FRICO CRISPS

Frico Crisps image

Provided by Emeril Lagasse

Categories     appetizer

Time 18m

Yield 4 crisps

Number Of Ingredients 2

1 teaspoon butter
1/2 pound Montasio, or Asiago or Parmesan cheese, coarsely grated

Steps:

  • In a medium non-stick skillet melt enough butter to just coat the bottom of the pan over medium heat. Sprinkle a fine layer of grated cheese in a circular pattern over the bottom of the pan and shake the pan to evenly distribute, as though making an omelet. Cook over medium heat until it has melted and formed a light crust, 3 to 4 minutes. Continue to cook until the edges set and a golden crust develops, 30 seconds to 1 minute. Gently lift and turn with a spatula or fork and cook until lightly golden on the second side, 2 to 3 minutes, being careful not to let it burn.
  • Remove the frico from the pan and either set it flat on a paper towel, shape it over an inverted custard cup, or drape over a rolling pin or dowel. Continue with the remaining cheese.

Time 55m

Yield 6-8 serving(s)

Number Of Ingredients 10

6 tablespoons unsalted butter
1/2 lb elbow macaroni
6 tablespoons all-purpose flour
3 cups whole milk
1 teaspoon salt
1/4 teaspoon ground black pepper
1 pinch cayenne
2 1/2 cups grated cheddar cheese (about 6 ounces)
1/2 cup fine breadcrumbs
1 teaspoon Emeril's Original Essence

Steps:

  • Preheat the oven to 350 degrees F. Butter a 2-quart baking dish with 1 tablespoon of the butter and set aside.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook until al dente, about 10 minutes. Drain in a colander and rinse under cold running water. Drain well.
  • Melt the remaining 5 tablespoons butter in a heavy 3-quart saucepan over medium heat.
  • Add the flour, and stirring constantly with a wooden spoon, cook over medium heat for 3 to 4 minutes, being careful not to let the flour brown.

  • Add the salt, pepper, cayenne, and 2 cups of the cheese, and stir well. Add the noodles and stir well. Pour into the prepared dish.
  • In a mixing bowl, combine the remaining 1/2 cup of cheese with the bread crumbs and Essence. Sprinkle evenly over the macaroni and bake until golden brown and bubbly, about 25 minutes.
  • Remove from the oven and let rest for 5 minutes before serving.

Time 1h

Yield 2 each, 4-6 serving(s)

Number Of Ingredients 14

1/2 lb hot Italian sausage
1 cup sliced onion
1/2 cup thinly sliced red bell pepper
1/2 cup thinly sliced green bell pepper
2 tablespoons thinly sliced jalapenos
2 tablespoons minced garlic
1 teaspoon Italian spices
1/2 lb sliced ham
1/4 lb thinly sliced pepperoni
1/2 cup sliced black olives
2 cups grated provolone cheese
2 cups grated mozzarella cheese
1 large egg
1 cup finely grated parmesan cheese

Steps:

  • Preheat oven to 375. Grease a large baking sheet and set aside.
  • Emeril used his own pizza dough, but I just bought one at the store.
  • Removed sausage from casing and crumble in a large skillet. Cook sausage over med-high until browned.
  • Remove with slotted spoon and drain well on paper towels.
  • Discard all but 1 tbsp of fat from the pan. Add onions, bell peppers and jalapenos. Cook until very soft. Add garlic and Italian seasonings and cook for about another minute. Remove from heat and cool.
  • Divide dough in half. On a lightly floured surface, roll out half of the dough to a large rectangle. Spread half of the cooled sausage mix across the dough leaving an inch border. Layer with half ham, pepperoni, olives, provolone and mozzarella.
  • Beat egg with 1 tbps of water to make an egg wash. Using a pastry brush, paint the border of 1 long edge with egg wash. Starting at the opposite long end without egg wash, roll up into a cylinder, pinching the edges to seal.
  • Place on the prepared baking sheet and repeat with the other dough. Let dough rise for about 20 minutes.
  • Brush top of stromboli with egg wash Bake until nearly completely golden brown and starting to crisp, about 20 minutes. Sprinkle each stromboli with Parmesean cheese and return to the oven until the cheese is melted and the dough is golden brown, about 5 minutes.
  • Remove from oven and let stand 10 minutes. Slice thickly and serve.
  • Like I said before, you could probably use different toppings like mushrooms, salami or omit some. Just add what you like!

EMERIL'S LOBSTER CHEESECAKE

Emeril's Lobster Cheesecake image

I first tried this recipe at Emeril's restaurant just outside of Universal Studios amusement park in Orlando, Florida. It was the highlight of our trip! Absolutely AMAZING flavor!!!!!!!! It has been a regular for dinner parties ever since, and always gets rave reviews and requests for the recipe.... I have substituted shrimp and crab with great results, too.

Time 1h30m

Yield 8 serving(s)

Number Of Ingredients 20

1 cup parmesan cheese, freshly grated
1 cup breadcrumbs
1/2 cup unsalted butter, melted
1 tablespoon olive oil
1 cup onion, chopped
1/2 cup yellow bell pepper, chopped
1/2 cup red bell pepper, chopped
2 teaspoons salt
1 teaspoon fresh ground black pepper
1 3/4 lbs cream cheese, at room temperature
4 large eggs
1/2 cup heavy cream
1 cup smoked gouda cheese, grated
1 lb lobster meat, cooked and roughly chopped (about 2 cups)
1/2 cup fresh parsley, chopped
2 cups creme fraiche
2 hard-boiled eggs, finely chopped
1 tablespoon fresh parsley, finely chopped
1/4 cup red onion, diced
7 ounces black caviar (like oestra)

Steps:

  • Preheat the oven to 350 degrees F.
  • In a mixing bowl, combine the Parmesan, bread crumbs, and butter, blend thoroughly. Press the mixture into the bottom of a 9-inch springform pan.
  • In a large saute pan, heat the olive oil. When the oil is hot, add the onions, and the peppers. Season with salt and pepper. Saute for 2 minutes, remove from the heat.
  • Using an electric mixer, beat the cream cheese until smooth. With the machine running, add the eggs, one at a time, until incorporated. Beat in the cream, Gouda, and sauteed vegetables until fully incorporated, about 2 minutes.
  • Fold in the lobster meat and the parsley. Pour the filling into the prepared crust and bake until firm, about 1 hour.
  • Remove from the oven and allow to cool to room temperature. If you refrigerate the cake before serving, allow to come to room temperature before serving.
  • To serve, cut the cake into wedges with a warm knife. Serve each wedge with the creme fraiche, sprinkled with parsley and onions. Garnish with a dollop of caviar.
