Steps:
- Bring a large pot of water to a boil, season with salt.
- Cook pasta 1 minute under required cooking time, drain and toss with 2 tablespoons olive oil.
- Place on sheet tray to cool down.
- In a blender combine: garlic, half of the pine nuts, and basil, pulse for a few seconds.
- Slowly drizzle in remaining olive oil to emulsify the pesto.
- Add half the Parmigiano and pulse, season with salt and pepper, set aside.
- In a large bowl combine, pesto and pasta and stir to incorporate.
- Fold in remaining cheeses, cherry tomatoes and pine nuts.

- COOK pasta according to package directions.
- Meanwhile, HEAT 2 tbsp olive oil in a large skillet over medium heat. Add garlic and saute until slightly yellow, about 2 minutes.
- REMOVE garlic from skillet. ADD tomatoes to the skillet and sear until slightly blistered, about 3-4 minutes. Season with salt and pepper.
- DRAIN pasta and add to the skillet. Remove skillet from heat. Mix well.
- ADD cheese, basil and remaining olive oil to the pasta. Toss to combine.

- Bring a large pot of salted water to a boil.
- Whisk together the olive oil, vinegar, shallot, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
- Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl with the dressing.
- Add the tomatoes, mozzarella and basil to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

FRESH CHERRY TOMATO WITH BASIL AND MOZZARELLA PASTA
I have found this to be an excellent way to serve whole wheat pasta. Of course you could use regular pasta if you prefer. Using cherry or grape tomatoes add a lot of flavor to this simple recipe. Throwing it together takes only minutes and makes a great weekday meal! Serve either as a hot meal or cold as a salad.

- Bring pot of water to boil; cook penne according to package directions.
- While pasta is cooking, in a large bowl, combine tomatoes, mozzarella, minced garlic and basil.
