ELLEN'S SPICY GINGERBREAD MEN
You just have to love Gingerbread Men. They are great fun to make. Grandkids and I use make them every Christmas season when they were younger. And shorter.

Steps:
- In a large bowl, cream margarine and sugar til smooth.
- Stir in, molasses and egg yolk.
- Combine flour, salt, baking powder, baking soda, cinnamon, cloves, ginger, and nutmeg; blend into the molasses mix.
- til smooth.
- Cover and chill for at least 1 hour.
- Preheat oven to 350%.
- On lightly floured surface, roll the dough to 1/4 thickness.
- Cut into desired shapes.
- Place 2 inches apart on ungreased cookie sheets.
- Bake for 8- 10 minutes.
- Remove and cool.
- Frost and decorate.
- At Easter, for an added surprise, I like to dip them in melted chocolate and then decorate.

- Heat oven to 190C/170C fan/gas 5 and line a baking tray with baking parchment. Sieve the flour, salt, bicarb, ginger and cinnamon into a large bowl. Heat the butter, sugar and syrup until dissolved. Leave the sugar mixture to cool slightly, then mix into the dry ingredients to form a dough. Chill the dough in the fridge for 30 mins.
- On a surface lightly dusted with flour, roll out the dough to a ¼-inch thickness. Stamp out the gingerbread men shapes with a cutter, then re-roll any off-cuts and repeat. Place your gingerbread shapes on the lined trays, allowing space for them to spread. Cook for 10-15 mins, then remove from the oven and leave to cool.

- For the Bath Tub Tart Shells and Gingerbread Men:.
- For the wet ingredients, using a stand mixer, add butter and brown sugar then mix; add eggs and molasses then mix.
- For the dry ingredients, in a bowl, combine flour, ginger, cinnamon, nutmeg, baking soda, cornstarch; mix thoroughly.
- Combine the dry ingredients with the wet ingredients in the stand mixer.
- Form small, golf-ball sized shapes, and place them into a small muffin pan; pressing with your fingers to form cups (aka bathtubs); bake at 350F for 15 minutes.
- Using the other portion of the dough, flatten and roll into an even sheet; press the gingerbread man cookie cutter and carefully place the men on to a baking sheet lined with parchment paper; bake at 350F for 5-6 minutes; after cooling, pipe white icing to form the eyes, mouth, buttons, cufflinks.
- For the Bubble Bath Frosting:.
- In a stand mixer, add cream cheese, powdered sugar, brown sugar, cinnamon, ginger, and eggnog; mix well.
- For the assembly:.

MIMI'S GINGERBREAD MEN
I have made these since I was in high school (a long time ago). I found the recipe in a magazine, maybe Better Homes and Gardens, and tried them. They were so good. They still are. My family loves Gingerbread Men. If you don't roll these too thin and if you don't overbake them, they will be soft and wonderful. They have good flavor. One hint on the cutter--choose one that has sort of fat arms and legs and not one with spindly extremities because they will get crispy before the body is done. I like soft "gingies". Another cutter that I use is a teddy bear. Then I call them "Ginger Bears".

- Cream shortening and sugar till light and fluffy.
- Stir in egg, molasses and vinegar; beat well.
- Add dry ingredients.
- Chill thoroughly; about 3 hours.

CHOCOLATE GINGERBREAD MEN
There's no way I could pass up on this recipe, which comes from The Ultimate Chocolate Cookie Book, 2004. Baking time is an estimate, depending on the number of gingerbread men that can be baked at the same time.

- Position racks in the top & bottom thirds of the oven, then preheat oven to 375 degrees F.
- With shortening (not on ingredient list) to grease several large baking sheets, then set aside.
- In a large mixing bowl, whisk together flour, cocoa powder, ginger, cinnamon, baking soda, salt, baking powder & cloves until spices & coca are evenly distributed, then set aside.
- In a 2nd large bowl, & using an electric mixer on medium speed, cream shortening & brown sugar until smooth & airy, about 1 minute.
- Beat in egg & then the molasses.
- Turn off mixer & add prepared flour mixture, then AT VERY LOW SPEED beat just until crumbly bits of dough form, but not until the mass begins to cohere into a ball.
- With flour lightly dust a clean, dry work surface as well as your hands.
- Turn dough out & knead just until it forms a smooth mass, about 30 seconds.
- Divide into thirds & cover them with a clean kitchen towel.
- With flour lightly dust the work surface again & roll one of the thirds to a rectangle about 1/4 inch thick. Flour the dough & a rolling pin only as necessary.
- Use a large gingerbread-man cookie cutter to cut the dough into the desired shapes, then use a metal spatula to transfer them carefully to the prepared baking sheet(s). Gather any scraps, lightly dust again with flour & roll out a 2nd time, creating additional gingerbread men.
- Decorate the cookies with the raisins & red hots, using one for the eyes & the other for the mouths. Additional red hots can be used as buttons on their coats.
- Bake for 4 minutes, then rotate sheets top to bottom & front to back.
- Bake another 4 minutes, or until cookies feel dry but still are a little soft.
- Remove from oven & cool on the baking sheets for 2 minutes before transferring the cookies to wire racks to cool completely.
- Cool the baking sheets for 5 more minutes, then regrease them before baking additional batches, as necessary, OR work with 2 additional baking sheets, preparing them while the others are in the oven.
- Keep no longer than 2 days at room temperature, several more days in the refrigerator, OR up to a month in the freezer.

- In a large bowl, with mixer at slow speed, beat flour, sugar, butter, molasses, applesauce, egg, cinnamon, baking powder, ginger, cloves, nutmeg, baking soda, and salt until well mixed. Cover and refrigerate 1 hour.

- Pre-heat the oven to gas mark 4/350°F/180°C.
- You will need 2 lightly greased baking sheets.
- In a large saucepan, put in the brown sugar, golden syrup, treacle, all the spices and orange rind with 1 tablespoon of water.
- Bring them to boiling point, stirring all the time.
- Remove the pan from the heat and stir in the butter cut into cubes, and the bicarbonate of soda.
- Next stir in the flour gradually until you have a smooth manageable dough - add a little more flour, if you think it needs it.
- Leave the dough covered, in a cool place to become firm, approximately 30 minutes.
- Roll the dough out on a lightly floured surface to 1/8 inch (3 mm) thick and cut out the gingerbread men.
- Arrange them on the lightly greased baking sheets.
- Bake on the middle shelf of the oven for 10-15 minutes or until the biscuits feel firm when lightly pressed with a fingertip.
- Leave the biscuits to cool on the baking sheets for a few minutes before transferring them to a wire rack.
- Once cool, store in an airtight container.

- Heat oven to 200C/180C fan/gas 6. Line 2 baking sheets with baking parchment. Melt butter, sugar and syrup in a pan. Mix flour, soda, spices and a pinch of salt in a bowl. Stir in the butter mix and chopped ginger to make a stiff-ish dough.
- Wait until cool enough to handle, then roll out dough to about 5mm thick. Stamp out gingerbread men, re-rolling and pressing the trimmings back together and rolling again. Lift onto baking sheets. Bake for 12 mins until golden. Cool 10 mins on the sheets, then lift onto cooling racks.
- To decorate, mix icing sugar with a few drops of water until thick and smooth. Halve then slice cherries thinly to make smiles, and cut ginger into small squares. Spoon icing into a food bag, snip off the tiniest bit from one corner, then squeeze eyes and buttons, and a tiny smile onto 1 man at a time. Stick on a cherry smile and ginger buttons. Repeat; leave to set. Will keep up to 1 week in an airtight tin.

- These gingerbread men are both fun and easy to make, and, what's more, the kids will love them!
- Ingredients
- Method.
- Preheat oven to 180°C Brush 2 baking trays with melted butter to lightly grease.
- Use an electric beater to beat the butter and sugar in a bowl until pale and creamy. Add the golden syrup and egg yolk and beat until combined. Stir in the flour, ginger, mixed spice and bicarbonate of soda. Turn onto a lightly floured surface and knead until smooth. Press dough into a disc. Cover with plastic wrap and place in the fridge for 30 minutes to rest.
- Meanwhile, place egg white in a clean, dry bowl. Use an electric beater to beat until soft peaks form. Gradually add icing sugar and beat until stiff peaks form. Divide icing among 3 bowls. Cover 1 bowl with plastic wrap and place in the fridge. Add red colouring to 1 bowl and stir until combined. Add green colouring to remaining bowl and stir until combined. Cover with plastic wrap and place in the fridge.
- Place the dough between 2 sheets of baking paper and roll out until about 4mm thick. Use a 9cm gingerbread man cutter to cut out shapes. Place on trays about 3cm apart. Repeat with any excess dough.
- Bake in oven for 10 minutes or until brown. Remove from oven. Transfer to a rack to cool.
- Place prepared icings in small plastic bags. Cut a small hole in a corner of each bag. Pipe icing over gingerbread men to decorate. Finish with Smarties.
