1 teaspoon garlic powder
1 teaspoon pimenton
1 sprig fresh rosemary, leaves chopped
Zest of 1 lemon
1 tablespoon coriander seeds
1 tablespoon cumin seeds
1 Cornish game hen, spatchcocked
Kosher salt
Crushed red pepper
1/4 cup olive oil, plus more for drizzling
Mashed Potatoes, recipe follows
3 Yukon Gold potatoes, chopped
3 cloves garlic
Kosher salt
1 2/3 cups heavy cream, plus more as needed
2 tablespoons cold butter, plus more as needed

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the garlic powder, pimenton, rosemary and lemon zest in a small bowl. Toast the coriander and cumin seeds in a small pan until fragrant, about 5 minutes. Combine the toasted seeds with the other spices and grind in a spice grinder.
  • Season the game hen with salt and crushed red pepper.
  • Heat the olive oil in a cast-iron skillet over high heat. Sear the hen, skin-side down, adjusting the heat as necessary. Place the brick on top of the hen and cook until evenly browned. Remove the brick and flip the hen. Rub some of the spice mixture onto the skin side. Flip the hen over and rub some of the spice mixture onto the back side. Roast in the oven, skin-side down, for 15 minutes. Flip the hen skin-side up and continue to roast until the skin is crispy and the internal temperature is 165 degrees F, about 15 minutes more. Let rest.
  • Serve drizzled with olive oil, with Mashed Potatoes on the side.
  • Place the potatoes and garlic in a large pot and cover with cold water. Bring to a boil over medium-high heat and heavily season the cooking water with salt. Turn down the heat and simmer until the potatoes are fork tender; drain. Pass the potatoes through a food mill into a bowl.
  • Meanwhile, bring the cream to a simmer in a small saucepan. Add 1/4 cup of the heated cream and the cold butter to the potatoes and stir vigorously. Add more cream and butter as needed. Season with salt.

4 pieces thick-sliced bacon, cut into 1/2-inch pieces
20 to 24 pearl onions

Steps:

  • Preheat oven to 500 degrees F. Wrap a brick in aluminum foil and place into the oven to heat.
  • Place the game hen breast side down on a cutting board. Using scissors or poultry shears, cut from the neck to the tailbone to remove the backbone. Once you remove the backbone you will be able to see the inside of the bird. Make a small slit in the cartilage at the base of the breastbone to reveal the keel bone. Grab the bird with both hands on the ribs and open up like a book, facing down towards the cutting board. Remove the keel bone. Cut small slits in the skin of the bird behind the legs and tuck the drumsticks into them in order to hold them in place. Season on both sides with salt and pepper.
  • Fry the bacon in a 12-inch cast iron skillet over medium heat. Once crisp, remove the bacon from the skillet and reserve. Drain all but 1 tablespoon of fat from the pan. Immediately add the two birds to the pan, skin side down. Add the onions to the pan around the edges. Top the birds with the brick and allow to remain on the heat for 5 minutes. Place the pan into the oven and cook 10 to 15 minutes or until the thigh meat reaches 170 degrees F. Remove from the oven and allow the bird to rest for 5 minutes before serving with the onions and bacon.

1 Cornish hen, approximately 1 1/4 to 1 3/4-pounds
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
nonstick cooking spray

Steps:

  • Preheat a panini press on high.
  • Place the game hen breast side down on a cutting board. Using scissors or poultry shears, remove the backbone by cutting down each side of it. Flatten the bird (Alton says to make a small slit in the cartilage at the base of the breastbone then grab the bird with both hands on the ribs and open up like a book, facing down towards the cutting board. Remove the keel bone.) You may (but don't have to) cut small slits in the skin of the bird behind the legs and tuck the drumsticks into them in order to hold them in place. Season on both sides with salt and pepper.
  • Spray both the top and bottom of the panini press with cooking spray and put the hen, skin side up onto the press; spray the skin side with cooking spray and close the lid, and squeeze HARD. Top the press with a brick or two or other heavy weights (10 pounds) and cook for 8 to 10 minutes or until the skin is golden brown.
  • Allow to rest 3 minutes before serving.

2 ounces butter, melted
1 1/2 cups water, heated to 115 degrees Farenheit
1 tablespoon sugar
2 teaspoons kosher salt
2 1/2 teaspoons fast rising yeast or 1 (7 1/4 g) packet fast rising yeast
22 ounces all-purpose flour or 4 1/2 cups all-purpose flour
10 cups boiling water
2/3 cup baking soda
1 egg, beaten
1/4 cup kosher salt or 1/4 cup pretzel salt

Steps:

  • Combine yeast, sugar, salt and water.
  • In the bowl of a large mixer with the hook attachment, combine flour, dry ingredients and melted butter Mix until all ingredients come together. Knead on medium speed for 4-5 minutes. Remove dough from bowl and form into ball. Lightly spray or oil bowl, return dough and cover with a tea towel for 1 hour or until doubled in size.
  • Preheat oven to 450 degrees Farenheit. Line two large baking sheets with parchment.
  • Separate dough into 8 equally sized pieces.
  • In a large, wide pan, combine 10 cups of water and bring to a boil. Add 2/3 cups of baking soda.
  • Lightly wet hands to help with formation of "logs" of dough. Roll each piece into a 24" piece. Form into a traditional pretzel shape - or any shape you wish. Place onto baking sheet and cover with a barely damp towel.
  • Two at a time, "bathe" pretzels in the water and baking soda mixture for 30 seconds and remove back to the baking sheets.
  • Beat an egg and brush each "boiled" pretzel with the glaze, then sprinkle with salt.
  • Bake for 14-15 minutes, until mahogany brown. Remove and cool. Delicious hot, warm or cooled.
  • For crunchy pretzel rods, use the same ingredients EXCEPT increase the water in the dough to 1 3/4 cups and ELIMINATE the butter. Proceed as above but cut risen dough into 36 equal pieces and roll out to 14" and boil in plain water, then bake for 15 minutes.

1/4 teaspoon dried thyme
1 cup tomatoes, chopped
6 ounces part-skim mozzarella cheese

32 inches flour tortillas

Steps:

  • Spray a nonstick skillet and heat over medium high. Add onion and cook 3 minutes or until softened.
  • Add zucchini, salt, and thyme and cook, stirring, 2 minutes. Remove from pan.
  • Wipe pan clean and place bak on heat. Add a tortilla and top half with 1/4 of the cheese. Sprinkle 1/4 of the tomatoes over cheese and top with 1/4 of the zucchini mixture. Sprinkle with 1 T parmesan.
  • Fold tortilla over and press lightly with palm.
  • Cook 3 minutes or until cheese is melted and tortilla is lightly browned. Turn over and cook another 2 minutes.
  • Repeat with remaining tortillas and serve.

1 1/4 lbs all-purpose flour, plus extra for kneading and rolling
2 1/4 teaspoons kosher salt
5 ounces 2% low-fat milk
5 ounces water
7 1/2 ounces lard or 7 1/2 ounces shortening
2 cups water
1/2 cup honey
3/4 cup kosher salt
1/2 lb ice
1 Cornish hen, thawed and giblets removed (1 1/2-2 lb)
6 ounces mixed dried fruit (such as prunes, apricots, mission figs, candied ginger)
5 sprigs fresh thyme
1/4 teaspoon ground allspice
1/4 teaspoon fresh ground black pepper
1/4 teaspoon ground cumin
1/4 teaspoon paprika
1 large egg yolk, beaten
1 tablespoon water

Steps:

  • In a small pot, combine 2 cups water with honey and salt. Heat just until honey and salt are dissolved. Add 1/2 lb ice and stir. When completely cool, add game hen and soak 1 hour.
  • Preheat oven to 350°F.
  • Whisk together flour and salt. Set aside.
  • In a large pot, combine milk, water and lard. Bring to a boil. Turn off the heat and dump in the dry ingredients. Stir until it forms a loose dough.
  • Turn dough out onto a board, and as soon as it is cool enough, begin to knead. Knead until it forms a smooth dough, then set aside to cool for at least 5 minutes.
  • Using scissors or shears, cut through the skin along either side of the breast and remove the skin from over the breast. Stuff the cavity with the dried fruit, then tie the legs together with butcher's twine. Place bird on a sheet of parchment and trace around the bird, about 1/2" larger than the bird's shape. Set bird and parchment aside.
  • Cut dough in half, then cut one half in half again. Turn the parchment over so the pencil is on the underside. Using the heel of your hand, spread one of the smaller lumps of dough out to fill the shape you traced. Set aside, then repeat with the other small piece of dough; leave it on the parchment. Take the larger piece of dough, using bench flour as needed to prevent sticking, and roll out into a piece about 4" wide by 12" long by 1/2" thick.
  • Beat egg yolk and water together to form egg wash. Brush the base piece with egg wash. Scatter thyme sprigs over base, then top with the game hen. Place the long "wall" piece of dough around the game hen, crimping it to the bottom, then overlapping and pinching the two ends together. Sprinkle the breast of the game hen with the allspice, black pepper, cumin and paprika. Brush the top edge of the wall with egg wash, top with the remaining piece of dough and crimp to seal. Brush all exposed dough with egg wash.
  • Transfer parchment to a baking sheet, and place in preheated oven. Bake 1 hour 15 minutes.
  • Remove from oven and allow to rest 15 minutes before carving. Remove the top of the crust with a serrated or electric knife before extracting and carving the hen for service.
