- Set a Dutch oven over medium-high heat. Add 1 tablespoon of the olive oil to the pot and season the beef with the salt, Essence and black pepper, being sure to toss the meat well to evenly cover with the spices. Add 1/3 of the beef to the pot and cook until browned on all sides, 2 or 3 minutes per side. Remove the beef from the pot and set aside. Add 1 tablespoon of the remaining olive oil to the pot along with half of the remaining meat and cook again until browned. Set aside and repeat with the remaining tablespoon of oil and remaining beef. Set aside.
- Add the butter and mushrooms to the pot and cook, stirring occasionally, until well browned, about 3 minutes. Add the onions, carrots and celery and saute until onions are softened and lightly caramelized, about 3 minutes. Add the garlic and cook for 30 seconds. Sprinkle the flour over the vegetables and cook, stirring, for about 3 minutes. Add the stock, tomato paste, thyme, rosemary, allspice and browned beef and bring to a boil. Reduce the heat to a simmer, partially cover the pot, and cook, stirring occasionally, until the meat is tender, about 1 hour. Add the potatoes to the stew and partially cover the pot with a lid. Continue cooking until the potatoes are very tender, about 30 minutes. Remove the lid and discard the thyme and rosemary stems. Add the peas and parsley to the stew, stir well to combine, then remove from the heat. Serve hot, with either steamed white rice or buttered egg noodles.

- Toss lamb with flour until evenly coated; set aside. Cook and stir bacon in Dutch oven or large deep skillet until crisp. Remove bacon from pan with slotted spoon; drain on paper towels. Discard all but 2 Tbsp. drippings from pan. Add lamb, in batches, to reserved drippings; cook on medium-high heat 4 to 5 min. or until evenly browned, stirring occasionally. Remove lamb from pan; cover to keep warm.
- Add leeks to same pan; cook and stir 2 min. Stir in beer, broth and dressing mix. Return lamb to pan; stir. Bring to boil, stirring occasionally; cover. Simmer on medium-low heat 30 min., stirring occasionally.
- Add potatoes, carrots and parsnips; stir. Simmer, covered, 30 min., stirring occasionally. Stir in parsley; simmer, uncovered, 15 min. or until vegetables are tender and sauce is thickened, stirring occasionally. Stir in bacon.

- To make stew: Place tempeh, onions, carrots, celery, peas, beer, vegetable broth, thyme, parsley, and tomato paste in a medium pot, cover, and place on medium heat. Bring to a simmer and cook for about 25-30 minutes, until vegetables are just tender, stirring occasionally. May add additional water to replace moisture lost to evaporation. Stir flour into 2 tablespoons of plant-based milk in a small dish until smooth. Pour into stew, and stir for an additional few minutes, until stew is thick. Season with salt and pepper as desired.
- To make mashed potatoes: While stew is cooking, place potatoes in a pot and cover with water and a lid. Boil for about 30 minutes, just until tender but firm. Drain water, and mash potatoes with a potato masher, adding just enough plant-based milk to make a creamy texture. Add dairy-free margarine, and season with salt and pepper as desired.
- Pour stew into a medium, deep casserole dish. Top with mashed potatoes, smoothing over surface of stew.
