Chinese Spicy Eight Treasures Stir Fry image

This Spicy Eight Treasures Stir fry is another everyday home cooking dish from the old days in Shanghai. The secret of this dish is a combination of 3 things: dried shrimp, loads of garlic and the substitution of spicy bean paste for the sweet bean paste.

1 cup spiced bean curd ((cut in ½-inch cubes))
1 cup carrot ((diced in ½-inch cubes))
1 cup frozen shelled edamame ((thawed))
1 cup lean pork ((diced into ½-inch cubes))
2 heads garlic ((peeled and chopped))
½ cup small dried shrimp ((rinsed and drained))
1 cup raw shelled peanuts ((rinsed and drained))
1 cup green pepper ((diced; long hot peppers can be used for extra heat, or you can use bell peppers if you prefer it mild))
3 tablespoons cooking oil
2 tablespoons shaoxing wine
2 tablespoons spicy bean paste ((doubanjiang))
1/2 teaspoon sugar
1 tablespoon sesame oil
1 teaspoon black bean chili sauce ((Lao Gan Ma brand))

Steps:

  • Stir fry the spiced bean curd with a teaspoon of oil over medium heat for 2 minutes. Take it out of wok and set aside. Stir fry the carrot with a teaspoon of oil using medium heat for about two minutes...until softens slightly. Take it out of wok and set aside. Repeat the process another two times with the edamame and the cubed pork and set both aside.
  • Then add a tablespoon of oil to the pan and stir-fry the garlic over medium heat for about a minute. Add the shrimp and stir to combine. Add the peanuts and stir for another 3-5 minutes, until they start to smell fragrant. Then add the green pepper and mix well. Now add all the pre-cooked ingredients: the bean curd, carrot, edamame and pork. Continue to stir and cook for another few minutes so that everything comes together. Add cooking wine, spicy bean paste, sugar, sesame oil, and the black bean chili sauce. Stir everything together and keep stirring until most of the liquid has evaporated and all the ingredients are well-coated in sauce. Plate and serve!

2 tablespoons unsalted butter
1/2 cup finely chopped shallots
1/2 cup finely chopped scallions, reserving 1 tablespoon dark green parts for garnish
1 1/2 cups finely chopped leeks, white and light green parts
1 1/2 cups finely chopped onion
Kosher salt
Flavorless oil
4 large eggs, beaten
Black pepper
4 cloves garlic, minced
1 tablespoon minced fresh ginger
2 cups cooked brown or white rice
1 part Sriracha and 3 parts mayonnaise (or Sriracha mayo), for serving

Steps:

  • In a large skillet, melt the butter over medium heat. Add the alliums (shallots, scallions, leeks and onion) and a good pinch of salt and cook, stirring, until everything is nice and soft and smelling really good, 12 to 15 minutes.
  • Meanwhile, heat a separate skillet over medium-high heat and coat the bottom with a thin layer of oil. When the pan is hot, add the eggs and cook, gently scraping up the bottom with a silicone spatula, until mostly set. Remove the eggs from the heat, season with salt and pepper, give them a rough chop, and set aside. (Alternatively, you could cook the eggs first in the large skillet, then remove them before adding the butter and cooking the alliums.)
  • Add the garlic and ginger to the alliums and cook, stirring, for 2 more minutes. If the pan looks dry at any time, add a bit more butter or some oil. Add the rice and scrambled eggs and fold to combine. Salt the rice to taste. Increase the heat to medium-high, spread the mixture out evenly over the skillet, and let it cook, uninterrupted, until the bottom is crispy, about 5 minutes. Serve with Sriracha and mayo and remaining scallions.

6 cups cooked rice, cold
4 tablespoons peanut oil, divided
2 large eggs, beaten with
1 dash salt
1/2 teaspoon salt
2 tablespoons dark soy sauce
1 teaspoon wine
2 green onions, stalks chopped fine

Steps:

  • Into a hot wok, add 1 tablespoon of peanut oil.
  • When oil is hot, gently pour egg into wok and cook with medium-high heat for 2 minutes.
  • Turn over to cook the other side of the egg.
  • Cook for another 2 minutes and remove from wok to a cutting board and shred egg into slivers.
  • Using medium heat, add 3 tablespoons of peanut oil into wok until smoke begins to rise.
  • Put in cooked rice, salt, wine, and dark soy sauce, stirring until the rice is hot.
  • Add egg slivers, and green onions.
  • Stir for another minute and serve hot.
  • NOTE: "There are many ways to do fried rice, depending on the kinds of ingredients employed. The specific name is called when a specific kind of ingredient, mostly meat is added to the basic fried rice. Fried rice can be made ahead of time and kept warm in oven. 4 cups cooked long-grain rice, chilled
3 tablespoons vegetable oil, divided
3 eggs, well-beaten
1/4 cup chopped onion
1 lb shelled deveined uncooked medium shrimp
6 ounces shiitake mushrooms, stems removed, sliced
3/4 cup frozen shelled edamame or 3/4 cup baby peas, thawed
1 cup diced chinese smoked sausage or 1 cup ham
3/4 cup well-drained canned pineapple tidbits or 3/4 cup diced fresh pineapple
3/4 cup dry roasted salted peanut
1/2 cup thinly sliced green onion
1/2 cup purchased stir-fry sauce
1/3 cup chopped cilantro
2 tablespoons dark sesame oil

Steps:

  • Break up rice into individual grains, using your hands to crumble it gently.
  • Heat 1 tablespoon of the vegetable oil in large nonstick skillet over high heat until hot. Add eggs; tilt or swirl pan to cover bottom with eggs. (Lift cooked edges and tilt pan to allow uncooked egg to run underneath.) When set, gently turn eggs; cook 10 seconds. Place on cutting board; cool. Roll up; cut crosswise into 1/8-inch-wide ribbons. Fluff to loosen.
  • Heat remaining 2 tablespoons vegetable oil in same skillet over medium heat until hot. Cook onion 15 seconds or until shiny and fragrant. Add shrimp; cook 1 to 2 minutes or until shrimp just begins to turn pink. Add mushrooms and edamame; cook 1 minute or until mushrooms are shiny and softened and shrimp turn pink.
  • Add rice; toss to combine. Add egg ribbons, sausage, pineapple, cashews, green onions and stir-fry sauce; cook 2 to 3 minutes or until rice is tender and all ingredients are heated through. Stir in cilantro and sesame oil.

2 tablespoons oyster sauce

Steps:

  • Place a stir-fry pan over med-high heat until hot.
  • Add the oil, swirling to coat the sides.
  • Add the garlic and tea leaves and cook, stirring, until fragrant, about 20 seconds.
  • Add the meat, pine nuts, napa cabbage, cauliflower, and beans and cook, stirring, until the vegetables are tender-crisp, about 2 1/2 minutes.
  • Add the egg and cook, lightly stirring, until the egg begins to set, about 1 minute.
