GRILLED ELOTE BOWL

This recipe for elote (Spanish for 'corn') is based on the classic Mexican street food of grilled corn slathered in a creamy ancho chili and lime sauce with Cotija cheese. We put it in a bowl, though you can also grill the corn on the cob and eat it that way.

Yield serves 4-6

Number Of Ingredients 8

4-6 ears of corn
¼ cup mayonnaise
¼ cup sour cream or Mexican crema
½ cup Cotija, finely crumbled, plus more for garnish
½ teaspoon ancho chili powder, plus more for garnish
1 garlic clove, finely minced
¼ cup cilantro, finely chopped plus sprigs for garnish
1 lime, cut into wedges

Steps:

  • Preheat the grill to medium-high heat. Husk the corn, then grill, turning frequently, on all sides until the kernels start to char, about 5-8 minutes. Once all the corn cobs are done, let them cool slightly, then cut off all the kernels from the cobs. In a medium bowl, combine the mayonnaise, sour cream or crema, Cotija cheese, chili powder, garlic and cilantro. Pour cooked corn kernels into the mixture and toss until the corn is fully coated. (Alternatively, if you want to leave the corn on the cob, spread the mixture on the corn cobs at this step). Pour the corn mixture into serving dishes and sprinkle with more cheese and chili powder. Serve immediately with lime wedges and a sprig of cilantro.

Steps:

  • Soak 4 wooden skewers in water, 30 minutes. Preheat a grill to high.
  • Insert a skewer into each ear of corn. Brush the corn with vegetable oil. Grill, turning, until charred all over, 8 to 10 minutes.
  • Brush the grilled corn with the mayonnaise and sprinkle with the cheese. Sprinkle with chile powder and serve with lime wedges.

1/2 cup (110g) finely crumbled Cotija or feta cheese, plus more for serving
1/4 cup (60ml) mayonnaise
1/4 cup (60ml) sour cream or Mexican crema
1/4 cup finely chopped cilantro leaves and tender stems
1/2 teaspoon ancho or guajillo chile powder, plus more for serving
1 medium clove garlic, finely minced (about 1 teaspoon)
4 ears shucked corn (see note)
1 lime, cut into wedges

Steps:

  • Light 1 chimney full of charcoal. When all charcoal is lit and covered with gray ash, pour out and spread coals evenly over half of coal grate. Alternatively, set half the burners of a gas grill to high heat. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Clean and oil grilling grate.
  • While coals heat, combine cheese, mayonnaise, sour cream or crema, cilantro, chile powder, and garlic in a large bowl. Stir until homogeneous and set aside.
  • When grill is hot, place corn directly over hot side of grill and cook, rotating occasionally, until cooked through and charred in spots on all sides, about 8 minutes total.
  • Transfer corn to bowl with cheese mixture and use a large spoon to evenly coat corn on all sides with mixture. Sprinkle with extra cheese and chili powder and serve immediately with lime wedges.

1 cup mayonnaise
1 tablespoon cholula brand hot sauce
2 tablespoons fresh lime juice
1 teaspoon kosher salt

1/4 cup chicken stock
1/4 cup Cotija cheese, crumbled for garnish

Steps:

  • Over a medium-high grill, roast the corn until the husks are well charred, about 5 minutes. Turn occasionally so as not to burn the side contacting the direct heat.
  • Set the roasted ears aside until cool enough to handle, then shuck them.
  • Cut the kernels off the cob.
  • When ready to eat, mix the mayo, hot sauce, lime juice, pepper, salt and chicken stock in a sauté pan over medium heat.
  • Add the corn kernels and warm through,.
  • Pour into a bowl and garnish with the cheese, cilantro and ground chili.
  • Serve immediately with crispy tortilla chips.
