TURKEY MANICOTTI

Turkey Manicotti image

I love manicotti, but most manicotti recipes are stuffed with ricotta, which I love, but my kids and husband wont eat it. I made this recipe for them, with only a small amount of ricotta they dont even know it's there, and they love it!

Provided by aimbrulee

Time 1h30m

Yield 4 to 6 servings

Number Of Ingredients 21

Kosher salt
16 manicotti shells
One 32-ounce can San Marzano tomatoes
3 to 4 cloves garlic, grated
1 small onion, grated
1/2 teaspoon sugar
A few leaves fresh basil, torn
A few sprigs fresh parsley, leaves only
A few sprigs fresh thyme, finely chopped
Kosher salt and ground black pepper
Kosher salt and ground black pepper
About 2 tablespoons EVOO
2 cups passata or tomato sauce
One 10-ounce package organic chopped frozen spinach, wrung dry in a kitchen towel
4 cups ricotta
1 1/2 cup grated Parmigiano-Reggiano
Kosher salt and ground black pepper
Kosher salt and ground black pepper
Freshly grated nutmeg
2 eggs, lightly beaten
2 cups shredded mozzarella

Steps:

  • Bring a large pot of water to a boil. Salt the water and cook the manicotti until shy of al dente, 5 to 6 minutes. Drain and cool to handle.
  • For the sauce: Place in a food processor the canned tomatoes, garlic, onion, sugar, basil, parsley, thyme, salt and pepper to taste and the EVOO. Blend until smooth, and then place the sauce in a pot. Stir together with the passata or tomato sauce and simmer 20 minutes.
  • Pour half of the sauce into large baking dish.
  • For the filling: Mix together in a large bowl the spinach, ricotta, half the Parm, salt and pepper to taste and a little nutmeg. Taste to adjust seasonings before adding the eggs. Once the eggs are incorporated, spoon the filling into a large plastic food storage bag and trim the corner. Pipe the filling into the manicotti and put in the baking dish. Cover the casserole with the remaining sauce, Parm and mozzarella. Cover and store for a make-ahead meal.
  • Preheat the oven to 450 degrees F and bake until brown and bubbly, 30 to 35 minutes.

VEAL OR TURKEY AND SPINACH MANICOTTI

Veal or Turkey and Spinach Manicotti image

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 1h55m

Yield 4 to 6 servings

Number Of Ingredients 15

1 package organic chopped spinach
2 tablespoons EVOO
2 pounds ground veal or ground turkey breast
Salt and pepper
1 medium onion, very finely chopped
4 cloves garlic, minced or finely chopped
1/2 cup dry white wine
4 cups passata (Italian tomato puree in glass jars) or canned tomato puree
4 tablespoons butter
3 tablespoons flour
2 cups milk
Nutmeg
1 box manicotti pasta tubes
One 5-ounce container soft cheese with herbs, such as Boursin
1 cup shredded Parmigiano-Reggiano

Steps:

  • Defrost the spinach in the microwave, wring dry and separate.
  • Heat the EVOO in a pan over medium-high heat. Pat the meat dry, and then add to the pan and lightly brown while you crumble. Sprinkle with salt and pepper. Add the onions and garlic and cook 10 minutes more, stirring occasionally. Deglaze the pan with the wine, stir and add 2 cups tomato puree. Stir, reduce heat to a low simmer and simmer 15 to 20 minutes.
  • Pour the remaining 2 cups tomato puree into a casserole.
  • Melt the butter in saucepot over medium to medium-high heat. Whisk in the flour for 1 minute. Then add the milk, bring to a bubble, season with salt, pepper and nutmeg, and cook until it's thick enough to coat a spoon. Stir in the soft cheese.
  • Working over the casserole dish, fill the manicotti with the meat using a spoon. Top the manicotti with the white sauce and Parmesan. Cover with parchment and foil and cool or bake off. Bake, covered, at 375 degrees F for 40 minutes from fresh, or bake 1 hour from cold to heat through and cook the pasta. Then uncover and bake until brown and bubbly, about 20 minutes more.

Categories     Italian Recipes

Time 2h25m

Yield 6

Number Of Ingredients 20

2 eggs
¾ cup all-purpose flour
¾ cup water
½ teaspoon salt
½ teaspoon olive oil
1 cup diced cooked turkey
1 cup whole-milk ricotta cheese
1 egg
½ cup freshly shredded Parmigiano-Reggiano cheese
½ cup shredded mozzarella cheese
¼ teaspoon dried marjoram
⅛ teaspoon red pepper flakes
¼ cup chopped Italian parsley
salt to taste
1 teaspoon olive oil, or as needed
1 ½ cups marinara sauce, divided
2 teaspoons olive oil, divided
⅓ cup freshly shredded Parmigiano-Reggiano cheese
1 tablespoon freshly shredded Parmigiano-Reggiano cheese for garnish, or as desired
1 tablespoon chopped Italian parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk 2 eggs, flour, water, salt, and 1/2 teaspoon olive oil together thoroughly in a bowl to make a very smooth batter. Cover bowl with plastic wrap and refrigerate batter for 1 hour.
  • Mix turkey, ricotta cheese, 1 egg, 1/2 cup Parmigiano-Reggiano cheese, mozzarella cheese, marjoram, red pepper flakes, and 1/4 cup Italian parsley in a bowl until thoroughly combined. Season with salt to taste.
  • Place a nonstick skillet over medium-high heat and brush generously with 1 teaspoon olive oil or as needed. Swirl about 1/4 cup batter into the bottom of the pan and tilt to form a thin pancake covering the bottom of the skillet. Cook until bottom of crepe is dry, 60 to 90 seconds. Flip crepe and cook until other side has small browned spots, 60 to 90 seconds more. Repeat with remaining batter to make 6 crepes. Transfer crepes to a plate as you make them.
  • Spread about 1/2 cup marinara sauce into the bottom of a 9x12-inch baking dish. Use a brush to spread about 1/2 teaspoon of olive oil in a thin layer up the sides of the dish. Place a crepe, dimpled side down, onto a work surface; spread about 1/3 to 1/2 cup filling onto crepe in a line down the middle. Roll crepe over filling and tuck in ends if desired. Lay filled crepe into the baking dish. Repeat with remaining crepes and filling to make 6 manicotti.
  • Spread remaining 1 cup marinara sauce onto the manicotti in a line down the middle of the crepes, covering middle 1/3 of manicotti. Sprinkle 1/3 cup Parmigiano-Reggiano cheese all over manicotti. Drizzle manicotti with remaining 1 1/2 teaspoon olive oil.
  • Bake in the preheated oven until manicotti are slightly browned and puffy, about 45 minutes. Let stand 5 minutes to cool. Garnish with 1 tablespoon Parmigiano-Reggiano cheese or as desired and 1 tablespoon Italian parsley before serving.

MANICOTTI

Manicotti image

It just wouldn't be a holiday without my mom preparing a pasta course, whether it precedes the turkey at Thanksgiving or follows antipasti at Easter. My mom's manicotti recipe (which comes from her Italian mother), feeds our immediate family of 40, but I've scaled it down to feed a smaller group of 6. The tender manicotti wrappers are made by quickly cooking a batter to form a pastalike crêpe.

Categories     Gourmet     Egg     Pasta     Tomato     Bake     Christmas     Mozzarella     Parmesan     Ricotta     Basil     Winter     New York     Dinner

Yield 6 main-course servings

Number Of Ingredients 25

For sauce
3 tablespoons olive oil
1 medium onion, chopped
3 garlic cloves, minced
2 (28- to 32-oz) cans Italian tomatoes in juice, drained, reserving juice, and finely chopped
1/2 cup water
1 teaspoon sugar
1 teaspoon salt
1/4 cup chopped fresh basil
For crêpes
3 large eggs
1 1/2 cups water
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1 tablespoon unsalted butter, melted
For filling
2 lb fresh ricotta (3 cups)
2 large eggs
1 oz finely grated Parmigiano-Reggiano (1/2 cup)
1/3 cup chopped fresh parsley
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 lb fresh mozzarella
Special Equipment
2 glass or ceramic baking dishes, one 13 by 9 inches and one 8 inches square

Steps:

  • Make sauce:
  • Heat oil in a 5- to 6-quart heavy pot over moderately high heat until hot but not smoking, then sauté onion, stirring occasionally, until golden, about 6 minutes. Add garlic and sauté, stirring, until golden, about 1 minute. Add tomatoes with juice, water, sugar, and salt and simmer, uncovered, stirring occasionally, until thickened, about 30 minutes. Stir in basil and remove from heat.
  • Make crêpes:
  • Break up eggs with a wooden spoon in a medium bowl and stir in water until combined (don't beat). Sift in flour and salt, then stir batter until just combined. Force through a medium-mesh sieve into another bowl.
  • Lightly brush an 8-inch nonstick skillet with melted butter and heat over moderate heat until hot. Ladle about 1/4 cup batter into skillet, tilting and rotating skillet to coat bottom, then pour excess batter back into bowl. (If batter sets before skillet is coated, reduce heat slightly for next crêpe.) Cook until underside is just set and lightly browned, about 30 seconds, then invert crêpe onto a clean kitchen towel to cool completely. Make at least 11 more crêpes in same manner, brushing skillet with butter as needed and stacking crêpes in 3 piles.
  • Make filling and assemble manicotti:
  • Stir together ricotta, eggs, Parmigiano-Reggiano, parsley, salt, and pepper.
  • Put oven rack in middle position and preheat oven to 425°F.
  • Cut mozzarella lengthwise into 1/4-inch-thick sticks.
  • Spread 2 cups sauce in larger baking dish and 1 cup in smaller one. Arrange 1 crêpe, browned side up, on a work surface, then spread about 1/4 cup filling in a line across center and top with a mozzarella strip. Fold in sides to enclose filling, leaving ends open, and transfer, seam side down, to either baking dish. Fill 11 more crêpes in same manner, arranging snugly in 1 layer in both dishes (8 in larger dish and 4 in smaller). Spread 1 cup sauce over manicotti in larger dish and 1/2 cup in smaller dish. Tightly cover dishes with foil and bake until sauce is bubbling and filling is hot, 15 to 20 minutes. Serve remaining sauce on the side.

TURKEY MANICOTTI RECIPE - FOOD FANATIC
I find the easiest way to stuff the manicotti shells with the turkey filling is to hold the shell upright so one end is on the pan. Then spoon the filling into the shell until it is full and lay it down in the pan. There will still be some filling that doesn't make it into the shells but that's okay, just leave it around the shells in the baking dish. It'll all be good once it's baked.
