Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.

1/2 teaspoon pure vanilla extract
2 cups old fashioned oats
1 cup dried cranberries
1 (4-ounce) 60 percent cacao bittersweet chocolate bar (recommended: Ghirardelli), chopped into 1/4-inch chunks

Steps:

  • Put an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Set aside.
  • In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt. In a stand mixer fitted with a paddle attachment, beat the butter and sugars together until light and fluffy, about 1 minute. Add the egg and vanilla and beat until smooth. With the machine running, gradually add the flour mixture. Add the oats, cranberries and chocolate chunks. Mix until just incorporated (dough will be stiff). 1/2 teaspoon salt

Steps:

The recipe was given to me by a co-worker, who photocopied it from a church cookbook, so I don't know who the original credit goes to. I have modified it slightly from the original so this recipe shows a bit less sugar than the original...but I don't think you'll notice. I hope you enjoy!

  • 10. Press with the bottom of a glass to flatten dough into 2-inch-diameter.
  • 11. Bake until golden but still soft in center, 16 to 18 minutes, turning sheets halfway through for even baking.
  • 12. Remove from oven; transfer with parchment to a wire rack to cool. Store in airtight container at room temperature for up to 1 week.
