ERIN'S IRISH CREME LIQUEUR



Erin's Irish Creme Liqueur image

This is so easy, and since it's creamier than the store-bought versions of Irish creme liqueur, we prefer it. Drink a pinch as liqueur or use to make Irish coffees. One may add more Irish whisky for stronger flavor. Store in refrigerator for up to three weeks.

¼ cup milk chocolate chips
2 teaspoons butter
3 ½ fluid ounces Irish whiskey, or more to taste
¼ teaspoon instant coffee granules
1 teaspoon hot water
1 (14 ounce) can sweetened condensed milk
1 ½ cups heavy whipping cream

Steps:

  • Put chocolate chips and butter in a glass bowl; heat in microwave on high until chips are softened, about 30 seconds. Stir chocolate mixture until smooth, cooking in microwave another 15 seconds to assure chocolate is soft enough, if needed. Add Irish whiskey and stir until smooth.
  • Dissolve coffee granules in hot water in a small pitcher. Pour the chocolate mixture, sweetened condensed milk, and cream into the pitcher and stir until smooth.
  • Refrigerate mixture until completely chilled, at least 20 minutes.

2 cups jamison Irish whiskey (No substitutes)
1 (14 ounce) can sweetened condensed milk
1 cup heavy whipping cream
2 tablespoons chocolate syrup
2 teaspoons instant coffee granules
2 teaspoons vanilla extract (real not imitation)
1 teaspoon almond extract
1 tablespoon coconut cream (No substitutes)

Steps:

  • Combine all ingrediants in a blender, and blend until smooth.
  • keep in a tightly sealed container.
  • Refrigerate for 24 hours before consuming.

4 large eggs
2 tablespoons freeze-dried instant coffee granules or 2 tablespoons instant coffee
2 tablespoons chocolate syrup
2 teaspoons vanilla extract
1/2 cup boiling water
1 1/2 cups good brand Bourbon or 1 1/2 cups rye whiskey
1 cup half-and-half cream
1 (14 ounce) can sweetened condensed milk

Steps:

  • Dissolve coffee ganules in boiling water.
  • Using mixer, beat eggs in large mixing bowl for about 3 minutes.
  • Add coffee and remaining ingredients to the egg mixture.
  • Mix well.
  • Strain if desired.
  • Pour into air-tight glass container.
  • Store in refrigerator from 1 month or more.

This is an eggless version of Irish Cream Liqueur which uses Rye whiskey. I would think you could substitute your favorite whiskey (Scotch, Bourbon or Irish) for the rye if you prefer. Recipe makes 38oz = 1123.79ml A serving size is 1.3oz (37ml) = 29.23 servings per recipe

1 (16 ounce) container half-and-half
2 teaspoons instant coffee
2 tablespoons chocolate syrup
1 teaspoon vanilla
1/2 teaspoon almond extract
1 (14 ounce) can sweetened condensed milk
6 ounces rye whiskey

Steps:

  • Place first 3 ingredients in a blender and process at low speed for 10 seconds.
  • Add vanilla and almond extracts and condensed milk, blend again for 1 minute.
  • Add rye whiskey and blend again for 25 seconds.
  • Can be served straight, on the rocks, in mixed drinks or over ice cream.
  • Store tightly capped in the refrigerator for up to one month.
  • Recipe makes 38oz = 1123.79ml (approx).
