1 box Barilla® Orzo
8 tablespoons extra virgin olive oil
1 clove garlic
½ cup toasted pine nuts, divided
1 small bunch basil
1 pint yellow cherry tomatoes, halved
½ cup Parmigiano-Reggiano cheese, divided
2 balls fresh mozzarella, chopped
Salt and black pepper to taste

Steps:

  • Bring a large pot of water to a boil, season with salt.
  • Cook pasta 1 minute under required cooking time, drain and toss with 2 tablespoons olive oil.
  • Place on sheet tray to cool down.
  • In a blender combine: garlic, half of the pine nuts, and basil, pulse for a few seconds.
  • Slowly drizzle in remaining olive oil to emulsify the pesto.
  • Add half the Parmigiano and pulse, season with salt and pepper, set aside.
  • In a large bowl combine, pesto and pasta and stir to incorporate.
  • Fold in remaining cheeses, cherry tomatoes and pine nuts.

1 box Barilla Whole Grain Rotini
4 tablespoons extra virgin olive oil, divided
1 garlic clove, pressed
1 pint cherry tomatoes, halved
salt, to taste
black pepper, to taste
4 ounces fresh mozzarella, diced
4 leaves basil cut into strips

Steps:

  • COOK pasta according to package directions.
  • Meanwhile, HEAT 2 tbsp olive oil in a large skillet over medium heat. Add garlic and saute until slightly yellow, about 2 minutes.
  • REMOVE garlic from skillet. ADD tomatoes to the skillet and sear until slightly blistered, about 3-4 minutes. Season with salt and pepper.
  • DRAIN pasta and add to the skillet. Remove skillet from heat. Mix well.
  • ADD cheese, basil and remaining olive oil to the pasta. Toss to combine.

Kosher salt and freshly ground black pepper
1/3 cup olive oil
2 tablespoons white wine vinegar
1 small shallot, minced
8 ounces dried fusilli
2 cups halved grape tomatoes
2 cups diced fresh mozzarella
1 cup torn fresh basil leaves

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the olive oil, vinegar, shallot, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl with the dressing.
  • Add the tomatoes, mozzarella and basil to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

Steps:

  • Bring a large pot of water to a boil, season with salt and cook pasta 1 minute under required cooking time. Drain and toss with 1 tablespoon olive oil and place on a sheet tray to cool down. In a large bowl, combine all the ingredients together and gently toss them. Season with salt and pepper to taste.

I have found this to be an excellent way to serve whole wheat pasta. Of course you could use regular pasta if you prefer. Using cherry or grape tomatoes add a lot of flavor to this simple recipe. Throwing it together takes only minutes and makes a great weekday meal! Serve either as a hot meal or cold as a salad.

10 ounces whole wheat penne
3 pints cherry tomatoes, quartered (or grape tomatoes)
8 ounces fresh mozzarella balls, drained
4 garlic cloves, minced
3/4 cup fresh basil, slivered (or use 1 tsp dry)
1 cup olive oil
salt, to taste
fresh ground black pepper, to taste

Steps:

  • Bring pot of water to boil; cook penne according to package directions.
  • While pasta is cooking, in a large bowl, combine tomatoes, mozzarella, minced garlic and basil.
  • Add olive oil, season with salt and freshly ground black pepper.
  • Drain penne; add to tomato mixture and combine.
  • Serve immediately, or refrigerate and and serve chilled as salad.
