medium-high heat 9 to 10 min. or until meat is done, stirring frequently. Drain. Cool completely.

1 lb ground beef
1 garlic clove
1 teaspoon salt
1 (15 ounce) can fresh cut corn, drained
1/2 cup chopped onion
8 ounces grated cheddar cheese
1 cup salsa
2 (16 ounce) cans large refrigerated biscuits (I use buttermilk, and you may only use 1 and 1/2 cans depending on how full you make them)

Steps:

  • Brown the ground beef in a frying pan adding the salt and pepper just before done.
  • Let the beef cool.
  • In a large bowl mix the corn, onions, cheese, and salsa, then add the cooled beef mixing carefully so not to break up all the cheese.
  • Roll the biscuits out flat to about 2-1/2 times their size.
  • Place approx 1/3 cup filling on one side of the center of the circle lengthwise.
  • Fold the dough over the filling like a turn over and crimp the edges like a pie crust. Be careful not to tear the dough, and to seal the edges completely or your filling will come out! depending on how much filling is used will determine how many biscuits you will use.
  • Place on slightly greased cookie sheet and bake at 375 till lightly browned.

1 pound ground turkey
1 large onion, diced
1 8-ounce can tomato sauce
4 teaspoons Cajun seasoning mix
1/2 cup packed grated Monterey Jack cheese (about 2 ounces)
3 7.5-ounce cans refrigerated biscuit dough (10 biscuits per can)
1 egg, beaten to blend
Oil for deep frying

Steps:

  • Sauté turkey in heavy large nonstick skillet over medium heat until cooked through and brown, breaking up meat with fork, about 5 minutes. Using slotted spoon, transfer turkey to small bowl. Add onion to drippings in skillet and sauté until light brown, about 7 minutes. Return turkey and any juices to skillet. Add tomato sauce and Cajun seasoning; simmer until mixture is almost dry, stirring occasionally, about 8 minutes. Season with salt and pepper. Cool completely. Mix in cheese. (Can be prepared 1 day ahead. Cover and chill.)
  • On lightly floured surface, roll out 1 biscuit dough piece to 4-inch-diameter round. Place 1 tablespoon filling on round. Brush half of dough edge with beaten egg. Fold dough over filling to create half circle and seal edges by pressing with tines of fork. Set empanada on baking sheet and cover with damp cloth. Repeat with remaining biscuits and filling.
  • Pour oil to depth of 1/2 inch into heavy large skillet. Heat oil over medium-high heat to 350°F. Fry empanadas in batches until golden brown, about 2 minutes per side. Transfer to paper towels. Serve warm or at room temperature.
