3 tablespoons butter
3 tablespoons all-purpose flour
1-1/2 teaspoons salt
1/8 teaspoon pepper
2 cups 2% milk
1 cup shredded cheddar cheese
5 cups thinly sliced peeled potatoes (about 6 medium)
1/2 cup chopped onion
Additional pepper, optional

Steps:

  • Preheat oven to 350°. In a large saucepan, melt butter over low heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from heat; stir in cheese until melted. Add potatoes and onion., Transfer to a greased 2-qt. baking dish. Cover and bake 1 hour. Uncover; bake 30-40 minutes or until the potatoes are tender. If desired, top with additional pepper.

This make ahead comes from a Byerly's cookbook. Refrigerate overnight and pop in the oven in time for dinner. I like to boil the red potatoes 2 days ahead, to eliminate the mushy factor. And notice how it bakes at 350 degrees instead of a higher temperature.

7 -8 red potatoes or 2 1/4 lbs red potatoes
8 ounces sharp cheddar cheese
1 teaspoon salt
1 pint whipping cream (2 cups)
1/4 cup soft breadcrumbs
1 tablespoon butter, softened

Steps:

  • Boil potatoes in jackets, cool in refrigerator.
  • Peel and shred using medium grater.
  • Shred cheese with same grater.
  • Butter 2 quart casserole.
  • Alternate layers of potatoes and cheese in casserole; sprinkle with salt.
  • Pour cream over potato cheese layers.
  • Combine crumbs and butter; sprinkle over top.
  • Refrigerate, covered.
  • Bake, uncovered, in a 350 degree oven until heated through, 55-65 minutes.

This is one of the first dishes I made in Home Economics class, but it wasn't until after I graduated that I learned about adding Parmesan and Gruyere for a more sophisticated version.

1/3 cup unsalted butter, softened
1 1/2 pounds Idaho potatoes, peeled and cut into 1/4-inch-thick slices
1/2 cup grated Gruyere
1/2 cup freshly grated Parmesan
1 cup heavy cream
1 teaspoon salt
1/2 teaspoon ground black pepper
1/8 teaspoon paprika

Steps:

  • Preheat the oven to 350 degrees F.
  • Butter a 1 1/2 quart baking dish with about 1 tablespoon of the softened butter.
  • Arrange a layer of potatoes in the baking dish, and sprinkle some of the cheeses over them. Continue layering potatoes and cheeses until you've used them all, ending with a layer of potatoes.
  • In a small bowl, whisk the cream with the salt and pepper; pour this over the potatoes. Dot the remaining butter over the top and sprinkle with the paprika. Bake for 1 to 1 1/4 hours, or until the potatoes are tender and golden brown on top. Let stand for 5 minutes before serving.

An easy, but elegant potato recipe that is great for company or any day.

Number Of Ingredients 9

3/4 pound potatoes (peeled & sliced)
1 1/2 cups cream (or milk)
1 clove garlic (minced)
1/4 teaspoon salt
fresh ground pepper
1/2 cup Gruyere cheese (divided)
1/4 cup Parmesan cheese (grated)
1 teaspoon cornstarch ((see notes above))
2 teaspoons water ((see notes above))

Steps:

  • Preheat the oven to 350ºF.
  • In a saucepan, combine the sliced potatoes, cream or milk, garlic, salt and pepper. Heat this mixture until it is just coming to a boil. Immediately reduce the heat to a gentle simmer. Do not let the cream come to a hard boil. Cook for 5 or 6 minutes, or until the potatoes are almost tender but not fully cooked.
  • If you are using the cornstarch mixture to thicken the sauce: In a small jar, blend the cornstarch with water. Stir this mixture into the potatoes and simmer until it is thickened, which will be about 1 minute. Remove the pan from the heat and stir in 1/4 cup of the Gruyere cheese plus the Parmesan cheese.
  • Transfer the potato and cheese mixture to lightly greased 8"x8" (20.5 x 20.5 cm) baking dish. Make sure they are evenly layered.
  • Sprinkle the remaining grated Gruyere cheese over the potatoes. Bake in a preheated 350ºF (180ºC) oven for 30 to 40 minutes or until the top is golden brown.
  • Remove from the oven and let stand for 10 minutes before serving.

4 large russet potatoes, peeled, washed and sliced into 1/4-inch thick
3 tablespoons butter, plus more for baking dish
1 white onion, cut into thin strips (Lyonnaise-style cut)
2 large garlic cloves, pressed
2 cups cold half-and-half cream
2 1/2 cups shredded aged cheddar cheese (mixed yellow and white)
2 teaspoons cornstarch (mixed with 1/2 cup water)
1/2 tablespoon cayenne (to taste)
1/2 tablespoon fresh ground black pepper (to taste)

Steps:

  • Preheat oven to 400ºF and generously butter a 3-quart (9 x 13-inch) casserole dish. Layer ½ of the potato sliced into bottom. In a medium-size saucepan over medium heat, melt butter and sauté onion with garlic for 3 minutes. Using a slotted spoon, transfer onion mixture over the potatoes in the prepared casserole dish; set aside.
  • Return saucepan to stovetop and pour cold milk. Bring to a simmer and add cheese, stirring until cheese has melted completely. Pour cornstarch mixture and stir until sauce thickens. Pour ½ cheese sauce over onion mixture and season with black pepper and cayenne. Add the remaining potatoes and pour the remaining sauce; season with black pepper and cayenne once again. Cover dish with greased aluminum foil and bake 1 ½ hours in the preheated oven. Remove foil for the last 15 minutes for golden brown top.
  • Note: Sprinkle with Panko® for extra crispiness or use green onions and, crumbled and cooked bacon.

water
2 tablespoons margarine or 2 tablespoons butter
2 large eggs
1/2 teaspoon salt
1 teaspoon onion powder
1/2 teaspoon fresh ground black pepper
1 cup sharp cheddar cheese, grated
1/4 cup half-and-half cream
cooking spray (optional)

Steps:

  • Cook potatoes in water in a large sauce pan until tender.
  • Drain and mash.
  • Mix remaining ingredients, (except cooking spray) in a large bowl.
  • Add to potatoes.
  • Whip smooth with a hand mixer.
  • Pipe onto a greased baking sheet using a large star tip in a pastry bag into 12 swirls, or spoon about 1/3 of a cup into mounds.
  • Spray with cooking spray for a crispier crust if desired.
  • Bake in 425° F oven for about 20 minutes until tips are golden brown.
